Candy Bar Surprise Cookies Recipe - (4/5) image

1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla
2 eggs
3 cups flour
1 teaspoon baking soda
Pinch of salt
30 About 30 mini chocolate candy bars, unwrapped (Milky Way, Snickers, 3 Musketeers, etc.)

Steps:

  • Preheat oven to 350°F. In a large bowl, cream butter, sugars, and vanilla until smooth. Add eggs, one at a time, beating after each addition. In a separate bowl, combine flour, baking soda, and salt. Add dry ingredients to wet, and stir to combine. Use an ice cream scoop to shape the dough into balls. Take a dough ball in one hand, and flatten it slightly. Place a mini candy bar in the middle of the cookie dough, and carefully fold the dough up and over the candy bar, completely enclosing it in dough. Reshape as needed. Place on an ungreased cookie sheet and repeat with the remaining dough balls and candy bars, placing 12 cookies per baking sheet. Bake for 10-12 minutes until just beginning to turn golden on the edges. Remove from oven, cool on sheet for a few minutes, then transfer to a wire rack to cool. Makes 2 to 2 1/2 dozen cookies.

This is a recipe my aunt gave me a few years ago. She sold these at a bake sale and they were gone in a few minutes. I use lard in the recipe because it makes for a more moist cookie - you can use butter if you prefer but margarine doesn't work in this recipe at all.

1 cup lard
1 cup white sugar
3/4 cup brown sugar
2 1/4 cups flour
2 large eggs
1 teaspoon vanilla extract
1/3 cup cocoa powder
1 teaspoon baking powder
5 Mars bars

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl beat the brown sugar and 3/4 cups of the white sugar with the lard (save the other 1/4 cup of white sugar). Add the eggs and vanilla. Add the cocoa powder and baking powder. Mix in the flour until you have formed the dough.
  • Cut the mars bars into one inch cubes. Take a chunk of the dough and form it into a small cup shape in your hand. Put in a cube of the mars bar and roll the dough around it to form a ball. Roll the ball into the 1/4 cup of white sugar. Place on parchment paper on a baking sheet.
  • Once you have all the cookies formed and on the baking sheet - bake for 12 minutes. Let them cool before you eat them as the melted caramel middle can burn!

3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
1 cup sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla
10 ounces chocolate-covered mint candies, wafer-discs, any mint chocolate candies (sometimes I use Andes mints)
halved walnuts

Steps:

  • Sift together the flour,baking soda and salt.
  • Cream the butter, sugars.
  • Add the eggs, vanilla- beat well.
  • Blend in the dry ingredients.
  • Cover and chill at least two hours or overnight.
  • Take a tablespoon size amount of dough and enclose/conceal mint in dough.
  • Place on ungreased baking sheet.
  • Place walnut half on top.
  • Bake at 375° for 9-12 minutes.

142 ml single cream
8 scoops vanilla ice cream
300 g apricot compote or 300 g tinned apricots
4 amaretti, crushed. (optional)

Steps:

  • In a small saucepan, add Mars bars and cream, and melt together over a low heat, stirring till smooth.
  • Scoop ice cream into dishes and spoon over compote. Pour over sauce and sprinkle with crushed amaretti, if using. Serve immediately.
