JAVA-SPICE RUB FOR PORK



Java-Spice Rub for Pork image

Ground coffee is the secret ingredient in this special rub, which could also be used on beef steaks. -Mark Morgan, Waterford, Wisconsin

Number Of Ingredients 11

1 tablespoon finely ground coffee
1 teaspoon kosher salt
1 teaspoon brown sugar
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon pepper
1/4 teaspoon garlic powder
ADDITIONAL INGREDIENTS (for each batch):
1 pork tenderloin (1 pound)
1 tablespoon canola oil

Steps:

  • In a small bowl, combine the first eight ingredients. Transfer to a small spice jar. Store in a cool, dry place for up to 2 months. Yield: 3 batches (3 tablespoons total)., To prepare pork tenderloin: Brush pork with oil; rub with 1 tablespoon seasoning mix. Cover and refrigerate at least 2 hours or overnight., Prepare grill for indirect heat. Grill pork, covered, over indirect medium-hot heat for 25-30 minutes or until a thermometer reads 160°. Let stand for 5 minutes before slicing.

A wonderful rub for beef. Especially for quality steaks. I have given this as Christmas gifts. Either in 1/4 or 1/3 cup jars each.

Number Of Ingredients 10

6 tablespoons fine ground espresso coffee
2 tablespoons kosher salt
2 tablespoons light brown sugar
2 tablespoons spanish sweet paprika (or smoky)
2 teaspoons fresh coarse ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon unsweetened cocoa powder (quality cocoa)

Steps:

  • Combine all ingredients.
  • Store in an airtight jar away from heat and light.
  • Will keep up to 6 months.
  • Use 2-3 teaspoons per pound of meat.
  • For extra flavor, toast whole peppercorns, cumin & coriander seeds then grind them yourself.

This is the exact recipe we used at a local steakhouse where I worked for 15 years. It is great on pretty much any meat. You will probably want to use the conversion tool to make smaller batches. However, it will hold for a long time so if you like it make a nice big batch.

1 lb onion powder (sifted)
1 lb garlic salt
1 lb celery salt
1 lb paprika (sifted)
1 lb black pepper
1 lb sugar
1/2 lb nutmeg

Steps:

  • Mix well using a commercial mixer with a wire whisk if possible.
  • This makes enough for 1 week in a 200 seat steakhouse.

¼ cup fennel seed
1 ½ tablespoons coriander seed
½ tablespoon whole black peppercorns
1 pinch salt, or to taste

Steps:

  • Cook and stir fennel seed, coriander seed, and peppercorns in a skillet over medium heat until lightly browned and fragrant, 1 to 3 minutes. Remove from heat and let cool briefly.
  • Combine fennel seed mixture and salt in a food processor and blend to a fine powder.
