SWEET SPICED APPLE BUTTER
A delicious and easy Crock Pot apple butter recipe with a flavor profile reminiscent of the mulled drinks we go crazy for in the fall.

Steps:
- Wash and quarter the apples.
- In a medium saucepan over medium heat, mix the orange juice, cloves, allspice, and cinnamon stick.
- Add the apples, and bring to a boil. Turn heat to medium-low, cover, and allow to simmer for 30-45 minutes, until apples are softened all the way through.
- Remove mixture from heat, and let it cool for a bit so you don't burn yourself when processing. Process the mixture through your food mill, or push it through the sieve, which will leave the leftover peels, seeds, and spices behind.
- Pour the apple mixture into your Crock Pot. Prop the lid so that the steam can escape - this is important, because the apple butter needs to cook down. You can use knives, chopsticks, what have you to prop the lid.

- Heat on high for an hour, then reduce the heat to low, and cook on low for 8-10 hours, stirring occasionally (but it shouldn't be the end of the world if you don't, unless your Crock Pot runs really hot - you just don't want it to burn on the bottom).
- The Apple Butter will cook down to a nice, smooth consistency and take on a delicious brown color.

- Stir in sugar, and cook on low for another 1/2 hour or so. You may need a little more or a little less depending on how sweet your apples are.
- Pour it into jars and enjoy! SPICED APPLE BUTTER
If you've only experienced store-bought apple butter, this homemade version will blow you away. The recipe, from Kaley Laird, the executive pastry chef at Asheville, North Carolina's James Beard Award-nominated restaurant Benne on Eagle, requires just five ingredients (including apples) and requires little effort beyond occasional stirring and getting out your blender. But you'll be rewarded with a not-too-sweet, deeply flavored spread that you can enjoy on your morning biscuit or toast, swirl into a bowl of oatmeal, or use as a topping for Laird's decadent Parsnip-Buttermilk Tart. Like most apple butter recipes, this one contains apples, brown sugar, and cinnamon. But Laird's secret ingredient is ¼ cup of bourbon, which cooks down along with the apples and adds a subtle kick and depth of flavor. If you'd rather skip the alcohol, substitute 2 tablespoons of vanilla extract. Once the apples have cooked down, the mixture is processed until completely smooth in a blender. If you prefer apple butter that has a little more texture, you can leave it on the chunkier side. The recipe makes 4 cups of apple butter, and it can be stored in an airtight container in the refrigerator for up to a month-although we're pretty sure it won't last that long.

- Stir together all ingredients and 1 ½ cups water in a large saucepan or Dutch oven. Bring to a simmer over medium-high, stirring occasionally. Reduce heat to low. Cook, stirring occasionally, until apples break down and become very soft, 1 hour, 45 minutes to 2 hours. Remove from heat; cool 10 minutes.
- Transfer mixture to a blender. Secure lid on blender, and remove center piece to allow steam to escape. Place a clean towel over opening. Process until smooth, 1 minute. Store in an airtight container in refrigerator up to 1 month.
REDUCED SUGAR SPICED APPLE BUTTER
I was tired of finding apple butter recipes with more sugar than apples, so I adapted a few and perfected it. This recipe makes the house smell fantastic and tastes like fall. Enjoy! If you do not have an immersion blender: allow cooked apples to cool, transfer to a regular blender, and blend until smooth. Taste and adjust the flavor. If the texture is too liquidy still, return to slow cooker and allow it to reduce for about another hour more. This recipe is really about adjusting to your taste. If you like a lighter color, cook it less. If you want it highly spiced, throw on the cloves, etc. This recipe freezes well.

- Prep apples as directed, combine in slow cooker with apple juice (or cider), brown sugar and spices, cook overnight and into the next day if you can, stirring occasionally - 18 hours or so is optimal. You want the mixture to reduce down significantly. Once the apples are to more or less applesauce consistency, apply an immersion blender to puree the mixture to a velvety texture or put it through a food mill. Once the liquid no longer separates quickly after it's stirred, it's ready to jar up and process. Pour into sterilized jars, process in hot water bath for 10-15 minutes.

- Combine Honeycrisp apples, Granny Smith apples, and apple cider in a large stainless steel or enamel-coated saucepan; bring to a boil, stirring occasionally. Reduce heat to medium-low; simmer until mixture reduces by about half, about 20 minutes.
- Stir sugar and lemon juice into the apple mixture; bring to a boil. Reduce heat to medium-low, and continue cooking at a simmer until the mixture is very thick, about 25 minutes.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apple butter into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

- 1. Cut McIntosh apples into 1-inch (2.5 cm) pieces. Cut Granny Smith apples into smaller dice.
- 2. Combine apples and cider in a very large stainless steel or enamel saucepan. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat and boil gently for 20 minutes or until mixture is reduced by half.
- 3. Stir in sugar and lemon juice. Return to a boil, reduce heat, and boil gently for about 25 minutes or until mixture is very thick. There should still be some tender apple chunks remaining. Remove from heat.
