This Leftover Turkey Cornbread Casserole is the PERFECT way to use up your Thanksgiving leftovers. Turkey and veggies are topped with flavorful gravy and baked with fluffy, golden-brown cornbread.

2 tablespoons unsalted butter
1/2 cup diced yellow onion
1/2 cup diced carrots
1/2 cup diced celery
1/2 teaspoon dried rosemary
1/2 teaspoons dried thyme
1/2 teaspoon dried nutmeg
1/2 teaspoon dried ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound frozen oven ready boneless turkey breast
1 cup turkey gravy (I used the one that came with the turkey + more for serving)
1 (8.5 oz) packgage corn muffin mix (prepared according package directions)
1 (15 oz) can corn (drained)
1 (8 oz) block cheddar cheese (shredded)

Steps:

  • Preheat oven to 400 degrees F and grease a small rectangle baking dish (mine was about 5 1/2" x 10")* with cooking spray.
  • Melt butter in a medium saute pan over medium heat.
  • Once melted, add in onion, carrots, celery, and spices.
  • Cook until veggies are tender, about 10 minutes.
  • Once cooked, stir in cubed turkey and pour veggie/turkey mixture into the bottom of the prepared baking dish.
  • Pour over gravy. Set aside.
  • In a large bowl, mix together corn muffin mix and prepared according to package directions.
  • Then stir in corn and cheddar cheese.
  • Pour corn muffin mixture over the veggies/turkey.
  • Bake in preheated oven for 35-55 minutes, or until toothpick inserted comes out clean.
  • Serve with more gravy and enjoy!

1 tablespoon vegetable oil
1 onion, chopped
½ teaspoon ground cumin
salt and ground black pepper to taste
2 (15 ounce) cans black beans, drained and rinsed
3 cups shredded cooked turkey
2 cups salsa, divided
1 (15 ounce) can sweet corn, drained
1 cup water
1 (1.25 ounce) package taco seasoning mix
2 cups cooked rice
2 cups shredded Mexican cheese blend, divided
3 cups crushed tortilla chips

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion, cumin, salt, and pepper. Saute until onion is tender, about 5 minutes. Add black beans, shredded turkey, 1 cup salsa, corn, water, and taco seasoning. Mix well. Cover and simmer until flavors meld, about 5 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix remaining 1 cup salsa with cooked rice and spread evenly into the bottom of an ungreased 10x15-inch baking pan. Pour turkey mixture over rice. Layer 1 cup Cheddar cheese over turkey mixture. Top with tortilla chips. Cover loosely with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Remove foil and top with remaining 1 cup Cheddar cheese. Continue baking until cheese is melted, about 5 minutes more.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

3 medium poblano peppers, seeded and stemmed, chopped
1 cup chicken stock
2 cloves garlic, chopped
1 small onion, chopped
A small handful fresh cilantro leaves, plus a few leaves for garnishing
Salt and freshly ground black pepper
3 tablespoons butter
2 tablespoons flour
1 cup milk
1/2 cup heavy cream or Mexican crema
2 tablespoons EVOO
3 tablespoons butter
12 ounces sliced button or crimini mushrooms
2 cups fresh (about 4 ears) or frozen and defrosted corn kernels
2 shallots or 1 small red onion, chopped
4 to 5 cups chopped cooked turkey meat
1 cup chicken stock
Six 8-inch flour tortillas
2 1/2 cups shredded Monterey Jack or Cheddar
1 1/2 cups shredded Manchego cheese

Steps:

  • For the sauce: In a blender or food processor, combine the peppers with the stock, garlic, onions, cilantro and some salt and pepper, then puree. In a saucepot over medium heat, melt the butter, then whisk in the flour. Add the milk and cream and raise the heat a bit. Add the poblano puree and simmer to thicken and cook the sauce, 20 to 25 minutes.
  • For the casserole: Heat the EVOO in a large skillet over medium-high heat; add the butter and melt into the oil. Brown the mushrooms, about 10 minutes. Then add the corn and shallots, and cook to lightly brown the corn and soften the shallots, about 5 minutes more. Add the turkey and stock and heat through.
  • Char the tortillas over an open flame on a gas burner, or in dry skillet.
  • Layer half the turkey, mushrooms and corn in a casserole dish, and top with half the sauce, cheese and a shingled layer of 3 tortillas. Top the tortillas with the remaining turkey, mushrooms and corn, tortillas, sauce and cheese. Cool and store for a make-ahead meal, or bake to serve. Bake at 400 degrees F from room temperature until heated through and brown and bubbly.

I can't remember where I got this recipe but have had it for years. I always make this when I have cooked a big pot of pinto beans and ham. It's a nice change from your standard cornbread. My husband does not like cornbread or anything with cornmeal but always looks forward to me making this when we have beans. I have made it often and always get lots of compliments.

1 large onion, diced
1 -1 1/2 jalapeno pepper, diced fine
1 cup yellow cornmeal
1/2 teaspoon baking soda

2 -3 cups shredded cheddar cheese

Steps:

  • Brown together the ground beef, onion and jalapeno pepper; drain well.

My Version Of Mexican Cornbread Casserole image

Sticking with lowering my fat intake I re-made this recipe I found while sitting in the Dr's office. Woody and I love this and will be making it again very soon. Had it for a luncheon with neighbors and they all wanted the recipe.

1 (8.5 ounce) packaged corn buffin mix
1/4 c egg beaters
1/3 c reduced fat milk
3/4 c frozen whole kernal corn, divided
1/2 lb ground turkey
1 (10 ounce) can of diced tomatoes
1 (8 ounce) can of tomato sauce (with green chili) optional
1/2 tsp cumin
1 c shredded reduced fat mexican cheese blend

Steps:

  • 1. Preheat your oven to 375 and spray an 8 X 8 inch glass baking dish with cooking spray and set aside.
  • 2. In a bowl, stir together cornbread mix, egg beaters, milk and half of corn and pour into prepared dish.
  • 3. In a skillet cook ground turkey over medium heat for 3 to 5 minutes or no longer pink and crumbled; stirring occasioally and drain.
  • 4. Stir in drained tomatoes, tomato sauce, remaining corn and cumin. Mix well.
  • 5. Pour mixture over top of cornbread batter and top with cheese.
  • 6. Place in preheated oven and bake for 15 to 20 minutes or until edges are lightly browned and cornbread is done.
  • 7. Remove from oven and serve hot with your favorite salad.
