I love this apricot oat bars recipe. The bars are delicious and very easy to make. Make them for a lazy Sunday and have them with a cup of coffee in the afternoon, make them for a potluck, so you can be the star of the party or just for yourself when you want something sweet and delicious.

1 1/2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick-cooking rolled oats
1 cup brown sugar
3/4 cup unsalted butter room temperature
3/4 cup apricot jam

Steps:

  • Preheat oven to 350F.
  • In a big bowl, sift together flour, baking powder, salt.
  • Add oats and sugar and mix well.
  • Cut in butter until the mixture resembles bread crumbs. The recipe works better if the butter is not very cold.
  • Pat 2/3 of crumbs in a pan with the size of 11x7x1 1/2 inch.
  • Spread the entire surface with apricot jam.
  • Top with remaining crumbs.
  • Bake for 35-40 minutes or until the surface is golden bown.
  • Cool and cut in 2 1/2 dozens.

1 cup gluten-free all-purpose flour
½ cup almond meal
½ teaspoon baking soda
¼ teaspoon salt
1 cup gluten-free rolled oats
½ cup packed light brown sugar
½ cup white sugar
½ cup unsalted butter, melted
2 teaspoons vanilla extract
¼ teaspoon almond extract
⅓ cup white sugar
1 tablespoon cornstarch
2 cups pitted and diced apricots
1 tablespoon diced fresh ginger

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch baking dish and line with parchment paper; grease parchment paper.
  • Whisk flour, almond meal, baking soda, and salt together in a bowl. Add oats, brown sugar, and 1/2 cup white sugar; whisk to blend and break up clumps of brown sugar. Pour melted butter, vanilla extract, and almond extract over flour mixture; stir with a spatula until moistened.
  • Press 2/3 of the flour mixture into the bottom of the prepared baking dish to make the crust.
  • Whisk 1/3 cup white sugar and cornstarch together in a small bowl. Add apricots and ginger and toss to coat.
  • Spread apricot mixture over the crust. Sprinkle remaining 1/3 of the flour mixture on top.
  • Bake in the preheated oven until top is golden brown and crisp and filling is bubbling, 35 to 40 minutes. Cool completely before cutting into bars, about 25 minutes.

Steps:

140g light muscovado sugar
3 tbsp golden syrup
140g butter
250g rolled oats
85g raisin or sultanas
85g walnut pieces (or use your favourite nuts, roughly chopped)
50g sesame or mixed seeds
25g dried cranberry
50g ready-to-eat apricot , finely chopped

Steps:

  • Heat oven to 160C/fan 140C/gas 3. Gently heat the sugar, golden syrup and butter in a pan until the sugar and butter have both melted. Stir the oats, raisins, walnuts, seeds and cranberries into the pan until coated in the butter.
  • Spoon half the oaty mix into a traybake tin (23 x 23cm or thereabouts). Scatter the apricots over the top, then top with the remaining oat mix. Pack the mix down well and smooth with the back of a metal spoon. Bake for 35 mins or until dark golden. Leave to cool completely before cutting into 16 bars with a sharp knife.

Steps:

  • Preheat oven to 350°.
  • Lightly spoon flour into dry measuring cups, and level with a knife. Place flour and next 4 ingredients (flour through vanilla) in a food processor, and pulse 4 to 5 times or until oat mixture resembles coarse meal. Press half of oat mixture into the bottom of a 13 x 9-inch baking pan coated with cooking spray. Spread apricot preserves over oat mixture. Sprinkle remaining oat mixture over preserves, and gently press. Bake mixture at 350° for 35 minutes or until bubbly and golden brown. Cool bars completely in pan on a wire rack.
