¼ cup butter
1 cup heavy cream
1 clove garlic, crushed
1 ½ cups freshly grated Parmesan cheese
¼ cup chopped fresh parsley

Steps:

  • Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.

I made this after having an obsession with the Olive Garden's sauce. And all I can say is this is truly better then there. My Family and everyone I have made it for is amazing. I am constantly handing this out. Serve with Chicken or seafood, pasta and veggies and garlic bread...you will not be disappointed!

2 cups heavy cream
1/2 cup butter
2 tablespoons garlic
1 cup parmesan cheese
1 teaspoon pepper

Steps:

  • Pour cream into a sauce pan.
  • add butter, garlic, Parmesan cheese and pepper.
  • Bring to a slight boil for 1 minute. Turn on minimum and simmer for 1/2 hour, stirring occasionally to let the flavors mix. Enjoy!

This is my personal alfredo recipe that I've been tweaking for 20 years. It is the best alfredo I've ever tasted and it's restaurant quality all the way. You'll be surprised how easy it is to make something that tastes so good. It's NOT diet food but well worth the occasional indulgence! This recipe makes enough sauce for a 4 layer, 13x9 white lasagna (about 5 cups of sauce). If you're using no-boil lasagna noodles, add an extra half cup of milk and a half cup of cream. If you're using the sauce for something like shrimp or chicken alfredo and you're using a pound of pasta, cut this recipe in half.

2 cups heavy cream
2 cups milk (I use 1%)
1 (8 ounce) package light cream cheese
1/2 cup regular butter
3/4 teaspoon black pepper (use 1/4 tsp if you make a half recipe)
1 tablespoon granulated garlic powder
1 1/2 cups grated romano cheese (you can use parmesan but up it to 2 cups because it's not as strong tasting)

Steps:

  • Add all the ingredients EXCEPT the cheese to a heavy bottom sauce pan. Cook over medium heat until it's smooth, very hot and steaming but DON'T boil it. Whisk (or stir) the sauce pretty much the whole time. It'll take about 8-10 minutes. Don't rush it or turn the heat up too high because you don't want to curdle the cream.
  • When everything is nice and smooth and hot, add the cheese and whisk until the sauce is smooth and hot again but don't let it boil, about 5 more minutes. At this point, the sauce should be thick, delicious and ready to use.
  • It will keep in the frig for about a week but the taste and texture is best when it's made fresh. So if you don't need a big batch, cut this recipe in half.

This recipe is my personal Alfredo sauce recipe which I derived from my time working in a restaurant kitchen. It's thicker than most and doesn't separate a whole lot when reheating. When stored in the fridge it tends to solidify but reheating is done easily in both the microwave or a saucepan. It's great for dipping or serving over pasta. As far as the cheese goes I prefer the Sargento Artisan Parmesan to other brands for the flavor it gives. I do not recommend unsalted butter or margarine for this recipe. If the sauce is too thin for your liking simply add more cheese, to thick add more cream or some milk. I sometimes will add a teaspoon or so of minced garlic. Mixing in steamed broccoli and cooked chicken makes a nice touch too.

  • In a medium to large sized saucepan melt the butter over medium heat.

1 tablespoon butter
3 cups heavy whipping cream
salt
3/4 cup grated parmesan cheese
3/4 cup grated romano cheese
3 egg yolks
1/4 cup grated parmesan cheese
2 tablespoons grated parmesan cheese

Steps:

  • Melt butter or margarine in a sauce pan over medium heat.
  • Add heavy cream, stirring constantly.
  • Stir in salt, grated Parmesan cheese, and grated Romano cheese.
  • Stir constantly until melted, then mix in egg yolk.
  • Simmer over medium low heat for 3 to 5 minutes.
  • Garnish with additional grated Parmesan cheese, if desired.

1 dozen medium sized prawns, peeled and deveined
2 teaspoons cooking oil
2 garlic cloves, finely chopped
1/2 cup butter
1 (8 ounce) package of room tempurature cream cheese (light works great too)
1 cup whipping cream
1/2 cup parmesan cheese, grated
2 small garlic cloves, finely chopped
1 teaspoon salt
pepper
your favorite pasta

Steps:

  • Shrimp: Heat oil in a medium sauce pan over medium/high heat.
  • Add garlic and shrimp.
  • Toss in pan until shrimp are red in color, or for about 8-10 minutes.
  • Turn off heat, and place over to the side.
  • Sauce: Melt butter in a sauce pan over medium heat.
  • Add the cream cheese in by the spoon full, taking care to whisk as you go along.
  • Slowly add in the cream, and whisk until creamy.
  • Add in the rest of the ingredients, and continue whisking until cheese is melted.
  • Turn down heat to low, and just before serving over your favorite pasta, throw in your garlic shrimp, and mix all together!
  • Enjoy.
