SHRIMP AND HAM CREOLE JAMBALAYA



Shrimp and Ham Creole Jambalaya image

Yield: 8 cups of Jambalaya

Number Of Ingredients 16

2 Tbsp unsalted butter
2 onions, (coarsely chopped)
2 stalks celery, (diced)
2 garlic cloves (or ½ tsp garlic powder)
½ green pepper, (cored, seeded and diced)
4 c cooked ham (roughly 1 lb, diced)
1 can (14.5 oz) diced tomatoes, (un-drained)
2 Tbsp tomato paste
1 bay leaf
1 Tbsp parsley
½ tsp thyme
½ -1 tsp cayenne powder ((depending on your heat preference))
1 ½ c white rice, (dry)
2 ½ c chicken broth ((we prefer low sodium))
½ lb raw shrimp, (shelled)
½ -1 tsp salt

Steps:

  • In a Dutch oven or large soup pot, heat the oil. Add the onions and sauté over medium high heat, 2-3 minutes.
  • Add the celery, garlic, and pepper, and sauté an additional 3-4 minutes, until the onions are lightly golden.
  • Add the ham and mix well.
  • Add the tomatoes, paste, and seasonings (except the salt). Mix well.
  • Add the rice and broth. Bring the mixture to a boil.
  • Reduce the heat to medium low. Cover the pot and simmer for 15-20 minutes, until the rice is tender. (Checking near the end of the cooking time to be sure the jambalaya doesn't need more broth.)
  • Add the shrimp and mix to combine. Cover and cook for 5 minutes more, over low heat, until the shrimp is pink and cooked through.
  • Taste the jambalaya and add salt and extra cayenne powder as desired.

1/4 cup each chopped green onions, celery and green pepper
2 tablespoons butter
1/4 teaspoon minced garlic
3/4 cup stewed tomatoes, cut up
1/4 cup water
2 tablespoons tomato paste
1/2 teaspoon sugar
1/2 teaspoon chicken bouillon granules
1/8 teaspoon dried basil
1/8 teaspoon hot pepper sauce
1/4 pound uncooked medium shrimp, peeled and deveined
1/3 cup cubed fully cooked ham
Hot cooked rice, optional

Steps:

  • In a large saucepan, saute the onions, celery and green pepper in butter until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, water, tomato paste, sugar, bouillon, basil and pepper sauce. Bring to a boil. Reduce heat. Simmer, uncovered, for 30 minutes, stirring occasionally. , Add shrimp and ham. Cook and stir for 2-3 minutes or until shrimp turn pink. Serve with rice if desired.

1 cup cubed fully cooked ham
3/4 cup chopped onion
1 garlic clove, minced
2 tablespoons vegetable oil
2 cups chicken broth
1 can (14-1/2 ounces) stewed tomatoes
2 tablespoons minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/8 teaspoon each cayenne pepper, chili powder and pepper
1 bay leaf
1 cup uncooked long grain rice
1 pound uncooked medium shrimp, peeled and deveined

Steps:

  • In a large skillet, cook the ham, onion and garlic in oil until onion is tender. Stir in the broth, tomatoes, parsley and seasonings. Bring to a boil. Stir in rice. Reduce heat; cover and simmer for 15 minutes. Add shrimp; cook 5 minutes longer or until the shrimp turn pink and rice is tender. Discard bay leaf.

1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 bay leaf
1/4 teaspoon cayenne pepper
1 tablespoon tomato paste
6 ounces diced, smoked ham
2 1/2 cups low sodium chicken broth
One 14 1/2-ounce can no-salt added diced tomatoes
1 cup uncooked long-grain white rice
1 pound peeled and deveined medium shrimp
Hot pepper sauce

Steps:

  • Heat the oil in a large Dutch oven over a medium heat. Add the onion, peppers and garlic and saute until they begin to soften, about 10 minutes. Mix in the next 11 ingredients, salt through the diced tomatoes. Bring to a boil. 2 large onions, diced
1 red bell pepper, diced
1 green bell pepper, diced
3 large garlic cloves, chopped
28 ounces canned diced tomatoes
2 cups ham, diced
1/2 cup dry white wine
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon paprika
1/2 teaspoon cayenne
3/4 cup long-grain white rice

Steps:

  • Heat oil in large Dutch oven over medium heat.
  • Add onions, bell peppers and garlic; saute until beginning to soften, about 10 minutes.
  • Mix in tomatoes with their juices, ham, wine, thyme, basil, paprika, and cayenne pepper;.

  • Gradually stir in rice; cover pot.

1/2 cup chopped onion
1/2 cup chopped green pepper

3/4 cup uncooked long grain rice

  • In a large skillet, cook sausage until browned; drain. Stir in onion and green pepper until vegetables are tender. Add garlic; cook 1 minute longer. 2 pounds shrimp in the shell
2 tablespoons corn, peanut or vegetable oil
2 tablespoons flour
1 cup finely chopped onion
1 cup finely chopped green onions or scallions
1 cup finely chopped green pepper
1 cup finely chopped celery
1 tablespoon finely minced garlic
1 cup cooked ham cut into 1/2-inch cubes
2 cups crushed imported tomatoes
1/2 teaspoon dried thyme
1 teaspoon dried crushed oregano
1 cup uncooked long-grain rice, optional, or serve the dish with Creole rice (see recipe)
Salt to taste if desired
Freshly ground pepper to taste
5 cups shrimp broth (see recipe) or water
1/2 cup finely chopped green onion or scallions, optional, for garnish

Steps:

  • Peel and devein the shrimp. The shells may be used to make a broth (see recipe).
  • Heat the oil in a kettle or large saucepan with a heavy bottom over medium heat. Add the flour, and cook, stirring constantly, until lightly browned. Do not burn.
  • Add the onion, green onions, green pepper, celery and garlic. Cook, stirring, until wilted. Add ham and stir. Add the tomatoes, thyme and oregano, and bring to a boil. Stir in the uncooked rice, if desired. Add salt, pepper and shrimp broth. Reduce heat to medium-low, and simmer, uncovered, about 25 minutes; add the shrimp and stir. Cook about 10 minutes longer or until it has thickened, but is still slightly soupy. Serve in bowls with chopped green onions on the side as an optional garnish.

Instead of the diced tomatoes and hot sauce, substitute a 10 ounce can of Ro*Tel Diced Tomatoes and Green Chilies. The Ro*Tel really gives it a nice kick.

  • Sprinkle chicken evenly with salt, black pepper, and red pepper.
