- In a large saucepan, cover sweet potatoes with water; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until tender. Drain and cool. , Peel the potatoes and place in a large bowl; mash. Add the pineapple, 2 tablespoons butter, salt and pepper; mix well. , Transfer to a greased 2-qt. baking dish. Combine saltines, brown sugar, cloves and remaining butter; sprinkle over potatoes. Bake, uncovered, at 375° for 30 minutes.

- Preheat oven to 350°. Place sweet potatoes, mango and onion in a single layer in 2 foil-lined 15x10x1-in. baking pans. Spritz with cooking spray; sprinkle with chili powder, salt and pepper. Bake, turning vegetables at least twice, until tender, 35-40 minutes; cool. Transfer to a large serving bowl., Combine Miracle Whip, yogurt, pineapple juice concentrate and serrano peppers. Fold into potato mixture. Refrigerate, covered, at least 1 hour. Serve cold. If desired, sprinkle with sliced serrano.

- In a large bowl, with an electric mixer, mix the sweet potatoes, sugar, vanilla, cinnamon and orange zest.
- Transfer mixture to a casserole dish.

- 1. In a large sauce pan, cover sweet potatoes with water; bring to a boil. reduce heat; cover and simmer for 30 min. (or until tender). Drain and cool.
- 2. Pre-heat oven to 375 degrees. Peel the potatoes and place in a mixing bowl; mash. Add the pineapple, 2 tablespoons Butter, salt and pepper; mix well.

- Once boiling, add potatoes, cover and heat to boiling.

Steps:
- 1. Drain sweet potatoes and put in 5-6 qt crock pot (save juice).
- 2. Drain mixed tropical fruit and mandarin oranges and put in crock pot (save juice).
- 3. In sauce pan add sweet potato OR fruit juices, add pecans, brown sugar, spices, and tabasco.
- 4. Heat mixture until brown sugar dissolves and add to crock pot.
- 5. Cook on High setting for 2 hours.
- 6. Cover top with miniature marshmallows.
- 7. Remove stoneware crock from appliance, remove lid, place in 350 degree oven until marshmallows are lightly browned.
