BUFFALO CHICKEN LETTUCE WRAPS (SLOW COOKER, INSTANT POT)



Buffalo Chicken Lettuce Wraps (Slow Cooker, Instant Pot) image

All the flavors you love from buffalo wings without all the added fat. Making shredded buffalo chicken in the slow cooker or Instant Pot is super easy!

24 oz 3 boneless skinless chicken breasts
1 celery stalk (diced)
1/2 onion (diced)
1 clove garlic (minced)
16 oz fat free low sodium chicken broth
1/2 cup cayenne pepper sauce (I used Frank's)
6 large lettuce leaves (Bibb or Iceberg)
1 1/2 cups shredded carrots
2 large celery stalks (cut into 2 inch matchsticks)

Steps:

  • In a slow cooker, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough).
  • Cover and cook on high 4 hours.
  • Remove the chicken from pot, reserve 1/2 cup broth and discard the rest.
  • Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes. Makes 3 cups chicken.
  • To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice. Wrap up and start eating!
  • Combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough) in the Instant Pot. Cover and cook high pressure 15 minutes. Natural release.
  • Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the pot with the 1/2 cup broth and the hot sauce and saute 2 to 3 minutes. Makes 3 cups chicken.
  • To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice. Wrap up and start eating!

Who knew low-fat and low-carb could be THIS delicious?? Best part about this recipe is that it cooks in the crockpot, so you can throw it together and walk away. This one is a staple in our house!

4 - chicken breast halves, skinless and boneless
1 - celery stalk
1/2 - onion, diced
1 - clove of garlic
16 ounce(s) chicken broth, low-fat, low-sodium
1/2 cup(s) hot cayenne pepper sauce (i use frank's red hot)
6 - large lettuce leaves
1 1/2 cup(s) carrots, shredded (optional)

Steps:

  • In your crockpot, combine the chicken, celery stalk, onions, garlic and broth. Make sure your chicken is covered in liquid - if you don't have enough broth, add some water. Cover and cook on high for 4 hours.
  • Remove chicken from the pot, reserve 1/2 cup of the liquid, discard the rest. Shred the chicken with two forks, put it back in the slow cooker, add the 1/2 cup of saved liquid, and the hot sauce. Cook on high for an additional 30 minutes.
  • To put the wraps together, place desired amount of shredded chicken in a leaf of lettuce, and top with shredded carrots. Wrap up and dig in!

If you love buffalo chicken anything, you must add these to your repertoire! Lettuce wraps aren't always the simplest to eat, but a little mess on your plate is worth it for this healthy, easy appetizer or light meal!

3 large boneless skinless chicken breasts
1 celery
1 onion, diced
1 garlic clove
16 ounces low sodium chicken broth
1/2 cup buffalo wing sauce
1 large lettuce leaf (Bibb or iceberg)
1 1/2 cups shredded carrots
2 large celery ribs, thinly sliced

Steps:

  • 1. Combine the chicken, onions, celery stalk (1), garlic, and broth in a slow cooker. Cover and cook on high for 4 hours or on low for 8 hours.
  • 2. Remove the chicken from the pot, reserve 1/2 cup broth, and discard the rest. Shred the chicken with two forks, return to the slow cooker with the reserved broth and the hot sauce. Cook on high for an additional 30 minutes (I just kept mine on warm for another hour or two).
  • 3. Serve chicken on lettuce cups, topped with buffalo chicken, shredded carrots, chopped celery, blue cheese, and ranch dressing, if desired.

  • Spray 3 1/2- to 4-quart slow cooker with cooking spray. Place chicken in cooker. Pour Buffalo wing sauce over chicken. Cover; cook on Low heat setting 6 to 7 hours.
