Steps:

  • Combine 1 cup flour, 1/3 cup oats, 3/4 cup sugar and a pinch of salt in a bowl. Stir in 6 tablespoons melted butter and 1/2 cup chopped hazelnuts; squeeze into large crumbles and place in the freezer. Toss 2 pounds chopped rhubarb, 1/3 cup sugar, 1/4 cup flour, 1/2 teaspoon vanilla extract, 1/2 teaspoon orange zest and 1/4 teaspoon salt in a 8-by-8-inch glass or ceramic baking dish. Scatter the crumble on top and bake in a preheated 375 degrees F oven until golden and bubbly, 45 minutes. Let cool for 15 minutes; serve with whipped cream.

3 cups sliced fresh or frozen rhubarb (1/2-inch pieces)
1 cup diced peeled apples
1/2 to 1 cup sliced strawberries
1/3 cup sugar
1/2 teaspoon ground cinnamon
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
4 tablespoons cold butter
2/3 cup packed brown sugar
2/3 cup quick-cooking oats
Vanilla ice cream, optional

Steps:

  • Preheat oven to 350°. Combine rhubarb, apples and strawberries; spoon into a greased 8-in. square baking dish. Combine sugar and cinnamon; sprinkle over rhubarb mixture. Set aside. , In a bowl, combine flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in brown sugar and oats. Sprinkle over rhubarb mixture. , Bake at 350° for 40-50 minutes or until lightly browned. Serve warm or cold, with a scoop of ice cream if desired.

I modified this recipe with an extra 1/4 cup white sugar. I also added a modifier so that you can make extra streusel to smash around the bottom and sides to form a crust. The crumble on the top is extremely delicious!

1 ¼ cups white sugar
2 tablespoons all-purpose flour
1 large egg
½ teaspoon ground cinnamon
1 ½ cups all-purpose flour
1 cup packed light brown sugar
1 cup quick-cooking oats
½ teaspoon ground cinnamon
1 cup butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Combine rhubarb, white sugar, 2 tablespoons flour, egg, and 1/2 teaspoon cinnamon together in a large bowl until evenly coated. Spread rhubarb mixture into the prepared baking dish.
  • Mix 1 1/2 cup flour, brown sugar, oats, and 1/2 teaspoon cinnamon together in a separate bowl. Cut in butter using a pastry cutter or two forks until topping is crumbly. Sprinkle topping over rhubarb layer.
  • Bake in the preheated oven until hot and bubbling, about 40 minutes. Serve hot or cold.

2 tablespoons all-purpose flour
2 large eggs
½ cup all-purpose flour
½ cup brown sugar
¼ cup rolled oats
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons unsalted butter, softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Put rhubarb in an 8- or 9-inch round glass baking dish.
  • Mix sugar, flour, and eggs together in a medium mixing bowl; pour over rhubarb.
  • Prepare crumble in the same bowl: Mix flour, brown sugar, oats, baking powder, and salt until combined. Sprinkle over rhubarb.
  • Bake in the preheated oven until rhubarb is soft and top is browned, about 30 minutes.

2 pound(s) rhubarb cut into 1 inch pieces (about 6 cups)
1 1/4 cup(s) granulated sugar
1 1/4 cup(s) all purpose flour
1 teaspoon(s) vanilla extract
1 cup(s) light brown sugar ( i don't know why it has to be light brown)
1 stick(s) of unsalted butter cut into little pieces (1/2 cup)
1/2 teaspoon(s) salt

Steps:

  • Preheat oven to 375° I mix the granulated sugar and 1/4 cup flour in a large bowl and sprinkle it on the rhubarb then sprinke the vanilla on that and stir it around so it's pretty well distributed.
  • Put rhubarb mixture into a 9" x 13" baking dish.
  • Put remaining 1 cup of flour, brown sugar and salt into a large mixing bowl and toss well. Add butter chunks and mix well with a pastry blender until mixture resembles course meal. Take a large spoon and distribute this topping over rhubarb.
  • Bake until rhubarb is very tender and bubbly and the topping is golden brown, about 30 minutes. Serving suggestion: warm with vanilla ice cream. Spoon leftovers into bowls and eat cold for breakfast.

I make this a lot.A friend gave me this recipe a long time ago.My hubby is a diabetic so I use splenda for the rhubarb mixture and regular sugar in the topping.

  • Mix the rhubarb portion and put in dish.
  • Make the crumble and put on top.
