Watercress with Sardines, Tarragon, and Clementines image

The toasted pumpkin seeds and sardines make this a crunchy, healthy midday meal.

Number Of Ingredients 10

Zest and juice of 1/2 lemon
1 tablespoon olive oil
Coarse salt and pepper
2 cups watercress sprigs
1/4 small red onion, sliced
1 tablespoon fresh tarragon
2 clementines, peel and pith removed, sliced
1 (4-ounce) can olive-oil packed sardines, drained
3 tablespoons toasted pumpkin seeds
Vinaigrette

Steps:

  • Whisk lemon zest and juice with olive oil. Season with salt and pepper.
  • Arrange watercress, red onion, and tarragon on a platter.
  • Top with clementine slices, sardines, and pumpkin seeds. Season with salt and pepper. Drizzle with vinaigrette, and adjust seasoning, as necessary.

This wonderfully light salad is packed with easy-to-find seasonal ingredients and makes a great Christmas starter

6-8 seedless clementines
2 heads red chicory
100g watercress
1 fennel bulb , halved, cored and very finely sliced
1 red onion , halved and finely sliced
200g feta cheese , cut into cubes
small handful parsley , finely chopped
juice 1 clementine
juice 1 lemon
4 tbsp olive oil
1 tsp caster sugar

Steps:

  • Whisk the dressing ingredients in a jug, season with salt and set aside.
  • To make the salad, peel the clementines and slice whole. In a bowl, gently toss the chicory and watercress with the fennel and onion. Place slices of clementine on opposite sides of each plate, mound a pile of leaves in the middle, then scatter over the feta. Stir the parsley through the dressing and drizzle over the salad.

Use up leftover festive ingredients such as ham, hazelnuts, cranberries and clementines in this light salad - perfect after a week of indulgence

250g pouch ready-to-eat mixed grains
280g leftover ham , shredded or cut into chunks
100g bag watercress
1 small fennel bulb , thinly sliced
50g hazelnuts , toasted and roughly chopped
small bunch parsley , roughly chopped
1 ½ tbsp dried cranberries , roughly chopped
2 tbsp extra virgin olive oil
zest 1 clementine and juice of 2
2 ½ tsp Dijon mustard
good drizzle of clear honey

Steps:

  • For the dressing, put all the ingredients in a jar, along with some seasoning, pop on the lid and give it a really good shake.
  • Tip the grains into a large bowl and toss through the ham, watercress, fennel, hazelnuts and parsley. Just before serving, pour over the dressing and gently toss to combine. Transfer to a serving platter and scatter over the dried cranberries.

1/4 cup low-fat Greek yogurt
1 diced celery stalk
1 tablespoon minced chives
2 teaspoons whole-grain mustard
One 4.4-ounce can sardines, packed in olive oil (drained)
2 cups greens
1 teaspoon lemon juice
1 teaspoon olive oil
Salt and pepper

Steps:

  • Stir together yogurt, celery, chives, and mustard. Fold in sardines. Toss greens with lemon juice and olive oil; season with salt and pepper. Top with sardine salad.

slice granary bread
garlic clove , halved
vine-ripened tomato , thinly sliced
½ x can Portugese sardine in spring water, drained
handful of organic watercress or wild rocket
splash of balsamic vinegar

Steps:

  • Lightly toast the bread. Rub the cut side of the garlic over the surface of the toast and arrange the tomato slices on top. Add seasoning if you want to.
  • Break up the sardines with a fork and arrange on top. Pile on the watercress and drizzle with balsamic vinegar.
