MELTING POTATOES

4 russet potatoes
Kosher salt and freshly cracked black pepper
2 tablespoons vegetable oil
10 tablespoons unsalted butter
1 cup low-sodium chicken broth
2 sprigs fresh rosemary
2 cloves garlic
Flaky salt, to garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel the potatoes and slice off the ends. Cut into 1-inch slices. Season both sides of the potatoes generously with kosher salt and pepper.
  • Heat a cast-iron skillet (or other heavy-duty, ovenproof skillet) over medium-high heat. Add the oil and 4 tablespoons of the butter. Sear the potatoes on one side until golden brown, about 4 minutes. Flip the potatoes and add the broth, rosemary and garlic. Cut the remaining 6 tablespoons butter into cubes and scatter on top of the potatoes. Transfer the skillet to the oven and cook until fork-tender, about 30 minutes. Garnish with flaky salt and spoon the pan sauce all over the potatoes.

Kathy's Duchess Potato Puffs With Cheese image

This recipe is great for leftover mashed potatoes. From the recipe collection of Bird's sister Kathy. I have also made it using instant mashed potatoes.

2 cups mashed potatoes (leftovers with no skins in the mash)
1 teaspoon garlic powder
1/2 teaspoon paprika (plus more to garnish)
salt, to taste
black pepper, to taste
2 eggs
1/2 cup grated cheddar cheese (or parmesan)

Steps:

  • Mix all ingredients well. Cover and refrigerate for at least a few hours (up to 2 days). Note: if using leftover mashed potatoes, do this the evening you make them fresh, and then refrigerate the mixture.
  • Preheat oven to 375°F Using a piping bag with a large decorative tip (or cut the tip from the bottom of a Ziploc bag), pipe approximately 1/4 cup each of the mixture onto a parchment lined baking sheet 1 inch apart.
  • Spray rosettes with non-stick cooking spray and sprinkle with a bit more paprika. Bake for 18-20 minutes or until heated through.

My now-deceased uncle used to make these when I was a little girl. He lived with us and loved to cook. My Moms' friends would come to visit and they would beg him to make them for a snack! I have made them for years and they are a family favorite with just about any dish. I vary them sometimes by adding shredded cheeses or even Velveeta. I guess you could call them a variation of scallopped potatoes but we just like to call them 'mushy'!!

6 potatoes, peeled and thinly sliced
1 1/2 cups water
salt and pepper
1 cup heavy whipping cream
1/2 cup shredded cheddar cheese (optional)

Steps:

  • Add the peeled and sliced potatoes to a large skillet and add the water. Bring to boiling and stir the potatoes to prevent sticking until fork tender. (I try to make them al dente like pasta) You may have to add more water, play this by ear and just eyeball it. Once the potatoes are tender and most of the water has evaporated add the cream, salt and pepper and continue to heat until thickened and creamy. If you are adding cheese add it with the cream.
  • ( sometimes it is necessary to add more cream if the potatoes look dry -- remember they are supposed to be creamy and 'mushy').

POTATO-KASHA KNISHES

1 1/2 cups all-purpose flour, plus more for dusting
3 tablespoons extra-virgin olive oil, plus more for brushing
Kosher salt
1/4 cup plus 2 tablespoons cold seltzer
2 teaspoons apple cider vinegar
1 1/2 pounds russet potatoes, peeled and quartered
Kosher salt
4 tablespoons extra-virgin olive oil
1 1/2 pounds Spanish onions, diced
1 clove garlic, smashed
1 cup whole or coarse kasha (roasted buckwheat groats; available in the bulk aisle or near the dried beans)
Freshly ground pepper
Spicy mustard, for serving

Steps:

  • Start with our step-by-step knish how-to.
  • Make the dough: Put the flour in a food processor, then pulse as you pour the olive oil through the feed tube. Scrape down the sides of the processor and pulse again.
  • Dissolve 1 teaspoon salt in the seltzer and vinegar in a liquid measuring cup. Pulse as you pour the liquid through the feed tube, 20 to 30 seconds. Turn the dough out onto a floured surface and knead until smooth. Flatten into an even disk, wrap in plastic wrap and refrigerate at least 2 hours.
  • Make the filling: Put the potatoes in a saucepan, cover with water and season with salt. Simmer until tender, 20 to 30 minutes. Drain and coarsely mash in a large bowl.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the onions, garlic and 1 teaspoon salt. Cover and cook about 5 minutes; uncover and cook, stirring, until browned, 15 to 20 more minutes.
  • Meanwhile, combine the remaining 2 tablespoons olive oil and the kasha in a small saucepan over medium-high heat and cook until toasted, about 4 minutes. Add 1 3/4 cups water and 1 teaspoon salt. Reduce the heat to medium, cover and cook until the water is absorbed, about 10 minutes. Season with salt and pepper. Cool slightly, then add to the bowl with the potatoes. Add the onions and mash.
  • Remove the dough from the refrigerator 30 minutes before making the knishes. Preheat the oven to 375 degrees F; lightly brush a baking sheet with olive oil.
  • Make the knishes; place 2 inches apart on the baking sheet. Bake 30 minutes; brush with olive oil and continue baking until golden, 25 to 35 more minutes. Serve with mustard.

CHEESY HASSELBACK POTATOES

4 tablespoons unsalted butter
1/4 cup olive oil
6 cloves garlic, minced or finely diced
6 medium Yukon potatoes, scrubbed and dried
Kosher salt and ground black pepper
1/2 cup shredded Parmesan

Steps:

  • Preheat the oven to 450 degrees F and line a baking sheet with foil.
  • In a small saucepot, bring the butter, oil and garlic to a boil over high heat; remove from the heat.
  • Using 2 wooden spoons placed on each side of a potato as a guide, cut the potato into thin slices about 1/8 to 1/4 inch thick, without cutting through the bottom (the spoons will keep you from cutting all the way through the potato). Repeat with the remaining potatoes. Place the potatoes on the prepared baking sheet and brush each potato with some of the butter mixture, trying to get the butter between the slices. Sprinkle each potato with salt and pepper.
  • Bake for 30 minutes, then remove the potatoes from the oven. The potatoes will have started to spread out from cooking and it will be easier to brush each slice with some more of the butter mixture. Put the potatoes back in the oven for an additional 20 minutes.
  • Remove the potatoes from the oven again and sprinkle the Parmesan over the top and into the slices. Return to the oven to melt and brown the cheese, an additional 5 minutes. Serve the potatoes immediately.

KATHY'S NO POTATO BEEF STEW

This is a recipe I concocted when I was trying to cut down on my carb intake. I don't watch my carbs as closely anymore, but I don't add the taters either. With all the other veggies and flavors mingled together, you'll never miss them! Update 11/14/12: Many slow cookers run differently, so judge the length and temp accordingly.

1 lb lean stewing beef (seasoned and broiled til lighlty browned)
1/2 onion, chopped
1 -2 stalk celery, chopped
1/2 butternut squash, chopped into small pieces
2 turnips, chopped
1/2 lb fresh green beans, cut into thirds
1/2 lb baby carrots, sliced lengthwise
1 cup frozen peas
1 (28 ounce) can crushed tomatoes
1 (1 1/4 ounce) envelope dry onion soup mix
2 tablespoons Worcestershire sauce
2 bay leaves
1/2 cup pearl barley

Steps:

  • Mix all of the above ingredients into a large crock pot.
  • Cook on high for 4-5 hours or low for 8 hours.
  • Remove bay leaves before serving.

KATHY'S CHEESE POTATO SOUP

10 medium potatoes, cubed
1 pkg (dry) ranch dressing
1 lb Kraft Velveeta Cheese
1/2 stick margarine
1/2 teaspoon salt
2 tablespoons flour
1 cup milk

Steps:

  • In large pot, boil potatoes until almost tender. (Do not overcook.)
  • Mix in ranch dressing, Velveeta, margarine & salt. Bring to boil.
  • Mix flour & milk in jar with lid. Vigorously shake until no lumps. Gradually pour flour/milk mixture in soup to thicken, stirring constantly. When soup is the thickness you like, stop pouring. Continue cooking about 1 minute. Remove from heat.

Kathy's Scalloped Potatoes With Ham image

Here is another use for leftover ham and the other ingredients I always have on hand. I like this recipe because it has a hint of thyme in it. There are also directions here in the description if you wish to freeze it. If you want to bake it at 325 degrees instead of at 375 degrees notice my directions (you know how sometimes you want a certain oven temperature to orchestrate your menu-lol). If you want to freeze this start the recipe differently by cutting the potatoes in half and then parboiling them for 10 minutes. Drain, cover with cold water and allow potatoes to cool. Slice potatoes and assemble recipe as directed. Don't bake yet if freezing. Cover well with plastic wrap and foil. Label and freeze. Defrost in refrigerate, remove foil and plastic wrap, recover with the foil and then bake. Thank you Chef #128693 for helping me:)

Steps:

  • Preheat oven to 375 degrees.
  • In a saucepan, melt butter.
  • Stir in flour, parsley, salt, thyme, and pepper.
  • Gradually add all of the milk (3C+2T); bring to a boil.
  • Cook and stir for 2 minutes; set pan aside.
  • Combine in a large bowl the potatoes, ham, and onion; place half in a greased 2 1/2 quart baking dish.
  • Top with half of the sauce; put in rest of potato mixture; and then put in last half of the sauce.
  • Cover and bake at 375 degrees for 65 to 75 minutes or until potatoes are almost tender.
  • Bake uncovered, 15-20 minutes longer, or until potatoes are fully cooked.
  • If you need to have an oven at 325 degrees b/c of the rest of the meal, cook 2 hours covered and then 15 minutes uncovered.

KATHY'S POTATO DUMPLINGS (KARTOFFELKLOSSE)

From the recipe collection of Bird's sister Kathy. Kartoffelklösse are traditionally served alongside a Roast with lashings of gravy or with Sauerbraten and Rotkohl. Croutons are traditionally inside the dumplings to soak up any extra moisture inside the Kartoffelklösse while prunes are a common filling when accompanying a roast goose, turkey, or other fowl at Christmas. Leftover potato dumplings can be enjoyed the following day sautéed in the butter.

2 lbs potatoes
kosher salt, to taste
1/4 teaspoon freshly grated nutmeg
1/2 cup flour (more if needed)
1 egg, beaten
12 prunes (or 12 large croutons)
1/2 cup butter, melted (1 stick)
3/4 cup seasoned bread crumbs (or seasoned panko) (optional)

Steps:

  • Scrub and rinse the potatoes well and place in a large saucepan of cold water. Bring the unpeeled potatoes to the boil, add some salt and simmer the potatoes for 35-40 minutes or until just tender.
  • Drain the potatoes and cool them slightly for easy handling. You should be able to peel the skins away from the flesh of the potatoes with your bare hands.
  • Once all the potatoes are peeled, cut them into even-sized pieces and refrigerate until cold (up to overnight).
  • Mash the potatoes in a large bowl. Mix in the salt and freshly grated nutmeg. Add half a cup of flour and mix to combine. With your hands knead the mixture in the bowl until a smooth soft dough forms, add more flour by the tablespoon if the dough remains sticky. Finally, add the beaten egg to the mixture.
  • Using 1/4 cup of dough, form the mixture into balls. Insert a crouton, (or prune) into each dumpling. Sealing the filling closed around the dumpling.
  • In a large saucepan of salted simmering water (not boiling), carefully place the dumplings into the water in batches of 4-5. Do not overcrowd them where they may stick together or touch during cooking, which may cause them to fall apart. Cook the dumplings until the dumplings rise to the surface, about 10-14 minutes.
  • In a wide bowl, add melted butter. Remove dumplings with a slotted spoon or strainer. Shake gently to drain, then toss gently in a bowl of melted butter. Cover with lid and keep warm while cooking the remaining dumplings and add them to the butter as well. Sprinkle entire batch with bread crumbs (if desired) and serve.
