BREADSTICKS (GRISSINI) RECIPE

Classic crispy Italian bread sticks, great as a snack or for dipping. These are simple to make and taste just like they came from a restaurant!

Number Of Ingredients 8

2 ¾ cups (380 g) bread flour or all-purpose flour
1 teaspoon instant dry yeast
3/4 cup plus 1 tablespoon ((195 ml) warm water)
¼ cup (60 ml) olive oil
2 tablespoons (30 g) unsalted butter, melted and slightly cooled
1¼ teaspoons fine salt
Olive oil (, melted butter, or water, for brushing)
Sesame seeds or Parmesan cheese (, for sprinkling)

Steps:

  • Using a mixer fitted with the dough hook, mix all ingredient on low speed until well combined, 2-3 minutes. Increase mixer speed to medium-low and mix for another 5 minutes. Cover bowl with plastic wrap and let sit for one hour at room temperature.
  • Preheat oven to 375F/190C. Line two baking sheets with parchment paper.
  • Divide dough into 24 pieces, each weighing about 25g. Roll each piece into a log that is roughly 25cm long (or 30cm if you like them extra thin) and ½-1 cm wide, depending on how thick you want them. Keep in mind that they will expand during baking. Place on prepared baking sheets, allowing sufficient space between each stick. If you like, brush them with oil or water and sprinkle with Parmesan cheese or sesame seeds.
  • Bake for 20-25 minutes or until light golden and crisp. While the first batch is baking, cover the other baking sheet with plastic wrap until it's ready to go into the oven.
  • Allow breadsticks to completely cool on a wire rack. They will keep in an airtight container for up to 5 days.

  • Mix 2 tablespoons olive oil, 1 teaspoon each fennel seeds, poppy seeds and sesame seeds, and 1/2 teaspoon each salt and pepper. Roll out an 11-ounce package refrigerated breadstick dough into a 16-by-8-inch rectangle. Cut into twelve 16-inch strips and twist into breadsticks. Brush with the oil mixture. Place on 2 parchment-lined baking sheets and bake in a 400 degrees F oven until golden, about 12 minutes.

3/4 cup extra-virgin olive oil
7 to 8 cups stale bread crust trimmings
Kosher salt and freshly ground black pepper
1/4 cup finely grated Parmesan
2 tablespoons fresh thyme leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Drizzle the oil over the crusts in a large bowl. Add 1/2 teaspoon salt and a few grinds of pepper and toss gently until the crusts are evenly coated in the oil. Add the Parmesan and thyme and toss gently to combine. Spread the crusts out in an even layer on 2 baking sheets. Sprinkle any unstuck cheese and thyme over the crusts.
  • Bake, tossing about halfway, until the crusts are deep golden and crunchy, about 20 minutes. Let cool on the baking sheets. Store at room temperature in an airtight container for up to 2 days.

3 to 3-1/4 cups all-purpose flour
1 package (1/4 ounce) quick-rise yeast
1 tablespoon sugar
1 teaspoon salt
3/4 cup whole milk
1/4 cup plus 1 tablespoon water, divided
1 tablespoon butter
1 large egg white
Coarse salt

Steps:

  • Combine 1-1/2 cups flour, yeast, sugar and salt. In a small saucepan, heat milk, 1/4 cup water and butter to 120°-130°. Add to dry ingredients; beat on medium speed just until moistened. Stir in enough remaining flour to form a stiff dough., Turn dough onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 minutes., Punch down dough. Pinch off golf ball-sized pieces. On a lightly floured surface, shape each into a 6-in. rope. Place on greased baking sheets 1 in. apart. Cover and let rise for 15 minutes., Preheat oven to 400°. Beat egg white and remaining water; brush over breadsticks. Sprinkle with coarse salt. Bake until golden, about 10 minutes. Remove from pans to wire racks to cool.

These make a wonderful gift for a dinner party. I came up with the recipe when I wanted to contribute something to an invitation. The dough turns out to be very moist and soft, yet the surface is wonderfully crunchy. Makes about 30 bread sticks.

400 g flour
100 g cornflour (masa harina)
25 g gruyere cheese (grated)
25 g parmesan cheese (grated)
25 g dry yeast (1 sachet)
3 garlic cloves (minced)
1 tablespoon brown sugar
3 tablespoons olive oil (very good quality)
about 200ml water (luke warm)
1 -2 teaspoon chili flakes
1 tablespoon oregano (dried)
1 tablespoon rosemary (dried)
1 tablespoon basil (dried)
salt and pepper

Steps:

  • Put flour and masa harina into a bowl.
  • Add dry yeast, salt, pepper, sugar, cheeses,garlic cloves, chili flakes and herbs to the flour and incorporate.
  • Add olive oil and water and knead dough for quite a while (i use a food processor with hooks) until a ball forms.
  • Cover bowl with a kitchen towel and let dough rise for up to one our.
  • Shape sticks:.
  • Take a walnut sized piece of dough, shape into a ball and then rotate between your palms until they have reached their ideal stick-shape :).
  • Line a cookie tray with non stick paper.
  • Place bread stick rolls on the tray (better keep some distance between them, as they will rise).
  • Brush with Olive oil.
  • Let bake at 200°C until golden brown. (about 10 min.).
  • Let cool and wrap in paper.
