THE REALTOR'S GARLICKY POTATOES AU GRATIN
This is one of my favorite recipes for potatoes au gratin. I make this is an enameled cast iron casserole so I can make the sauce and bake the potatoes all in the same pan. If you don't have one of those, just make the sauce, stir in the potatoes and then pour the mixture into a buttered 2 or 3 qt. casserole dish.

Steps:
- Heat oven to 350*.
- In casserole, melt 1/4 cup butter, stir in flour, salt and minced garlic.
- Add milk and cook until mixture boils and thickens, whisking constantly.
- Stir in cheeses until sauce is smooth.
- Add potatoes,stir until thoroughly combined.
- Mix the breadcrumbs with the melted 1 tablespoons butter and sprinkle evenly over the top.
- Bake uncovered 1 1/2 to 2 hours until bubbly on top.

- Preheat oven to 350F.
- Add all the ingredients to a large bowl and stir to combine. Spread in a 9x13 baking dish.
- Bake for 1 hour.
- Turn the oven to broil on low. Broil for 1 minute or until the top starts to brown. Keep an eye on it because it will burn easily!
- Remove from oven and serve hot.

These potatoes are yummy, rich and decadent! They are not diet friendly but boy are they worth the extra calories! They're a nice change when you want something different than the same old mashed potatoes. This recipes makes alot so if you need less, it's easily cut in half. You can make these a day or 2 ahead and refrigerate until ready to use.

Steps:
- Boil potatoes until tender, about 20-30 minutes. Mash while hot.
- Stir in butter and cream chesse.
- Add remaining ingredients and stir to combine.
- Serve immediately or spread in a 13x9 casserole and refrigerate until ready to use.
- An hour before serving, remove from refrigerator, set on counter for 30 minutes or so.
- Bake, uncovered at for 30 minutes or so to heat through.

- Place potatoes in a pot; add cold water until potatoes are covered by 1 inch. Bring to a boil; reduce heat. Simmer until potatoes are softened, about 10 minutes; drain. Cool until easily handled, 10 to 15 minutes.
- Shred potatoes into thin strips with a box grater; drain excess water. Place shredded potato into a large mixing bowl. Stir parsley, flour, salt, seasoned pepper, and onion powder into the potatoes until combined. Shape potato mixture into potato nuggets.
- Heat peanut oil in a deep-fryer or large stockpot to 350 degrees F (175 degrees C).
- Place potato nuggets in the fryer, 5 to 10 at a time. Cook until golden brown and crispy, 3 to 4 minutes. Transfer to a paper towel lined plate.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. - Place the potatoes in a large saucepan and add cold water to cover by at least 1 inch. Add a good pinch of salt and bring to a boil. Reduce the heat to medium, partially cover, and cook until the potatoes are very tender, 12 to 15 minutes. Drain the potatoes and return them to the pan over medium heat. Cook, shaking the pan and stirring so the potatoes don't stick, for 1 to 2 minutes, or until the potatoes are floury and have formed a film on the bottom of the pan.
- Remove from the heat and break up the potatoes with a handheld mixer on low speed. Gradually drop in 6 tablespoons of the butter and beat until it is absorbed. Refrigerate the remaining 2 tablespoons butter. Gradually add the cream cheese and sour cream, beating well after each addition. Beat in the milk a little at a time. You want the potatoes to be fluffy and light. If they seem to be getting too wet, don't add all the milk. Season with salt and pepper to taste. (If you don't have an electric mixer, use a hand masher to start and then use a wooden spoon to beat in the butter, cream cheese, sour cream, and milk. Beat the milk into the potatoes one third at a time, beating vigorously after each addition.)
- Butter a 9-x-13-inch baking dish and spoon the potatoes into it. Smooth the top, then use a spatula or fork to swirl or score the surface to leave little peaks that will brown nicely during baking. Refrigerate, covered tightly with plastic wrap, for up to 2 days before baking.
- Preheat the oven to 350 degrees.
- Dust the top of the potatoes with paprika. Cut the remaining 2 tablespoons butter into small pieces and scatter them over the top. Bake until the potatoes are heated through and the top is lightly golden, about 1 hour. (Expect it to take only half the time if the potatoes haven't been refrigerated.) Serve hot.
