VINCENT PRICE FRIDAY CHICKEN

Vincent Price Friday Chicken image

Adapted from "A Treasury of Great Recipes" by Mary and Vincent Price, published in 1965 - an excellent cookbook! Mr. Price says that the recipe got its name because it was usually made on Friday (their cooking and baking day) and then was eaten cold over the weekend.

Categories     Whole Chicken

Time 2h35m

Yield 6 serving(s)

Number Of Ingredients 10

1 (7 lb) capons or 1 (7 lb) chicken
1 small onion, grated (about 1/3 to 1/2 cup)
5 slices white bread, crusts removed
1/2 cup water
1/2 cup finely chopped parsley
4 eggs, lightly beaten
2 teaspoons salt, divided
1/2 teaspoon fresh ground black pepper, divided
1 teaspoon thyme or 1 teaspoon crumbed sage
1/2 cup butter, softened

Steps:

  • Preheat oven to 375°F.
  • Take the capon or chicken and loosen the skin by sliding your hand under the skin around the thighs and breast meat, tearing the connective tissue from the upper layer.
  • Finely grate the onion using a box grater or food processor- make sure you don't lose the liquid from the onion; set aside.
  • Cut the crusts from the bread; discard crusts (or reserve for some other dish).
  • Sprinkle the bread with the water and let it sit for 3 minutes; squeeze the excess water from the slices, and crumble or roughly chop into pieces.
  • To make the stuffing, thoroughly combine the moistened bread with the parsley, eggs, 1 teaspoon salt, 1/4 teaspoon pepper, thyme or sage, and grated onion (together with the onion juice).
  • Insert the stuffing between the loosened skin and meat of the capon: over the breast and into the thighs.
  • Take a shallow roasting pan with a rack and place the capon breast-up on the rack.
  • Rub the capon with the softened butter, then sprinkle with the remaining 1 teaspoon salt and 1/4 teaspoon pepper.
  • Roast at 375° for 45 minutes, basting frequently with the pan juices.
  • Reduce the temperature to 350° and roast for an additional 1 hour, basting every 20 minutes, then carefully turn the capon over onto the breast and cook for another 15 minutes to brown the meat on the back.
  • Remove from oven and let chicken rest for 5 minutes then carve and serve hot, or also is good cold the next day.

VINCENT PRICE CAESAR SALAD

Vincent Price Caesar Salad image

Mr. Price's "Treasury of Great Recipes" is a wonderful cookbook that I'm privileged to have on my shelf! The style of recipe format is rather different from what we're used to these days, so I'm translating for a more modern audience. Posted by request. Times do not include overnight chilling, but do include chilling for the lettuce.

Provided by Julesong

Categories     Vegetable

Time 1h15m

Yield 6 serving(s)

Number Of Ingredients 13

2 heads romaine lettuce
1 clove garlic, peeled and crushed
1 cup olive oil
4 slices stale French bread
1 dash cayenne pepper
1 dash Tabasco sauce
1/2 teaspoon sugar
6 anchovy fillets, diced and mashed (optional)
1 teaspoon fresh ground pepper
1/2 teaspoon salt
1 egg
3 tablespoons lemon juice (freshly squeezed preferred)
3/8 cup grated parmesan cheese

Steps:

  • Night before serving (or 8 hours before): crush the garlic and add into the olive oil, then chill overnight in glass container in refrigerator.
  • About an hour before serving: tear the leaves from the lettuce, wash well, and dry thoroughly (a salad spinner works well); chill in refrigerator.
  • When ready to make salad: strain and remove the garlic from the infused chilled olive oil.
  • Trim the crusts from the stale bread, cut into cubes, and brown them by sautéing over medium heat in 1/4 cup of the garlic-infused olive oil, turning them to brown on all sides; drain on paper towels and set aside.
  • Pour the remaining infused oil into a jar and add the cayenne, Tabasco, sugar, and anchovies (which Mr Vincent says are optional, but you shouldn't try to make real Caesar dressing without them), cover with lid, and shake well to mix.
  • Break the chilled lettuce leaves into pieces and place in a large bowl; sprinkle the lettuce with the pepper and salt, then pour the olive oil mixture over and mix to thoroughly coat the leaves.
  • Put water in a pot and bring to a full boil, then take the egg and boil it for 1 minute; remove, crack the shell, and drop it into the salad.
  • Sprinkle the lemon juice over the egg in the salad and then gently stir the egg into the leaves- it will come to have a creamy appearance.
  • Presentation: when ready to serve the salad, sprinkle the Parmesan cheese over it and then the croutons, then toss lightly to mix and serve immediately.
  • Great with garlic bread!

VINCENT PRICE SOPA POBLANO - POBLANO CHILE SOUP

Vincent Price Sopa Poblano - Poblano Chile Soup image

This recipe is adapted from one in Vincent and Mary Price's "A Treasury of Great Recipes." Although it appears amongst those from the Rivoli Restaurant in Mexico City, it doesn't appear to be from the restaurant itself. "This hearty soup, a sort of Mexican minestrone, is made with both [corn and chiles], as you might expect, but it is the unexpected ingredients that make it so good." Let me tell you... this soup is OUTSTANDING. I've made a lot of soups, and this is one of my favorites. I'll be making it often in years to come!

Time 40m

Yield 4 serving(s)

Number Of Ingredients 12

1 tablespoon vegetable oil
1/4 lb lean pork, in small cubes
1/2 cup chopped onion (1/2 medium onion)
1 cup corn, freshly scraped from ear is preferred (1 ear fresh corn)
1 poblano chile, seeded and thinly sliced (for spicier use greener poblanos, for sweeter use red-ish poblanos)
1 cup thinly sliced zucchini (1 small zucchini)
3 tablespoons tomato puree
1 quart chicken stock
1 ripe avocado, peeled, seeded, and diced
1/4 cup grated parmesan cheese
salt, to taste
fresh cilantro stem, for garnish

Steps:

  • In a large saucepan, heat the oil, then add the pork and sauté over medium heat, stirring frequently, until browned, about 7 minutes.
  • Add the chopped onion, corn, poblano chile, zucchini, tomato puree, and the chicken stock.
  • Simmer until vegetables are tender, about 20 minutes.
  • Add the avocado and Parmesan cheese, stir to incorporate, then season with salt to taste, and garnish with cilantro springs and serve immediately.

VINCENT PRICE'S CHICKEN SWEET AND HOT

Vincent Price's Chicken Sweet and Hot image

Mwa-ha-ha-ha! Vincent Price actually was a world class gourmet cook. In 1965, with his wife Mary, he authored "A Treasury of Great Recipes", published by Grosset & Dunlap; the cookbook is still renowned as a masterpiece. Also, Price was the son of a candy manufacturer and the grandson of the inventor of baking powder. This chicken dish was featured either in an advertisement or magazine/newspaper; it is delicious! My preparation notations are in parentheses; FYI, I didn't particularly find it spicy "hot" at all; add more Tabasco if you think you'd like this dish hotter. Enjoy!

Time 4h30m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 fryer chicken, quartered
1/2 cup butter
1/4 cup Worcestershire sauce
1 clove garlic, minced
1/2 cup red currant jelly (I couldn't find; I used black currant jelly)
1 tablespoon Dijon mustard
1 cup orange juice
1 teaspoon powdered ginger (I don't care for ginger; I used a couple dashes of allspice)
3 dashes Tabasco sauce (but if you're expecting this to be "hot", I'd add more...)

Steps:

  • Combine all of the above ingredients, except chicken, in a pan.
  • Heat gently, stirring until jelly is blended and sauce is smooth (it doesn't really thicken a lot, just a little bit).
  • Cool.
  • Pour sauce over 1 quartered chicken and marinate for 2 or 3 hours (I had a change of plans the day I prepared the marinade; mine marinated overnight).
  • Cover and cook in preheated moderate oven (I used 350 degrees F for the first 40 minutes, then raised it to 375 degrees F).
  • Uncover, increase oven temperature to hot (I raised it to 425 degrees F) and baste frequently until chicken is an even dark brown.
  • (Before I put the chicken in at the higher temperature, I used a large spoon to take out some of the marinade/basting sauce; it seemed to make a lot to me-- I left just enough in the dish to use for basting, but not so little that it would burn at the high) Serve with rice.
