CHEF JOHN'S MEATBALL-INSPIRED MEATLOAF

The main point of this Italian meatball-inspired meatloaf is to show you what happens when you make meatloaf like your grandparents did. During the Great Depression, this type of dish was a popular strategy for stretching what little meat you had into as filling a meal as possible.

Number Of Ingredients 15

1 tablespoon olive oil
1 tablespoon butter
1 onion, diced
salt to taste
4 cloves garlic, minced
1 ½ cups very dry white bread crumbs
1 ½ cups milk
2 pounds ground chuck
½ cup chopped fresh flat-leaf parsley
2 ounces grated Parmesan cheese
2 large eggs, beaten
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
3 cups tomato sauce, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Heat olive oil and butter together in a large skillet over medium-high heat. Saute onion with a pinch of salt in hot oil and butter until onion is golden brown and soft, 5 to 10 minutes. Add garlic and saute until fragrant, about 30 seconds. Remove skillet from heat and cool onion mixture to room temperature.
  • Place bread crumbs in a large bowl. Add milk and stir with a fork until combined. Let sit until all of the milk is absorbed into the breadcrumbs, 15 to 20 minutes.
  • Combine ground chuck, cooled onion mixture, parsley, Parmesan cheese, eggs, 2 teaspoons salt, black pepper, and cayenne pepper in a bowl. Grab a handful of breadcrumbs and squeeze very gently to remove excess milk. Repeat with remaining breadcrumbs, transfer breadcrumbs to ground chuck mixture, and discard excess milk. Stir ground chuck mixture until evenly combined.
  • Turn chuck mixture out into prepared baking dish, and shape meat into a 3x4x10-inch meatloaf. Pour tomato sauce over the loaf and into the bottom of the dish.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let meatloaf rest for at least 10 minutes before slicing.

I found this recipe at a Estate Sale. I have not tried this recipe, but I'm posting it for safe keeping.

2 teaspoons accent flavor enhancer
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried leaf thyme
1/4 cup ketchup
2 teaspoons prepared mustard
1 1/2 cups soft breadcrumbs
2 beef bouillon cubes
1 cup boiling water
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1 cup shredded cheddar cheese or 1 cup swiss cheese
2 lbs ground chuck

Steps:

  • Beat egg lightly in medium bowl, add Accent, salt, pepper, basil, thyme, ketchup, mustard and bread crumbs. Dissolve boullion cubes in boiling water, add to bowl and mix well until all ingredients are very well blended. Mix in celery, onion and cheese. Break up ground beef and add to bowl, mix lightly but thoroughly with fork.
  • In a shallow baking pan, shape mixture into a 12"x5" oval loaf, or press meat mixture lightly into a 9x5x3-inch loaf pan.
  • Bake uncovered in 375 oven 1 hour to 1 hour and 10 minutes.

Found on www.chefscatalog.com. DH adores this meatloaf. Since I seldom have fresh herbs on hand, I used 2 tablespoons of the squeeze Italian herbs from a tube instead of dried herbs.

1/2 cup breadcrumbs
1/2 cup milk
1/2 cup mixed herbs, chopped (such as parsley, basil, oregano and thyme)
2 eggs
3 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
2 teaspoons kosher salt
1 teaspoon paprika
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper (to taste)
1 lb ground beef
8 ounces ground pork
8 ounces ground veal
1/4 cup ketchup

Steps:

  • Preheat oven to 375°F.
  • In a medium bowl, stir together the breadcrumbs and milk; set aside.
  • In a large bowl, stir together the herbs, eggs, mustard, Worcestershire, salt, paprika, black pepper, cayenne pepper and the breadcrumb/milk mixture.
  • Add the ground beef, pork and veal and gently combine all the ingredients, taking care to not overwork the meat.
  • Transfer the mixture to a meatloaf or loaf pan.
  • Spread the ketchup over the top of the meatloaf.
  • Bake until an instant-read thermometer inserted into the center of the meat loaf registers 160 F, about 60 to 70 minutes.

This recipe was my great grandmother's and to this day everybody who tries it just loves it. The secret is the sauce: it is just the right balance of sweetness. Mmm it's just so yummy.

750 g beef mince (depending on the amount of people being fed)
1 cup breadcrumbs
1 teaspoon curry powder
1 egg
1 onion (finely chopped)
milk (enough to make the misture very moist)
1 cup tomato sauce
1/4 cup Worcestershire sauce
1 teaspoon coffee
1 teaspoon butter
1 tablespoon vinegar
1/2 cup sugar
1/2 cup water
3 drops lemon juice

Steps:

  • MEATLOAF:.
  • Combine all meatloaf ingredients except the milk in a large bowl (I find this is easiest to do with hands).
  • Add the milk until the mixture is very moist
  • Form the mixture into a loaf shape and place in a baking/casserole dish big enough for the loaf to fit with additional room.
  • Place into 180º pre-heated oven for 30 minutes. Then pour sauce over meatloaf ensuring the entire surface gets a coating of sauce and replace in oven for another 30 minutes.
  • Remove from oven and serve.
  • SAUCE:.
  • Combine all ingredients in a saucepan on a medium heat until it just begins to come to the boil.
  • Pour over meatloaf.
