BLACKBERRY MINT ICED TEA

A spectacular garden summer treat that is very healthy and delicious. Blackberries are preferred, but you can use any typ berries. Using honey keeps it clean eating, but you can opt for sugar or Splenda if you prefer.

BLACKBERRY-BOURBON ICED TEA

Blackberry-Bourbon Iced Tea image

Provided by Bobby Flay

Time 3h10m

Yield About 1 1/2 quarts

Number Of Ingredients 8

3 cups fresh blackberries
3/4 cups granulated sugar
2 tablespoons chopped fresh mint
1 1/2 quarts cold water
6 good quality black tea bags
Ice, as needed
Good quality bourbon, to taste (recommended: Woodford Reserve)
Fresh mint sprigs, for garnish

Steps:

  • Combine the blackberries, sugar, and coarsely chopped mint in a large bowl and mash with a potato masher or wooden spoon and let sit while making the tea.
  • While the blackberries are macerating, bring the water to a boil in a medium saucepan, remove from the heat, add the tea bags and let steep for about 3 minutes. Remove the bags and pour the tea over the blackberry mixture. Let the mixture sit at room temperature for at least 1 hour for the flavors to meld.
  • Pour the mixture through a strainer into a pitcher, pressing on the solids, cover and refrigerate until cold, at least 2 hours. Cook's Note: You can also pour the mixture into a bowl set inside an ice bath to cool the mixture faster.
  • Serve the blackberry tea over ice in tall glasses and float a shot of bourbon on top and garnish with lots of fresh mint sprigs...(like a Mint Julep).

Categories     Beverages

Time 10m

Yield 2 qts, 8 serving(s)

Number Of Ingredients 5

5 black tea bags
1/4 cup mint leaf
4 cups boiling water
1/2 cup granulated sugar
1 (6 ounce) package blackberries, reserve a few for garnish

Steps:

  • Place tea bags and mint in a heat proof pitcher. Add boiling water and steep at least 10 minutes. At my house we would just heat the water in a pan then add the tea and mint, then stir.
  • Strain into a 2 qt pitcher and discard mint and tea bags.
  • Puree blackberries in a blender or food processor, strain through a fine sieve. Discard pulp and seeds. Stir puree into tea, fill to 2 qts. Taste and adjust sugar as desired. Chill.
  • Serve over ice and garnish with a mint leaf and some blackberries.
  • I would probably skip the food processor step and push the berries through the sieve.

  • Bring 5 1/2 cups of water to a boil, and add tea bags. Cover and steep for 6-8 minutes. Then, discard tea bags.

  • Pour mixture through a wire-mesh strainer into a large pitcher. Add 3 cups of cold water. You can adjust sweetness to taste here. I don't like my iced tea to be too sweet, but if you want more sweetness, simply dissolve the preferred amount of granulated sugar with some hot water and add it to the pitcher.
