3/4 tablespoon margarine, melted
1 cup pumpkin seeds

Steps:

  • Preheat oven to 350°F.
  • Wipe fibers from pumpkin seeds but do not wash them.
  • Coat seeds with mixture of oil and margarine.
  • Spread seeds on a baking sheet.
  • Sprinkle with coarse salt to taste and toast for 30 minutes or until they are crisp and golden.

2 tablespoons vegetable oil
1 tablespoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Spread the pumpkin seeds on a medium baking sheet. Drizzle with oil. Sprinkle with salt.
  • Bake 45 minutes in the preheated oven, stirring occasionally, until lightly toasted.

Our family has found these to be addictive! They are even better warm! The only down side is pepitas can be difficult to find here in the midwest. We can only find these at our local organic/natural food store.

2 cups pepitas (green hulled pumpkin seeds)
2 teaspoons olive oil
1 teaspoon kosher salt
1/2 teaspoon chili powder

Steps:

  • Combine all ingredients.
  • Roast in shallow pan at 350°F for 1/2 hour stirring at least once. They can be roasted longer for a toastier flavor.
  • Cool on paper towels.

  • Transfer seeds to cooking sheet, and bake for about 15-25 minutes (or until seeds are cooked and begin to lightly brown). Remove trays every 10 minutes to stir the seeds and check for doneness. Let cool and serve.
