TOMATO AND RED ONION FLATBREAD
Flatbreads make great appetizers or light meals, and this delicious recipe comes together easily with Pillsbury refrigerated classic pizza crust.

Steps:
- Heat oven to 400°F. Line cookie sheet with cooking parchment paper. Unroll dough on cookie sheet; brush with 1 tablespoon of the olive oil. Bake 8 minutes.
- Remove from oven. Spread cheese spread over partially baked crust. Sprinkle with Asiago cheese. Arrange tomatoes and onion over cheese. Sprinkle salt over tomatoes; sprinkle pepper over entire flatbread.
- Bake 10 minutes longer or until cheese is melted. Remove from oven. Top with basil; drizzle with remaining tablespoon olive oil.

- Press 12 ounces pizza dough into an 8-by-12-inch rectangle on a floured parchment-lined inverted baking sheet. Rub with 2 tablespoons olive oil, then top with 1/2 cup shredded cheddar and 1/2 thinly sliced red onion. TOMATO ONION FLATBREAD PIZZA

- Preheat the oven to 425 degrees F.
- If using uncooked dough, roll the dough out 1/4-inch thin. Sprinkle with a small amount of salt and pepper and transfer to a baking screen. Precook the dough until crispy, 12 minutes.
- To build the pizza, drizzle the crust with the oil. Next, arrange the tomatoes to cover the dough, followed by the onions and cheese.
- Bake on the screen on the center rack until the cheese melts, 6 to 7 minutes. Let cool for 2 minutes, then slice and serve.

- Preheat oven to 450 degrees, with a pizza stone or baking sheet (or an inverted rimmed baking sheet) on lowest rack.
- Sprinkle yeast and sugar over warm water in a large bowl. Let stand until foamy, about 5 minutes. Stir in flour, coarse salt, and oil. Transfer dough to a lightly floured work surface. Knead, dusting hands and surface with more flour as needed, until smooth and elastic, about 5 minutes. Shape into a ball.
- Transfer to a large oiled bowl, turning to coat. Cover and let rise in a warm spot until doubled in bulk, about 45 minutes.
- Punch down dough and form into a ball, then turn out onto a lightly floured surface. Divide into 2 pieces. Gently stretch each into a rough 16-by-6-inch oval and place on a parchment-lined baking sheet (or an inverted rimmed baking sheet). Divide onion between ovals, leaving a 1-inch border; lightly press into dough. Let rise, 10 minutes. Drizzle with oil and sprinkle with flaky salt.
- Transfer ovals on parchment onto preheated pizza stone or baking sheet. Bake until crust is golden and crisp, 15 to 20 minutes. Serve warm.
ROASTED TOMATOES & RED ONIONS
Try a mix of smallish tomatoes such as baby plum, cherry and pomodorino. This recipe works well as a side for eggy and cheesy dishes!

- Put the onion in the middle of a large square of double thickness foil. Fold up the sides of the foil to make a baking tray. Scatter the tomatoes on top of the onion and drizzle 3 tbsp olive oil over. Add the garlic and thyme and season. Put the foil on a rack on the barbecue and cook for about 15 mins, or until the onions and the tomatoes are tender. If you are using an oven, put everything into a roasting tray and cook at 220C / fan 200C / gas 7 for 20 mins. Serve with herb omelettes.

SUN-DRIED TOMATO AND ONION BREAD

Steps:
- Sift flour and salt into a large bowl.
- In a small bowl, dissolve yeast and sugar in warm water.
- Let stand 5-10 minutes until frothy.
- Stir 3 tbsp olive oil into yeast mixture.
- Using a wooden spoon, gradually stir yeast mixture into flour to give a soft, but not sticky, dough.
- Knead on a lightly flour surfgace 5 minutes until smooth and elastic.
- Put dough into an oiled medium-size bowl.
- Cover and let rise in a warm place 35-40 minutes until doubled in size.
- Oil a baking sheet.
- Heat remaining 1 tbsp olive oil in a skillet, add onion and garlic.
- Cook 3 minutes until softened.
- Remove skillet from heat and set aside.
- turn out dough onto a lightly floured surface and cut in half.
- Roll out to give 2 rectangles each about 12 x 9.
- Transfer 1 piece to the baking sheet and prick surface with fork.
- Spread cooked onion mixture over pricked dough, leaving a 1/2 inch boarder around the edge.
- Arrange sun-dried tomatoes and basil leaves over onion and season with the ground pepper.
- Moisten edges of the dough with a little cold water and cover with second sheet of dough.
- Crimp edges to seal.
- Using a sharp knife make a lattice pattern on surface of dough.
- Brush with a little milk to glaze and sprinkle with coarse sea salt.
- Let rise 20 minutes.
- Preheat oven to 450.
- Bake loaf in preheated oven about 25 minutes until golden-brown and underside is firm and lightly colored.
- Serve warm or cold.
- Cut into pieces and garnish with basil.

- Put the flour and salt in a large mixing bowl. Dissolve the yeast in 300ml warm water and then pour onto the flour and stir in. Once all the water is incorporated, add the olive oil and bring the dough together. Transfer to a clean surface (lightly floured, if needed) and knead for 5-10 minutes until you have an elastic, smooth dough. Put it back in the bowl, cover with a cloth and set aside to prove for an hour.
- Meanwhile, make the tomato sauce. Heat the oil in a pan with the garlic and cook gently for a few minutes until pale golden. Add the tomatoes and sugar, bring to the boil and simmer for 15-20 minutes, stirring occasionally, until you have a thick sauce. Season; set aside to cool.
- Divide the dough into six and, on a floured surface, roll out each piece into thin discs. Cover with a cloth as they are ready, while you prepare the rest.
- Brush the sunflower oil on the hot barbecue rack, then place a few flatbreads directly on it for a few minutes, until golden and bubbles start to form. Turn them over, smear with a layer of the tomato sauce and scatter with onion. When the underside is golden, remove from the heat and repeat with the remaining discs. Sprinkle with parsley and chilli flakes. Serve with feta and olives.
