Stewed Chicken, Chipotle and Monterey Jack Quesadillas image

Simmer chicken in a tomato-chili powder sauce and add it to a quesadilla with chipotle chiles.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 10

One 15-ounce can fire-roasted tomatoes
2 teaspoons chili powder
1 clove garlic, finely grated
Kosher salt and freshly ground black pepper
One 8-ounce boneless skinless chicken breast
Four 10-inch (burrito-size) flour tortillas
2 cups shredded Monterey Jack cheese
1 to 2 chipotle chiles in adobo, chopped, plus 1 to 2 tablespoons of the adobo sauce
2 tablespoons unsalted butter
Sour cream, chopped scallions, guacamole and salsa, for serving

Steps:

  • Put the tomatoes, chili powder, garlic, 1/2 teaspoon salt and 2/3 cup water in a small saucepan. Bring to a simmer and cook 10 minutes, breaking up the tomatoes with a spoon. Add the chicken and cook, flipping once, until cooked through, 8 to 9 minutes per side. Transfer the chicken to a plate, shred it, then return it to the sauce. Add salt and pepper to taste.
  • Lay a tortilla on a work surface and top evenly with 1/2 cup of the Monterey Jack. Add one-quarter of the shredded chicken in sauce and some chopped chipotle chiles and adobo sauce, depending on how spicy you like it. Fold the tortilla in half to enclose the fillings. Repeat with the remaining tortillas and ingredients.
  • Melt 1/2 tablespoon of the butter in a large nonstick or cast-iron skillet over medium heat. Cook a quesadilla, flipping once, until the cheese is melted and it is golden brown on both sides, about 3 minutes per side. Transfer to a cutting board and repeat with the remaining butter and quesadillas.
  • Cut into triangles and serve topped with sour cream, chopped scallions, guacamole and salsa.

Grilled Steak, Zucchini and Monterey Jack Quesadillas image

Hit skirt steak with a quick citrus marinade before grilling and slicing it for this quesadilla.

Provided by Food Network Kitchen

Time 50m

Yield 4

Number Of Ingredients 12

1/4 teaspoon ground cumin
1 clove garlic, minced
Juice of 1/2 lime
Juice of 1/2 orange
Kosher salt and freshly ground black pepper
8 ounces cleaned and trimmed skirt steak
Olive oil, for oiling the grill grates and zucchini
2 medium zucchini, sliced lengthwise about 1/3 inch thick
Four 10-inch (burrito size) flour tortillas
2 cups shredded Monterey Jack
2 tablespoons unsalted butter
Chopped scallions, sour cream, guacamole and salsa, for serving

Steps:

  • Prepare a grill for medium heat.
  • Whisk together the cumin, garlic, lime juice, orange juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl and add the steak. Mix well to coat and let marinate for 10 minutes.
  • Lightly oil the grill grates and cook the steak, flipping once, until medium rare, 2 to 6 minutes per side depending on the thickness. Remove the steak to a cutting board and let rest 5 minutes. Slice the steak against the grain and then into bite-size pieces.
  • Lightly brush the zucchini with oil and grill, flipping as needed, until tender and lightly charred, 4 to 6 minutes. Season with salt and pepper. Cut into bite-size chunks and set aside to cool slightly.
  • Lay a tortilla on a work surface and sprinkle evenly with 1/2 cup of the cheese. Arrange one-quarter of both the steak and zucchini on top of the cheese. Fold the tortilla in half to enclose the fillings. Repeat with the remaining tortillas, cheese, steak and zucchini.
  • Melt 1/2 tablespoon butter in a large nonstick or cast-iron skillet over medium heat. Add a quesadilla and cook, flipping once, until golden brown on both sides and the cheese is melted, about 3 minutes per side. Remove to a cutting board and repeat with the remaining butter and quesadillas.
  • Cut the quesadillas into triangles and serve with the chopped scallions, sour cream, guacamole and salsa.

COWBOY CHIPOTLE MANGO QUESADILLAS

Provided by Food Network

Time 45m

Yield 8 single servings or 64 appetizers

Number Of Ingredients 17

4 fresh pasilla chiles, fire roasted, stems and seeds removed
4 fresh Anaheim chiles, fire roasted, stem and seeds removed
2 bunches fresh green onions, grilled and chopped fine
1 pound Cotija cheese, crumbled, approximately 1 1/2 cups (can be found in Mexican markets)
1 pound sharp Cheddar, shredded (approximately 2 cups)
1/2 pound Parmesan, shredded (approximately 1 cup)
1 cup Chipotle Mango Pico de Gallo, recipe follows
16 store-bought flour tortillas
6 large tomatoes, brunoise or small dice
4 green onions, white and green parts, diced
1 bunch fresh cilantro, leaves minced
1 large jalapeno pepper, brunoise or small dice
1 large ripe mango, peeled and small dice
2 garlic cloves, minced
2 or 3 chipotle peppers in adobo sauce, drained and brunoise or small dice (recommended: Embasa brand)
1 lime, juiced, about 2 tablespoons
Pinch salt and freshly ground black pepper

Steps:

  • Preheat the grill to medium.
  • Arrange the peppers on the hot grill, turning them when the skin is charred and blistered, and all sides have been roasted. Remove the peppers to a bowl and set aside to cool. Scrape the flaking skins from the chiles and dice. Grill the green onions in the same way until lightly charred and wilted. Remove them from the grill to a cutting board and finely chop. Add the chiles, onion and the shredded cheeses to a medium bowl and mix well. Put 1 tortilla on top of well seasoned comal and spread it with some of the cheese mixture. Top with some Chipotle Pico de Gallo and cover with a second tortilla. After about 2 minutes carefully flip and toast the other side, about 2 to 3 minutes. The tortillas should be golden brown and the cheese should be thoroughly melted. Repeat with remaining tortillas and filling. Cut the quesadillas into quarters for single servings or into eighths for appetizers.
  • Combine all the ingredients in a glass bowl and mix well. It is best to let this stand for at least 1 hour to allow the flavors to marry. Drain the salsa of excess liquid and refrigerate until ready to use.
