If you can't decide whether you like chocolate or coffee more, this pie-shaped cheesecake is for you!

1 tablespoon instant coffee granules or crystals
3 tablespoons coffee-flavored liqueur
2 packages (8 oz each) cream cheese, softened
3/4 cup granulated sugar
3/4 cup Original Bisquick™ mix
1 teaspoon vanilla
3 eggs
3 oz semisweet baking chocolate, melted, cooled
1 oz semisweet baking chocolate, melted, cooled
2 tablespoons powdered sugar
1 tablespoon coffee-flavored liqueur, if desired
1 container (8 oz) sour cream
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease 9-inch glass pie plate. In small bowl, mix coffee and liqueur until coffee is dissolved.
  • In large bowl, beat coffee mixture and remaining cheesecake ingredients with electric mixer on high speed 2 minutes, scraping bowl frequently. Pour into pie plate.
  • Bake about 35 minutes or until center is firm and puffed. Cool 5 minutes (cheesecake top will be cracked).
  • In small bowl, mix 1 ounce chocolate, the powdered sugar and 1 tablespoon liqueur until well blended. Stir in sour cream and 1 teaspoon vanilla. Carefully spread topping over cheesecake. Refrigerate at least 3 hours before serving. Store in refrigerator.

I have been baking this for nearly 20 years. By the name I would hazard a guess that I got it from a Bisquick box. Very good with fresh berries or brandied dark cherries. Not the classic, but very good in a pinch!

2 teaspoons vanilla
2 eggs
1 cup sugar
1/2 cup Bisquick
2 (8 ounce) packages cream cheese, cut into 1/2 inch cubes,softened
1 cup sour cream
2 tablespoons sugar
2 teaspoons vanilla

Steps:

  • Heat oven to 350 degrees.
  • Grease 9 inch pie plate.
  • Place milk, 2 t.
  • vanilla, eggs,1 c.
  • sugar, and bisquick in blender container.
  • Cover and blend on high 15 seconds.
  • Add cream cheese.
  • Cover and blend on high 2 minutes.
  • Pour into pie plate.
  • Bake 40-45 minutes, or until center is firm.
  • Combine sour cream, 2 t.
  • vanilla, and 2 T.
  • sugar.
  • Spread over cheesecake that has cooled.

1 cup crushed vanilla wafers (about 30 wafers)
1/2 cup confectioners' sugar
1/3 cup baking cocoa
1/3 cup butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
2 cups semisweet chocolate chips, melted and cooled
1 can (14 ounces) sweetened condensed milk
2 teaspoons vanilla extract
4 large eggs

Steps:

  • In a small bowl, combine the wafer crumbs, sugar and cocoa; stir in butter. Press onto the bottom of a greased 9-in. springform pan; set aside. , In a large bowl, beat the cream cheese until smooth. Gradually beat in chocolate. Add eggs; beat on low speed just until combined. Gradually stir in milk and vanilla. Pour over crust. Place pan on a baking sheet., Bake at 325° for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan. Refrigerate leftovers.

I made this recipe from Southern Living for Christmas and everyone just loved it! The recipe makes two 9 inch cheesecakes so it feeds a lot of people. This three layered cheesecake has a rich brownie bottom layer with a center layer of cream cheese and a decadently rich chocolate glaze covering the top. The recipe is easily halved. The Chocolate Glaze top layer is intended to divide between the two cheesecakes. However, I used one full recipe to top one cheesecake. Allow 8 hours chilling time. This cheesecake is absolutely delicious and I am sure you will enjoy it, too!

1 cup pecans, toasted, chopped
4 (1 ounce) unsweetened chocolate squares
1 cup butter, softened
2 cups sugar
4 large eggs
1 cup all-purpose flour
1 teaspoon vanilla extract
1 cup semisweet chocolate morsel
4 (8 ounce) packages cream cheese, softened
1 3/4 cups sugar
7 large eggs
2 teaspoons vanilla
1 (12 ounce) package semisweet chocolate morsels
1/2 cup whipping cream
fresh mint sprig (optional)
sliced strawberry (optional)

Steps:

  • Sprinkle 1/2 cup toasted and chopped pecans evenly over the bottom of each of 2 greased and floured 9-inch springform pans.
  • Microwave chocolate squares in a microwave-safe bowl at MEDIUM (50% power) 1 1/2 minutes, stirring at 30-second intervals until melted.
  • Stir until smooth.
  • Beat butter and 2 cups sugar at medium speed with an electric mixer until light and fluffy.
  • Add 4 eggs, 1 at a time, beating just until blended after each addition.
  • Add melted chocolate, beating just until blended.
  • Add flour, beating at low speed just until blended.
  • Stir in 1 teaspoon vanilla and chocolate morsels.
  • Divide batter evenly between pans, spreading over chopped pecans.
  • Beat cream cheese at medium speed with an electric mixer until smooth; add 1 3/4 cups sugar, beating until well blended.
  • Add 7 eggs, 1 at a time, beating just until blended after each addition.
  • Stir in 2 teaspoons vanilla.
  • Divide cream cheese mixture evenly between each pan, spreading over brownie batter.
  • Bake at 325° for 1 hour and 15 minutes or until set.
  • Remove from oven; cool cheesecakes completely on wire racks.
  • Spread top of each cooled cheesecake with 1 recipe Chocolate Glaze; cover and chill 8 hours.
  • Remove sides of pans before serving. Garnish with mint sprigs and sliced strawberries, if desired.
  • Chocolate Glaze:.
  • Melt 1 (12-ounce) package semisweet chocolate morsels and 1/2 cup whipping cream in a 2-quart microwave-safe bowl at MEDIUM (50% power) 2 1/2 to 3 minutes or until chocolate begins to melt.
  • Whisk until chocolate melts and mixture is smooth. If you wish, double the Chocolate Glaze recipe if making two cheesecakes.
  • Makes about 2 cups.

  • In microwave, melt caramels with milk. Pour over brownie crust. Sprinkle with pecans.
  • Combine the cream cheese and sugar; mix well.
  • Add eggs, beating on low speed just until combined. Stir in melted chocolate.
  • Bake at 350 degrees for 35 to 40 minutes.
