1 cup unbleached white flour
1 cup whole wheat flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1 pinch salt
1/4 cup butter, chilled
1/4 cup olive oil
3/4 cup skim milk or 3/4 cup yogurt

Steps:

  • Grease a large baking sheet with butter or oil.
  • In a large bowl, combine the flour, baking powder, baking soda and salt. Cut the butter into the flour mixture with a pastry cutter or a knife and fork until only small pieces are visible. Make a well in the center of the mixture.
  • Add the milk or yogurt, and stir gently until the dough holds together. If you are adding any fruit, raisins, berries or other additions, stir them in with the milk. Gently shape the dough into 2 inch rounds approximately 1 inch thick and transfer to the baking sheet. Bake in a preheated over for 15 minutes, or until golden brown.

2 cups whole wheat flour
1 tablespoon double-acting baking powder
1/2 teaspoon salt
1/3 cup canola oil
1/2 cup plain soymilk, as needed

Steps:

  • Preheat the oven to 450 degrees F.
  • Whisk together the flour, baking powder, and salt in a large mixting bowl.
  • Cut in the oil with a fork or pastry blender until the mixture resembles coarse crumbs.
  • Using a fork, stir in just enough of the milk so that the dry ingredients are moistened and the dough comes together.
  • (Too much milk will make the dough sticky; too little will make the biscuits dry.) Gather the dough in a ball and turn it out onto a lightly floured work surface.
  • Knead it gently 20 to 25 times.
  • Then smooth it into a ball.
  • Roll or pat the dough into a 1/2-inch thick round and cut it with a floured 2 1/2-inch biscuit cutter or the rim of a glass.
  • Push the center straight down into the dough without twisting it.
  • Reroll and recut the scraps of dough.
  • Place the biscuits on an ungreased baking sheet about an inch apart for crusty sides or touching for soft sides.
  • Bake on the center shelf of the oven for 10 to 12 minutes, or until the bottoms are lightly browned.
  • Do not overbake.
  • Serve hot or warm.

1 cup whole wheat flour
4 teaspoons baking powder
1 tablespoon white sugar
¾ teaspoon salt
¼ cup butter
1 cup buttermilk

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine all-purpose flour, whole wheat flour, baking powder, sugar, and salt in bowl. Cut in butter with a knife or pastry blender until mixture resembles coarse crumbs; stir in buttermilk until just moistened.
  • Turn dough out on a lightly floured surface; knead gently 8 to 10 times. Roll to about 3/4-inch thickness; cut with a 2 1/2-inch biscuit cutter. Place biscuits on an ungreased baking sheet.
  • Bake in preheated oven until biscuits are lightly browned, 10 to 12 minutes.

These are fast, easy and tasty. I found the recipe in the Chicago Sun-Times but it's originally from 'Entertaining 1-2-3 by Rozanne Gold. It just serves 2 so, obviously, double or triple if needed.

3 tablespoons extra virgin olive oil
1/4 cup milk

Steps:

  • Place flour in a small bowl.
  • Make a well and add olive oil and milk and stir until blended and soft dough is formed.
  • Add more or less milk to adjust consistency.
  • Do not overwork or biscuits will be tough.
  • Drop soft dough from spoon onto baking sheet coated with nonstick cooking spray.
  • Bake in a preheated 400-degree oven until golden, about 10 minutes.
