- Preheat oven to 375 degrees F (190 degrees C). Arrange bacon on a baking sheet.
- Bake in the preheated oven until just crisped, 10 to 12 minutes.
- Beat eggs and water together in a bowl.
- Let the bacon cool on paper towels, about 5 minutes. Break into small pieces.
- Spray a 10-inch non-stick skillet with cooking spray. Melt butter over medium heat until foaming, about 2 minutes. Add onion once butter is no longer foaming. Cook and stir until tender but not browned, 4 to 5 minutes.
- Increase heat to medium-high. Pour eggs into the skillet and cook until mostly set, about 2 minutes. Lift the omelet with a spatula as the center rises; tilt the skillet so that uncooked eggs run to the center of the pan. Cook until set, 2 to 4 minutes. Sprinkle bacon pieces onto the omelet and fold in half using the spatula.

Steps:
- Black Bean Spread: Heat vegetable oil in medium saute pan over medium heat. Add onions and jalapenos. Saute until softened, and then add garlic. Cook for additional 2 minutes.
- Add black beans, cumin and lime juice, and stir to combine. Cook until beans are warmed through.
- Transfer to blender and blend until smooth, adding chicken stock to achieve spreadable consistency.
- Salsa Fresca: In mixing bowl, combine all ingredients but seasonings, and then season with salt and pepper.
- To Serve: Toast bread lightly in oven or toaster.
- Top bottom half with Black Bean Spread followed by bacon. Top with fried eggs. Garnish with Salsa Fresca, cheese and more cilantro. Place other half of bread on top.

- Whisk eggs and cream together.
- Melt butter in a large skillet. Pour in eggs hot, lifting edges into center allowing uncooked egg to reach pan.
- When egg is set add the ham and cheese to one half of the omelet. Fold over other half cook for 15-25 seconds and invert onto a plate.

- Heat oil in a medium Dutch oven or other heavy pot over medium. Add onions and cook, stirring, until just beginning to turn golden brown, 10–14 minutes. Stir in beans and add bay leaf. Cook, stirring occasionally, until beans begin to soften and fall apart, 9–11 minutes. Season beans with salt and remove from heat. Remove and discard bay leaf. Mash beans with a potato masher until smooth and spreadable. Do Ahead: Beans can be made 3 days ahead. Let cool; cover and chill.
- Toss tomato, red onion, cilantro, jalapeño, and lime juice in a small bowl to combine; season with salt.
- Heat broiler. Generously butter cut sides of rolls and place, buttered side up, on a rimmed baking sheet. Broil until butter is melted, about 1 minute. Remove from broiler; spread ⅓ cup refried beans over cut side of each roll half and arrange cheese down center. Broil until cheese is melted and beginning to brown, about 2 minutes.
- Top each mollete with a fried egg, then pico de gallo, avocado, and pickled onion. Serve with hot sauce.
