Bacon wrapped scallops are drenched in a quick and easy butter garlic sauce then baked to seafood perfection! These scallops are the perfect appetizer or main meal.

Number Of Ingredients 8

12-14 large sea scallops
12-14 slices bacon
toothpicks or small skewers
1/4 cup salted butter (melted)
1 tablespoon minced garlic
2 teaspoon dried parsley flakes
freshly ground black pepper
flaked sea salt

Steps:

  • Preheat your oven to 425°F. Place the toothpicks/skewers in a bowl and pour boiling hot water over them and let them soak while you prepare the scallops.
  • Pat the scallops dry with a paper towel.
  • Place the bacon on a microwave-safe plate and cook for 3-4 minutes, until the fat starts to render and cook out. This will help make the bacon crisp by the time you are done baking them in the oven. IF you want very crispy bacon, precook it a lot!
  • Wrap a scallop in a slice of bacon around the edges then secure with a toothpick. Repeat with remaining scallops.,
  • Arrange the scallops in a single layer on a large baking sheet with space between each one.
  • Combine the garlic butter sauce and brush/drizzle over all of the scallops on the baking sheet, making sure that each scallop has minced garlic on top.
  • Bake 15-17 minutes until the scallops are 125/130°, are tender and opaque and the bacon is cooked through. Serve hot.

Bacon Wrapped Scallops are an impressive seafood dish that are surprisingly quick and easy to create. Skip the crowded restaurant this Valentine's Day and make your own gourmet low-carb and keto feast at home!

9 oz. bacon (or 10 strips)
1 lb. scallops (large, about 10-12 count/pound)
2 Tbsp. butter (melted)
1 clove garlic (crushed)
2 tsp. coconut sugar (or brown sugar, optional)
¼ tsp. salt (to taste)
Pinch of black pepper (to taste)
1-2 Tbsp. avocado oil (or other high-smoke point oil)

Steps:

  • Cook bacon over medium to medium-low heat in a large skillet for 10-12 minutes. The bacon should be almost cooked through but still pliable.
  • Remove the bacon from the skillet and let drain on a paper-towel lined plate.
  • Prepare scallops by removing the tough tendons, or side muscles, and patting dry.
  • Wrap one piece of bacon around each scallop. Secure the strip of bacon with a toothpick.
  • Whisk together butter, garlic, sugar, salt, and pepper in a small bowl.
  • In a large, clean skillet over medium to medium-low heat add 1 tablespoon of a high smoke point oil.
  • Cook wrapped scallops for 3-4 minutes per side, or until the internal temperature reaches 120 degrees.
  • Brush the butter garlic sauce on top during the last 1-2 minutes of cooking.
  • Remove scallops from the skillet and let rest for 5 minutes. Once the temperature reaches 130 degrees they are ready to be served.
  • Serve scallops with a sprinkle of fresh parsley and lemon wedges. Enjoy!

12 slices applewood smoked bacon or other thick-cut bacon
12 (U-10 size) sea scallops
2 tablespoons Essence, recipe follows
1/2 teaspoon salt
12 (6-inch) bamboo skewers, soaked in warm water for about 30 minutes
Freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Place the bacon strips on the parchment paper and bake until just beginning to get golden around the edges but still very pliable, 12 to 15 minutes. Remove from the oven and set aside until cool enough to handle.
  • Preheat a grill to medium-high heat.
  • Season the scallops on all sides with the Essence and salt. Wrap each scallop in 1 piece of the bacon, securing it through the center with a bamboo skewer. Repeat with the remaining scallops.
  • When the grill is hot, brush the grates lightly with oil, then place the scallops on the grill and cook, turning frequently, until just cooked through about 7 minutes total. Transfer to a platter and sprinkle with freshly ground black pepper to taste. Garnish each scallop with a dab of the butter and serve immediately.

  • Wrap each scallop in a piece of bacon. Melt butter and olive oil in a pan then sauté garlic, parsley, lemon juice, and wine for 30 seconds before adding scallops. Add scallops and sauté until browned on both side and bacon is cooked. Remove and drizzle remaining liquid over top.

1/2 pound thin-sliced bacon
Extra-virgin olive oil
Sea salt and freshly ground black pepper
1 cup good quality mayonnaise
1/4 cup hot chili paste (recommended: Sriracha Hot Chili Paste)
1 lime, juiced
2 tablespoons chopped cilantro, plus more for garnish
2 heads Bibb lettuce, washed
3 avocados, sliced

Steps:

  • Heat the broiler. Wrap each scallop in a piece of bacon and secure it with a toothpick. Place the bacon wrapped scallops onto a baking sheet, drizzle them with olive oil, and season them with salt and pepper. Cook them under the broiler for about 10 to 15 minutes until the bacon is cooked through, turning once.
  • Make the spicy mayo by combining the mayonnaise, chili paste, lime juice, and chopped cilantro. Stir well and refrigerate until ready to use.
  • To serve, carefully peel away the lettuce leaves and line a large platter with the lettuce cups. Top each with a bacon wrapped scallop, 2 slices of avocado, and a spoonful of spicy mayonnaise. Garnish with cilantro leaves.

4 slices bacon, diced
1 lb scallops
kosher salt & freshly ground black pepper, to taste
1/2 cup unsalted butter
3 garlic cloves, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy about 6-8 minutes. Drain excess fat; reserving 1 tablespoon in the skillet. Transfer bacon to a paper towel-lined plate.
  • Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry. Season scallops with salt and pepper, to taste. Working in batches, add scallops to the skillet in a single layer and cook, flipping once, until golden brown and translucent in the center, about 1-2 minutes per side. Set aside and keep warm.
  • Melt butter in the skillet. Add garlic, oregano, basil and red pepper flakes season with salt and pepper, to taste. Cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in bacon and scallops.
  • Serve immediately, garnished with parsley, if desired.

3 tablespoons butter
1 tablespoon minced garlic
1/3 cup chicken broth

Steps:

  • Cut bacon strips in half.
  • Wrap a piece of bacon around each scallop; secure with toothpick.
  • Arrange the wrapped scallops on a baking sheet.
  • Broil 5 inches from heat for 3 minutes per side, or until bacon is crisp.
