2 cups (half and half)
6 tbsp (coarse ground medium roast coffee)
⅔ cup sugar
1 cup cream (whipping cream, or double cream)
1 tsp vanilla
4 egg yolks
2 whole eggs
Pinch of salt
1 cup sugar
¼ cup water
2 tbsp corn syrup

Steps:

  • Preheat oven to 350°F/180°C and have a baking tray (large enough to hold eight 4-ounce ramekins) and hot water ready.
  • Lightly grease the ramekins with butter or oil.

1 cup sugar
1 cup water
5 eggs
1 can (14 ounces) sweetened condensed milk
1 can (12 ounces) evaporated milk
1-1/2 teaspoons vanilla extract

Steps:

  • In a large heavy saucepan over medium heat, combine sugar and water. Cook, stirring occasionally, until sugar begins to melt. Using a pastry brush dipped in cold water, wash down the sides of the pan to eliminate sugar crystals. Cook, without stirring, until amber brown, about 25 minutes., Quickly pour into an ungreased 9-in. round baking pan, tilting to coat bottom of pan. Place pan in a large baking pan; let stand for 10 minutes., Meanwhile, preheat oven to 325°. In a blender, combine eggs, condensed milk, evaporated milk, and vanilla. Cover and process 1 minute or until well blended. Slowly pour into prepared baking pan., Add 1 in. of hot water to larger pan. Bake, uncovered, 35-40 minutes or until center is just set (mixture will jiggle). Remove baking pan from water bath; cool 1 hour. Cover and refrigerate overnight., To serve flan, run a knife around edge of pan; quickly invert onto a rimmed serving dish.

1/2 cup sugar
2 tablespoons water
6 large eggs
1 can (14 ounces) sweetened condensed milk
1 can (12 ounces) evaporated milk
2 tablespoons instant coffee granules
1 tablespoon warm water
1 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • In a clear, microwave-safe bowl, combine water and sugar. Stir well under sugar is completely dissolved.
  • Microwave on high for about 4 to 5 minutes or until color changes to honey-gold. Immediately pour into llaneras or ramekins and swirl to coat the bottom.
  • In a bowl, gently whisk eggs until there are no streaks of white.
  • Add condensed milk and stir until combined.
  • Add evaporated milk and stir until well-combined.
  • Using a fine-mesh sieve or cheesecloth, strain the custard mixture.
  • In a small bowl, combine coffee granules and warm water. Stir until coffee is completely dissolved and let cool completely.
  • Add dissolved coffee, vanilla extract, and salt to the strained custard and stir until blended.
  • Pour into prepared ramekins. Cover ramekins with foil and arrange in a wide, oven-safe dish with about 1-inch of water (water bath).
  • Bake in a 375 F oven for about 40 to 50 minutes or until a toothpick inserted in the middle of the custard comes out clean.
  • Remove from oven, allow to cool, and refrigerate to set.
  • To serve, turn flan over on a serving plate, ending with caramel on top.

3/4 cup sugar
1 (14-oz) can sweetened condensed milk (1 1/4 cups)
3 3/4 cups whole milk
5 large eggs
4 1/2 teaspoons instant-coffee granules dissolved in 4 teaspoons hot water
1 teaspoon vanilla
1/8 teaspoon salt

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Cook sugar in a dry small heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar melts into a deep golden caramel. Immediately pour into a 9-inch round ceramic or glass baking dish or metal cake pan (2 inches deep) and tilt dish to coat bottom (use caution, dish will be hot). Cool until hardened, 10 to 15 minutes.
  • Blend remaining ingredients in a blender, in 2 batches if your blender is small, until smooth. Pour custard through a fine-mesh sieve over caramel in dish, then transfer dish to a 17- by 11-inch roasting pan lined with a kitchen towel. Cover dish loosely with a piece of foil, then pour enough boiling-hot water into roasting pan to reach 1 inch up side of dish. Bake until custard is set but still wobbly in center when gently shaken and a knife inserted in center comes out clean, 1 to 1 1/4 hours. Transfer dish to a rack to cool completely, about 40 minutes. Chill flan, covered, until cold, at least 8 hours.
  • To unmold flan, run a thin knife around edge of dish to loosen flan. Invert a large platter with a lip over dish. Holding dish and platter securely together, quickly invert and turn out flan onto platter. Caramel will pour out over and around flan.

1 cup sugar
1 1/2 cups heavy cream
1 1/2 cups whole milk
1 vanilla bean, split
4 large eggs
1/4 teaspoon kosher salt

Steps:

  • Put 1/2 cup of the sugar in a small saucepan over medium heat and cook until it begins to melt and turns brown around the edges. Pull the melted sugar around the edges toward the center of the un-melted sugar with a heatproof rubber spatula. Continue cooking, pulling the melted sugar, until all the sugar is melted and the caramel is uniformly dark amber (it should smell caramelly but not burnt), 10 to 12 minutes total. (If you still have undissolved lumps of sugar, stir it off heat until melted.) Pour the caramel into 8-by-2-inch deep cake pan in an even layer, 1/8 to 1/4 inch deep. Let the caramel cool; it will crack as it cools and that's ok.
  • Bring the cream, milk and vanilla bean to a simmer in a medium saucepan over medium-high heat. Remove from the heat and steep for 30 minutes.
  • Arrange a rack in the middle of the oven and preheat to 350 degrees F. Bring a large pot of water to a boil.
  • Put the eggs, salt and the remaining 1/2 cup sugar in a blender and puree on low speed until smooth and the sugar is dissolved, about 1 minute.
  • Strain the cream mixture into the egg mixture and blend at low speed to combine, discarding any solids. Skim the foam off the top and transfer to the prepared baking dish. Remove any remaining foam from the top and cover the dish tightly with foil.
  • Line a roasting pan with a clean kitchen towel; this will keep the baking dish from sliding and it will insulate the flan, preventing it from overcooking. Set the baking dish on a towel and pour boiling water into the roasting pan until it comes halfway up the sides of the baking dish; the flan should not be floating. Bake the flan until it looks set like gelatin(it will wobble when gently shaken), 35 to 45 minutes. Transfer to a wire rack, remove the foil and let cool. Cover the dish with plastic and refrigerate until set and cold, at least 3 hours and up to 24.
  • When ready to serve, run a paring knife around the edges of the flan to loosen. Invert it onto a platter. Serve cold. The flan can be made 1 day ahead. Cover and chill. Unmold and serve.

  • remove from heat and let sit for 10 minutes.
  • Bring milk and half& half to a heat where whisps of steam is just rising from the top.
  • Strain coffee liquid through a coffee filter into a cup and then add 3/4 of a cup to the milk mixture and heat through.
  • In a separate bowl whisk together eggs, sugar, and salt.
  • Slowly add milk mixture to the bowl with the eggs, while whisking steadily.
  • Pour 1 tbsp of caramel into 6 buttered 6 oz.
  • ramekins, then pour mixture into the ramekins, and put into a large high-walled pan.
  • fill pan with water and bake at 325 for 1 hour, then increase heat to 375 for an additional 20 minutes.
  • Remove ramekins from oven and pan and refrigerate for at least 4 hours.
  • Use a flexible knife to remove from ramekins and flip over onto small plates for serving.
