SPRING ROLL RECIPE

Recipe video above. Everybody's favourite Spring Rolls, made at home! Nothing like the ones at suburban Chinese takeout joints with unidentifiable mushy fillings and overly greasy. These are shatteringly crisp and golden, just like they should be, and you will actually be able to taste the filling!

Number Of Ingredients 20

1 tbsp oil
2 garlic cloves (, finely chopped or minced)
400 g / 13 oz pork mince ((ground pork), or chicken or turkey)
6 dried shiitake mushrooms soaked in boiling water OR 8 fresh ((Note 1))
1 1/2 cups shredded carrot ((1 large or 2 small))
1 1/2 cups (heaped) bean sprouts
1 1/2 cups (packed) shredded green cabbage ((any type is fine))
1 tsp cornflour / cornstarch
1 1/2 tbsp Oyster Sauce
2 tsp soy sauce ((light or all purpose is best, dark is also ok))
15 - 20 spring roll wrappers, defrosted (21.5 cm / 8" squares) OR 35 - 40 small spring roll wrappers (Note 2), or Egg Roll wrappers to make Egg Rolls (Note 6)
2 tsp cornflour (for sealing rolls)
1 tbsp water (for sealing rolls)
Oil for frying (I use vegetable) OR oil spray for baking (I use canola)
2 tsp cornflour/ cornstarch
2 tbsp water
½ cup apple cider vinegar
1/3 cup brown sugar ((adjust to taste))
2 tbsp tomato ketchup
2 tsp soy sauce

Steps:

  • Heat oil in a skillet or wok over high heat. Add garlic, stir quickly, then add pork. Cook, breaking it up as you go, until it turns white.
  • Add carrot, bean sprouts, cabbage and mushrooms. Cook for 3 minutes or until vegetables are wilted. Add cornflour, soy sauce and Oyster sauce, cook for 1 minute until the liquid is gone. The Filling should not be watery, it should be kind of sticky (watery filling = soggy spring rolls = ? ).
  • Cool Filling (super speedy: spread on tray, refrigerate 5 minutes). (Hot filling = spring rolls burst open = ? )
  • Mix cornflour and water in a small bowl (for sealing the rolls).
  • Carefully peel off one spring roll wrapper, keep the others covered under a damp tea towel.
  • Place the wrapper with the SMOOTH SIDE DOWN (Note 3) in a diamond position. Place a very heaped dessert spoon of filling on the bottom. Roll up halfway, fold sides in, then finish rolling. Use cornflour sludge to seal. (Watch VIDEO below). They should be about 12 cm / 5" long, 2.5cm / 1" wide once wrapped.
  • Pour enough oil in a wok or large saucepan (Note 4) so it is double the height of the spring rolls. Heat on medium high until hot - stick a bamboo chopstick or wooden spoon handle in, if rapid bubbles appear, then it's hot enough.
  • Carefully place spring rolls in the oil (about 4 - 5 at a time) and cook, turning occasionally, until deep golden - around 1 1/2 - 2 minutes. Transfer to paper towels to drain.
  • Repeat with remaining spring rolls. Serve while hot with Sweet and Sour Sauce!
  • Place spring rolls on a rack and place the rack on a tray. Spray very generously with oil all over (use canola or other natural oil). Bake at 200C/400F (standard) or 180C/350F (fan / convection) for 20 to 25 minutes until golden and crispy - no need to turn.
  • Combine ingredients in a small saucepan over medium heat. Bring to simmer, stirring regularly, then simmer until it thickens to taste (about 3 - 5 minutes).

These spring rolls -- with a filling of chicken, apple, green onion, bell peppers, and lettuce -- are broiled until they are lightly browned and crispy. They're ideal for a buffet or light lunch.

1 small fresh red chili pepper, minced
3 cloves garlic, minced
2 teaspoons minced fresh ginger
1 tablespoon cooking wine
3 tablespoons orange juice
1 tablespoon low-sodium soy sauce
1/2 pound skinless chicken breast sliced into thin strips
1 tablespoon canola oil
1 large apple peeled, cored, and cut into thin strips
4 green onions, green part only, cut into short, thin slivers
1 small red bell pepper, seeded and cut into thin strips
1 tablespoon seasoned rice vinegar
1 1/2 teaspoons sesame oil
12 8-inch round dried rice-paper wrappers
1 head Boston or Bibb lettuce, leaves separated and washed
Sweet-and-Sour Chili Sauce, for serving

Steps:

  • Combine chili pepper, garlic, ginger, wine, orange juice, and soy sauce in a medium bowl. Add chicken and toss to coat. Cover and marinate for 15 minutes. Drain excess liquid.
  • In a small pan, heat canola oil and saute chicken until light brown outside and no longer pink inside, about 2 minutes. Combine apple, green onions, bell pepper, rice vinegar, and sesame oil in a medium bowl; toss to coat. Mix in cooked chicken.
  • Fill a medium bowl with warm water. Dip one of the wrappers in the water for 15 seconds, or until softened. Carefully transfer it to a dry work surface. Arrange 2 to 3 tablespoons of the filling in an even horizontal mound just below the center of the wrapper. Roll up the rice paper to form a tight cylinder, folding in the sides about halfway. Assemble the remaining spring rolls the same way.
  • Coat the large baking sheet with cooking oil. Arrange spring rolls in a single layer, leaving a little space between them. Brush rolls with oil. Broil the rolls until lightly browned and crisp, 8 to 10 minutes; check frequently to avoid burning. Use a spatula to turn the rolls over and continue to broil another 8 to 10 minutes. Serve each roll wrapped in lettuce leaf, with Sweet and Sour Chili Sauce.

1 green bell pepper, seeded and halved
1 red bell pepper, seeded and halved
1 yellow bell pepper, seeded and halved
1 tablespoon canola oil, or as needed
2 Roma (plum) tomatoes, chopped
⅓ cup chopped green onions
¼ cup fresh chopped cilantro
1 jalapeno pepper, minced
2 cloves garlic, minced
1 lime, juiced
½ teaspoon salt

Steps:

  • Set an oven rack about 4 inches from the heat source and preheat the oven's broiler.
  • Place bell peppers on a broiler pan, cut-side-down. Brush with canola oil.
  • Broil in the preheated oven until charred, 5 to 8 minutes.
  • Transfer peppers to a bowl and cover with plastic wrap for 5 minutes. Peel off and discard skin and chop peppers.
  • Combine chopped peppers, Roma tomatoes, green onions, cilantro, jalapeno, garlic, and lime juice in a blender. Puree until smooth. Refrigerate salsa at least 1 hour before serving.

These amazing, homemade Fresh Spring Rolls are healthy, easy to make, and are packed full of fresh vegetables.

8 rice paper sheets
8 large basil leaves (or cilantro)
6 large butter lettuce leaves
1 cup shredded carrots
1 red bell pepper (sliced thin)
¼ head red cabbage (shredded)
1 medium english cucumber (sliced into thin, 2-3" long matchsticks)
¼ cup green onion (sliced thin)

Steps:

  • Soften the Rice Paper: Submerge one sheet of rice paper at a time for 5 seconds to soften. Remove it and set aside for 10-15 seconds.
  • Assemble the Wrap: On the lower middle section of the rice paper wrap, place the ingredients. First, a basil leaf, a few pieces of lettuce and cucumber, carrots and bell pepper, some shredded cabbage, and some green onion.
  • Roll the Wraps: Bring up the smaller end of the rice paper to wrap tightly over the vegetables. Next, bring the sides of rice paper over. Roll tightly until you get to the end of rice paper wrapper. Repeat with remaining ingredients.
  • Serve: Serve with peanut sauce.

1 small red bell pepper, seeded, chopped

1 1/2 teaspoons chopped peeled fresh ginger
1 teaspoon soy sauce
4 7-ounce packages prepared frozen spring rolls
Large radiccio leaves

Steps:

  • Combine first 8 ingredients in bowl.(Can be made 2 hours ahead. Chill.)
  • Prepare spring rolls according to package instructions. Set radiccio leaves in center of platter. Fill with salsa. Cut spring rolls in half and place on platter. Serve, allowing diners to spoon salsa into cut end of spring rolls.

One 12-ounce jar of roasted red peppers, drained
1 clove garlic
1 jalapeno, seeded and chopped
1/2 small red onion, chopped
Juice of 1 lime (about 2 tablespoons)
Kosher salt

  • In this order, put the cilantro, roasted red pepper, garlic, jalapeno, onion, lime juice and 1/2 teaspoon salt in a blender. Pulse until broken down but still chunky, scraping the inside of the carafe as necessary.

BELL PEPPER SALSA

Not having a recipe for salsa (and having peppers that needed to be used), this was my 'making it up as i go' attempt that turned out well. Using a blender makes this super quick and easy to throw together. With the habanero I used, the salsa came out with a bit of a bite! This of course can change depending on your peppers, but if you'd like it tamer, I'm sure a jalapeno could be used instead. The flavour of the garlic is pronounced, so adjust to suit your tastes. The tequila isn't needed, but I like what it adds to the salsa. Goes well with cornmeal pancakes.

1/3 onion, chopped and divided
1 habanero pepper, stem removed
3 roma tomatoes (I used canned)

2 tablespoons lime juice

1 fluid ounce tequila (optional)
1 pinch dried basil
1 pinch sea salt (or to taste)
1 dash fresh ground black pepper

Steps:

  • Set aside half the chopped onion and two thirds to three quarters of the chopped bell peppers.
  • Put remaining onion and pepper into your blender or food processor. Add all other ingredients and blend until smooth.
  • Mix your reserved onion and pepper into the puree.

1 carrot, shredded
2 ounces crabmeat
3 ounces bean sprouts
2 pinches ground black pepper
1 tablespoon soy sauce
3 tablespoons fish sauce
1 clove garlic, chopped
20 rice wrappers (6.5 inch diameter)
1 quart oil for deep frying

Steps:

  • Soak the vermicelli 30 minutes in warm water; drain.
  • In a large bowl, mix the vermicelli, eggs, onion, mushrooms, shrimp, pork, vegetable oil, carrot, crabmeat, bean sprouts, pepper, soy sauce, fish sauce and garlic.
  • One by one, moisten the rice wrappers with a damp tea towel and fill with 2 to 3 tablespoons of the vermicelli mixture. Roll the wrappers, and allow them to set for 30 minutes.
  • In a large saucepan, heat the oil to 375 degrees F (190 degrees C).
  • Fry the spring rolls one or two at a time until golden brown, about 3 minutes. Drain on paper towels.

  • Place one rice paper in the water and let it rest for about twenty seconds. You’ll learn to go by feel here—wait until the sheet is pliable but not super floppy. Carefully lay it flat on the towel.
  • Leaving about an inch of open rice paper around the edge, cover the lower third of the paper with about 1/2 cup chopped arugula. Top with four slices of mango down the length of the greens, followed by several slices of bell pepper and jalapeño, and finally, a sprinkle of green onions.
