Baked French Rice image

I have made this SO many times with Creamy Chicken Bake, for family and friends, that they expect it at least once a year. My friend, Diane, first served us this 30 years ago, when we were neighbors.

Number Of Ingredients 5

1 (14 ounce) can onion soup, undiluted
1/2 cup butter, melted
1 (8 ounce) can sliced mushrooms
1 (8 ounce) can water chestnuts, sliced
2 cups white rice, uncooked

Steps:

  • Combine soup and butter, stir well.
  • Drain mushrooms and water chestnuts, reserving liquid.
  • Add enough water to liquid to make 1 1/2 cup.
  • Add mushrooms, waterchestnuts, liquid and rice to soup mixture.
  • Pour into 9X12 greased baking dish.
  • Cover and bake at 350 degrees for 1 hour.

Number Of Ingredients 8

2 1/2 tablespoons butter
2 tablespoons minced onion
1/2 teaspoon minced garlic
1 cup uncooked rice
1 1/2 cups chicken broth
3 sprigs parsley
1 sprig fresh or 1/4 teaspoon dried thyme
1/2 bay leaf

Steps:

  • Preheat oven to 400 degrees.
  • Melt half of butter in heavy saucepan and cook the onion and garlic, stirring, until onion is translucent. Add rice and stir briefly over low heat until grains are coated with butter.
  • Stir in broth, making sure there are no lumps in rice. Add parsley, thyme and bay leaf. Cover with a close-fitting lid and place in oven.
  • Bake exactly 17 minutes. Remove cover and discard the parsley, thyme sprigs and bay leaf. Using a two-pronged fork, stir in remaining butter and serve.

1 (10 3/4 ounce) can French onion soup
1 (10 3/4 ounce) can beef consomme
1 cup long-grain white rice, uncooked
1/2 cup butter
salt and pepper, to taste

Steps:

  • Place rice in a 9x13-inch casserole dish.
  • Mix French onion soup and consomme; pour over rice.
  • Cut butter in pats and place in dish.
  • Bake 1 hour at 350 degrees.
  • Check it at 40 minutes.
  • I added cheese on the top when I made this dish. Yummy!
