Steps:
- Butter muffin tins and coat lightly with flour to make 12 large muffins, or line the tins with fluted paper inserts. Preheat oven to 350 degrees.
- Beat eggs until light, gradually adding the sugar. Beat in the oil and stir in the apples and zucchini.
- Sift flour, cinnamon, baking soda, baking powder and salt together and fold into the batter. Stir in vanilla and nuts.
- Spoon the batter into the muffin tins, filling the tins about two-thirds of the way full, and bake 35 to 40 minutes, until a cake tester comes out clean.

TONY'S TIGER BITES
This recipe is a lot like making Rice Krispie Treats. It is nice to have a little change once in awhile! I found this recipe at the Kelloggs website, but since it is not posted here, I thought that it would be nice to have it here as well! (I made sure that I included the registered trademark symbol. :) To change it a little, you can omit the peanut butter, and they will be like rice krispy bar, except not!

Steps:
- In a large saucepan, melt the marshmallows and butter on low or medium heat, stirring frequently.
- Stir in the peanut butter until the mixture is smooth.
- Add the frosted flakes cereal, stirring until well coated (You must do this fast!) Using a spatula (buttered if you want), or waxed paper, press the mixture into a 13x9x2 inch pan (a standard cake pan works fine) coated with cooking spray.
- Cut into bars when cool.
- Enjoy!

- Stir together cereal, flour, sugar, baking powder, and salt. Set aside.
- In a large mixing bowl, stir together egg, milk, and oil.
- Add cereal mixture, stirring until just moistened.
- Drizzle melted chocolate over batter.
- With a knife, swirl chocolate through batter. Do not overmix.
- Divide batter into 12 greased muffin tins.
- Bake at 400 degrees for 20 minutes or until lightly browned.
