3 large ripe bananas
3/4 cup sugar
1 egg, slightly beaten
1/3 cup melted butter
1 cup blueberries
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour

Steps:

  • Mash bananas in a large mixing bowl.
  • Add sugar and egg.
  • Add butter and blueberries.
  • Combine dry ingredients and gently stir into banana mixture.
  • Pour into 12 well-greased muffin cups.
  • Bake at 375 degrees for 20 minutes.

1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 -1 teaspoon cinnamon
1/4 teaspoon nutmeg optional
1 cup fresh blueberries
1 1/4 cups mashed ripe bananas
1/3 cup sugar or Splenda, increase the sugar for a sweeter muffin
1/4 cup nonfat sour cream or use low-fat sour cream or use fat-free yogurt
1 large egg
2 teaspoons vanilla

Steps:

  • Set oven to 350 degrees. Grease or line 12 regular-size muffin tins with paper liners. In a large bowl mix together flour, baking powder, baking soda, salt cinnamon, nutmeg (if using) and blueberries. In another bowl beat banana, sour cream, sugar, egg and vanilla until just blended; stir into the dry blueberry mixture JUST until combined (do not over mix a few small lumps are fine!). Scoop/divide the mixture between the muffin tins. Bake for 15-20 minutes or until the muffins test done. *NOTE* for a double recipe; because of the large amount of baking powder prepare each recipe in two separate bowls, do not double one recipe into one bowl.

Less than 1 gram of fat in each muffin but you wouldn't even know they are low-fat, these are even better the next day, and are just as delicious without the berries, of coarse you can use full-fat sour cream or yogurt, flavored yogurts only add to the taste of these muffins, I like to sprinkle a sugar/cinnamon mixture on top of each muffin before baking but that is optional, see note on bottom for doubling the recipe. 2 cups sifted all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1/2 cup granulated sugar
1/2 teaspoon salt
4 egg whites
1 1/4 cups skim milk
1 cup fresh blueberries or 1 cup frozen blueberries
non-fat cooking spray

Steps:

  • Preheat oven to 400°F.
  • Spray twelve 2 to 2 1/2 inch muffin pan cups.
  • Into large bowl, sift flour with soda, powder and salt.
  • Into medium size bowl beat egg whites and milk.
  • Add sugar, then egg mixture into large bowl.
  • With spatula, blend until throughly combined (mixture should be slightly lumpy).
  • Gently fold blueberries into mixture.
  • Spoon batter into prepared muffin cups about 2/3 cups from top.
  • Bake 18 to 22 minutes.

I just made this recipe with some frozen blueberries and we all really liked it - even my boys who don't like blueberries. It comes from a church cookbook but I have changed it to suit my tastes. You could really substitute any fruit you wanted - it's a very versatile recipe.

1/4 cup unsweetened applesauce
1 cup sugar
1 cup skim milk
1 egg
1 teaspoon salt
2 teaspoons baking powder
2 cups flour
1 teaspoon vanilla

1 1/2 cups blueberries, frozen or fresh

Steps:

  • Combine all the ingredients, except the blueberries.
  • Gently fold in the blueberries.
  • If using frozen berries, don't thaw- the juices won't mix through the batter as much.
  • If desired, sprinkle some cinnamon and sugar on top for a little extra sweetness.
  • Put in muffin tins.
  • Bake at 350 for 20 minutes.

1 1/2 cups all-purpose flour
1/2-3/4 cup sugar (or to taste)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup plain fat-free yogurt (can use low-fat yogurt)
3/4 cup mashed ripe banana
2 tablespoons oil
1 egg
1 1/2 teaspoons vanilla

Steps:

  • Set oven to 350 degrees F.
  • Grease a 8 or 9-inch square baking pan or line muffin tins with paper liners.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
  • In a small bowl, whisk together yogurt, banana, oil, egg and vanilla.
  • Pour over dry ingredients, and gently stir with a spatula until JUST blended (do not over mix).
  • Spread the batter into prepared baking pan.
  • Bake for about 25 minutes, or until the top of the cake is light brown, and edges begin to pull away from sides of the pan (bake slightly less time for muffins).
  • Cool cake in pan on rack for 10 minutes.
  • Loosen sides of cake with a dinner knife or a spatula.
  • Invert cake right side up and cool completely.
  • Sprinkle lightly with powdered sugar.

This is a spin off of Kittencal's (that genius girl) extreme low fat banana-blueberry muffins. But it was different enough ( I made the muffins a while back), that I decided to post the difference. This cake was wonderful! No one would guess it was low fat with little sugar except the fruit! You can use nonfat sourcream for the yogurt, but I haven't tried that.

1/2 teaspoon baking soda

1/4 cup plain fat-free yogurt
1 large egg

Steps:

  • Mix dry ingredients.
