Deliciously thin and crispy oatmeal raisin cookies that will vanish in minutes!

Categories     cookies     Dessert     sweets

Time 35m

Number Of Ingredients 13

1/2 cup 1 stick unsalted butter, room temperature
1 cup packed dark-brown sugar
1/4 teaspoon salt
1 large egg
1 teaspoon pure vanilla extract
1/4 cup water
3/4 cup all-purpose flour
2 cups quick-cooking oatmeal (not instant)
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon freshly ground nutmeg
1/2 cup raisins (you can also replace raisins with dried cranberries)

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside.
  • In a large bowl, using a spatula, cream together butter, sugar, and salt. Add egg, vanilla, and 1/4 cup water; mix until well combined.
  • In another large bowl, mix together flour, oatmeal, cinnamon, baking powder, baking soda, and nutmeg. Fold into the butter mixture until well combined. Add raisins and stir until well combined.
  • Using a scoop (such as an ice cream scoop or a measuring spoon), scoop out cookie dough onto prepared baking sheets, about 1 1/2 to 2 inches apart. I then use a small spatula or the back of the spoon to spread the dough, making the cookie thin!
  • Transfer the baking sheets to the oven and bake for 20 minutes. I like to set the timer to 10 minutes and switch the baking sheets positions in the oven. NOTE: if you want it chewy, lessen the baking time and make thicker cookies.
  • Once done, let the cookies cool on baking sheet on top of a wire rack. Remove cookies using a thin (cake) spatula.

THIN AND CRISPY OATMEAL RAISIN COOKIES

Thin and Crispy Oatmeal Raisin Cookies image

I tried to combine recipes to come up with a cookie that tastes like Tate's Bake Shop cookies. The published Tate's recipe on YouTube does not taste like the cookies you buy in the store in the green bag. This is the closest I've come to simulating the oatmeal raisin flavor. This is not a thick cakey cookie but a thin, crisp, lighter version.

A friend gave me the recipe for these cookies many years ago, and they're as delicious as the ones Mom used to make. The secret to the recipe is to measure exactly (no guessing on the amounts) and to not overbake. -Wendy Coalwell, Abbeville, Georgia

Number Of Ingredients 15

2 tablespoons rum
2/3 cup raisins
8 tablespoons unsalted butter, at room temperature
1/4 cup applesauce (unsweetened)
3/4 cup dark brown sugar (firmly packed)
3/4 cup granulated sugar
1/2 teaspoon salt
1 large egg
1 large egg white
1/4 cup milk
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
2 cups oats (not instant)

Steps:

  • 1. Set the oven rack in the middle position. Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper or spray with nonstick cooking spray; set aside.
  • 2. Sprinkle the whiskey or rum over the raisins in a bowl and let stand while you assemble the batter.
  • 3. Using a handheld or standing mixer, beat the butter, applesauce, brown sugar, granulated sugar and salt on medium-high speed until light and fluffy, 2 to 3 minutes, scraping down the sides of the bowl halfway through. Beat in the egg and egg white, milk and vanilla.
  • 4. In a medium bowl, whisk together the flour, baking soda and cinnamon, add to the batter, and beat just until the flour is absorbed. Gently fold in the oats with a rubber scraper.
  • 5. Use 2 spoons to scoop out the batter by rounded teaspoonfuls onto the prepared baking sheets, 1 1/2 inches apart. Bake until the cookies are set but still soft in the centers and beginning to brown on the edges, 17 to 20 minutes. (You can make larger cookies using a disher for desired size. My recipe actually only made about 20 cookies.).
  • 6. Let cool on a wire rack.

Provided by Food Network Kitchen

Time 40m

Yield 1 dozen cookies

Number Of Ingredients 11

1 1/4 cups rolled oats
3/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1 stick unsalted butter, softened
3/4 cup sugar
2 tablespoons molasses
1 large egg
1 teaspoon vanilla extract
1 cup raisins

Steps:

  • Combine the oats, flour, cinnamon, baking powder and salt in a large bowl. Beat the butter, sugar and molasses in a large bowl with a mixer on medium-high speed until fluffy, about 5 minutes. Beat in the egg and vanilla until smooth, about 2 more minutes. Reduce the mixer speed to low, add the flour mixture and beat until combined. Stir in the raisins by hand. For the best flavor and texture, cover the dough and chill at least 4 hours, or overnight.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Form the dough into 12 balls, about 2 tablespoonfuls each, and arrange 3 inches apart on the prepared baking sheets. Flatten with the back of a fork. Bake until the cookies are golden, 15 to 17 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

OATMEAL-RAISIN COOKIE THINS

Oatmeal-Raisin Cookie Thins image

The edges of these little guys may brown before the center, but don't panic; that's what makes them so delicious--a crunchy edge and soft center (and under 100 calories for two). They are best eaten within a day or two--although they won't last that long!

Categories     dessert

Time 50m

Yield About 36 cookies

Number Of Ingredients 12

Nonstick cooking spray, for greasing
1 cup rolled oats
1/4 cup whole wheat flour
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
1/3 cup vegetable oil
1/3 cup packed light brown sugar
1/4 cup pure maple syrup
3 tablespoons finely chopped raisins
1 teaspoon pure vanilla extract
1 large egg white
Turbinado sugar, for sprinkling, optional

Steps:

  • Position the oven racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line three baking sheets with parchment paper and lightly coat with cooking spray. Combine the oats, flour, cinnamon and salt in a food processor and pulse until the oats are finely chopped.
  • Combine the oil, sugar and maple syrup in a medium saucepan over medium-low heat and cook, stirring, until the sugar dissolves, 2 to 3 minutes. Remove from the heat and stir in the oat mixture, raisins and vanilla. Let the mixture cool slightly. Stir in the egg white.
  • Drop teaspoonfuls of batter about 2 inches apart on the prepared baking sheets. Sprinkle with the turbinado sugar if using. Bake until golden brown (the edges of the cookies will be a deeper golden brown), rotating the sheets about halfway through, 10 to 12 minutes. Let cool on the baking sheets for a few minutes, and then transfer to a rack to cool completely.
