SCALLOPED POTATOES AND HAM
Short on time? I've included directions to help cut down on baking time. This involves cooking the potato mixture over medium-high heat for about 5 minutes to begin the cooking process. This helps reduce the baking time.

- Preheat oven to 375F. Peel potatoes. Using a mandoline or food processor, slice the potatoes very thin.
- In a large mixing bowl, whisk together 1/2 cup cream and flour, until there are no lumps. Continue whisking in the remaining cream and milk. Add salt.
- Place potatoes, onions, and cream mixture in a large heavy saucepan. Turn on heat to medium-high, and cook, stirring gently and occasionally, for about 5 minutes, until mixture comes to a simmer.
- Stir in ham. Pour mixture into a large casserole dish. Bake for about 50 minutes, until top begins to brown. Remove from oven and cool for a few minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Layer half the potatoes, half the ham, and half the onion in an 2-quart baking dish; repeat the layers.
- Heat milk, peas, flour, butter, salt, black pepper, garlic powder, and onion powder in a saucepan over medium heat, stirring constantly, until thickened, 7 to 10 minutes.
- Stir Cheddar cheese into sauce until cheese is melted.
- Pour sauce over potato and ham mixture; sprinkle with paprika.
- Cover baking dish with aluminum foil.
- Bake in the preheated oven until potatoes are tender, about 1 hour.
- Remove foil and continue baking until lightly browned, about 15 minutes more.

- Heat oven to 450°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In large bowl, place both packages of potatoes and sauce mix (from scalloped potatoes boxes), the ham and frozen peas; pour boiling water and whipping cream over mixture, and stir. Stir in 1 tablespoon of the chives. Pour mixture into baking dish; spread evenly.

- Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 20-25 minutes or until partially cooked. Drain and cool potatoes. Peel and cut into 1/4-in. slices. Spread in greased 3-qt. baking dish. , Preheat oven to 350°. In large saucepan, melt butter. Stir in flour until smooth; add broth. Bring to a boil. - Preheat oven to 450°F. Grease an 18- x 13-inch rimmed baking sheet with 1 tablespoon of the butter.
- Melt remaining 3 tablespoons butter in a saucepan over medium. Add garlic; cook, stirring often, until fragrant, about 1 minute. Whisk in flour; cook, whisking constantly, 1 minute. Whisk in cream, and cook, stirring constantly, until slightly thickened, about 3 minutes. Remove from heat; add 2 cups of the cheese, and stir in pepper and 2 teaspoons of the salt. Stir until cheese melts and sauce is smooth; stir in peas.
- Spread half of potato slices and half of ham on prepared baking sheet. Spread half of cheese sauce over potatoes and ham. Repeat layers once with remaining potatoes, ham, and cheese sauce. Cover baking sheet with aluminum foil, and bake in preheated oven until potatoes are tender, about 40 minutes.
- Stir together panko, thyme, and remaining 3/4 cup cheese in a small bowl. Remove foil, and sprinkle panko topping over potato mixture. Return to oven, and bake at 450°F until panko topping is golden brown, 20 to 25 minutes.
