ALMOND-TOPPED FISH

- Place butter in a 13x9-in. baking dish; heat in a 400° oven until melted. Spread butter over bottom of dish; cover with onion. , Arrange fish over onion; sprinkle with salt, dill and pepper. Combine the Parmesan cheese, mayonnaise, parsley and lemon juice; spread over fish. , Bake, uncovered, at 400° until fish flakes easily with a fork, 18-20 minutes. Sprinkle with almonds.

- Heat the oven to 375°. Grease bottom of 9-inch square pan with oil.
- Cut the fish fillets into 4 serving pieces if needed. Place the pieces, skin sides down, in the greased pan.
- Mix the almonds, margarine, lemon peel, lemon juice, salt and paprika. Spoon this mixture over the fish.
- Bake uncovered 15 to 20 minutes or until the fish flakes easily with a fork.

CRISPY ALMOND BAKED FISH
Adapted from Johanna Burkhard's 400 Best Comfort Food Recipes (one of my all-time favourite cookbooks). This is a very versatile recipe. You can use whatever fish fillets you choose - halibut and tilapia have worked well. You can also vary the seasonings.

- Preheat oven to 425°F.
- In a food processor, combine bread crumbs, almonds, garlic, herbs and zest. Pulse until almonds are finely chopped.
- Combine melted butter and olive oil in a small bowl.
- Wrap fish in paper towels to absorb excess moisture. Arrange fish fillets on a parchment-lined baking sheet. Brush tops with melted butter and olive oil mixture. Season with salt and pepper. Sprinkle crumb mixture over fish and pat lightly. Drizzle remaining butter/oil over fish fillets.
- Bake in preheated oven for 8-10 minutes until flakes flakes with a fork.
- Serve with lemon wedges if desired.
FISH WITH TOASTED ALMONDS
This is an easy dish that you can put on the table when you have friends coming around after a long day's work. The soft-fleshed cod (or any other meaty white fish) is offset by the crunchy almonds. Serve alongside a pile of fresh green beans, cooked until just tender, but still bright.

- Place a large dry nonstick skillet over medium heat, and add almonds. Stir constantly until they are tinged with color. Take from heat, and transfer to a bowl to cool.
- Season both sides of the fish well with salt and pepper. Place the same pan over medium heat, and add butter and olive oil. When both begin to bubble, add cod fillets skin side up. Brown fish until opaque all the way through, turning once, 3 to 4 minutes a side. Transfer fish to a warm serving plate, skin side down.
- Reduce heat under pan to low, and add lemon juice. Stir to blend with butter and oil, then pour this sauce over fillets. Scatter parsley over cod, and scatter with toasted almonds. Serve immediately.

- Preheat oven to 425°F (220°C).
- Beat egg and milk together.
- Mix breadcrumbs, oregano, salt and pepper. Dip haddock fillets into the egg/milk mixture then coat with breadcrumbs mixture.
- Lay coated haddock fillets side-by-side in a greased baking pan.
- Mix lemon juice, water and melted butter and pour over haddock fillets sprinkle with minced almonds and onions and bake into preheated oven, uncovered, for approximately 10 minutes or until the flesh is flakes or is no longer translucent.

BAKED FISH FILLETS WITH ALMONDS

- 1. In a small dry skillet, toast the almonds over medium heat, stirring frequently, until aromatic, about 5 minutes. (Take care not to let them burn.) Transfer to a plate. When the nuts are cool, finely chop them. Reserve. 2. Place the fish fillets in a greased baking dish just large enough to accommodate them in a single layer. Season with salt and pepper. Scatter the onions, cilantro, and reserved toasted almonds on top. 3. Preheat oven to 350°. In a small skillet, melt the butter. Add the garlic and chiles. Cook, stirring, about 20 seconds. Add the lime juice. Stir and immediately pour the mixture over the fish. Cover with foil and bake until the fish is opaque but still moist inside and just barely flakes when tested with a fork, about 20 minutes. OVEN BAKED ALMOND CRUSTED CATFISH FILLETS
I can't remember where I got this recipe but I've been making it for several years now. This is real easy to make.

- Set oven rack slightly above the middle of the oven and preheat to 500.
- Cut the catfish fillets into serving size pieces.
- Place the milk in a bowl and whisk the egg into it.
- Add the Cajun spice, minced onion and black pepper to the milk/egg mixture.
- In a separate flat dish, mix the bread crumbs and the sliced almonds. Dip the fish pieces into the seasoned egg wash, then coat them with bread crumb/almond mixture.
- Place the coated catfish fillets on a well greased (olive oil or similar oil) flat baking pan.
- Pour the melted butter evenly over the fillets.
- Place the baking pan on rack and bake for 10-12 min or until fish flakes easily. It is better not to over-cook fish.
