Here's what you need: frozen blueberry, frozen strawberry, frozen raspberry, vanilla yogurt, honey

Number Of Ingredients 5

Ingredients

1 cup frozen blueberry
1 cup frozen strawberry
1 cup frozen raspberry
1 cup vanilla yogurt
3 tablespoons honey

Steps:

Combine all ingredients in a food processor until smooth.
Transfer to an 8x8-inch (20x20 cm) glass dish.
Freeze for at least 2 hours.
Enjoy!

A perfect light dessert. Also great when you mix 1/2 cup of this stuff with 1/4 cup milk to make a smoothie! I'm an ice cream-aholic so I asked for a ice cream machine for Christmas. Well, I got one! muah ha ha ha!

Ingredients

3/4 cup whole milk (or you can use 2%or 1%, etc. for even lighter ice cream)
1/3 cup granulated sugar
4 cups low-fat vanilla yogurt (or non-fat)
2 cups frozen unsweetened mixed berries, thawed and pureed (if you want HUGE pieces of strawberries in your ice cream, don't puree it!)
1 teaspoon vanilla extract

Steps:

In a medium bowl, mix the milk and sugar until the sugar is dissolved (about 1 to 2 minutes on low speed).
Stir in the yogurt, berry puree and extract.
Freeze according to manufacturers instructions.
NOTE: the ice cream gets really hard if its put into a container in the freezer. I put it in a plastic bowl. I had to defrost it in the microwave for a little while before I could dig into it. Anyone know a better container I could put it in? I was thinking an empty ice cream container that I'd already used all the ice cream from?

Freeze ice cream maker according to instructs. Hull strawberries and slice into fourths. Place in a large bowl with the raspberries, honey, jam, and coconut rum. Stir to coat berries in the honey and rum, then let sit at room temperature for 1 hour to macerate.
To the bowl with the berries, add the coconut milk, frozen yogurt, and salt and stir to combine. Transfer the mixture to a food processor or blender (or use an immersion blender) and puree until mostly smooth. Return to bowl, cover with plastic wrap so that the plastic is touching the surface, then chill in the refrigerator for at least 1 hour.
Freeze according to your ice cream maker’s instructions (or if you do not have an ice cream maker, follow this method to freeze), adding the toasted coconut in the last 5 minutes of churning. Serve topped with additional toasted coconut.
