THANKSGIVING PUMPKIN CRUNCH CAKE DESSERT
My family will give up a pumpkin pie for this! ---- two teaspoons of pumpkin pie spice may be used in place of the cinnamon, nutmeg and allspice --- I have made this using both the white and yellow cake mix I have to say that the yellow is better to use.

Steps:
- Set oven 350 degrees F.
- Grease a 13 x 9-inch baking pan.
- In a bowl combine the pumpkin puree, evaporated milk, eggs, sugar, cinnamon, nutmeg, allspice and salt; mix until well combined.
- Pour into prepared baking pan.
- Sprinkle the cake mix evenly over the top of the pumpkin mixture.
- Sprinkle the chopped nuts over the cake mix.
- Drizzle the melted butter or margarine evenly over the top.
- Bake for about 55-60 minutes (do not bake more than 80 minutes).
- Cool completely, then pipe the whipped cream over the top of the cooled cake.

- Preheat the oven to 350°F (177°C) and grease a 9×13 inch baking pan. I always use this glass pan.
- Whisk the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice together in a large bowl. Set aside. Whisk the oil, eggs, brown sugar, granulated sugar, pumpkin, and vanilla extract together until combined. Pour the wet ingredients into the dry ingredients and use a mixer or whisk until completely combined. Batter will be thick.
- Spread batter into the prepared pan. Bake for 30-36 minutes. Baking times vary, so keep an eye on yours. The cake is done when a toothpick inserted in the center comes out clean. If you find the top or edges of the cake is/are browning too quickly in the oven, loosely cover it with aluminum foil.
- Remove the cake from the oven and set the entire pan on a wire rack. Allow to cool completely. After about 45 minutes, I usually place the cake in the refrigerator to speed things up.

- In a bowl, you will add your graham cracker crumbs, butter, and granulated sugar. Mix until crumbly like sand. Then press the crust into an aluminum foil-lined 8x8 pan. Press down with a cup or something firm to pack it in.
- Now in a new bowl add your cream cheese, powdered sugar, and vanilla extract. Whip it up until nice and creamy. Then spread on top of the graham cracker crust.
- Next in a new bowl add your half and half and vanilla pudding. Whip until it begins to thicken. Then add in your pumpkin spice, pumpkin puree, and mix. Then once well-mixed fold in 1/2 cup cool whip. Then top the cheesecake layer.
- Now add on your 2 cups cool whip. Cover and then place in the fridge covered for at least 4 hours.
