SPIRITED APPLE BUTTER



Spirited Apple Butter image

Brown sugar, spices and sweet red wine give this apple spread lots of spirit.

Number Of Ingredients 8

1 can (12 ounces) frozen (thawed) apple juice concentrate
1/2 cup sweet red wine or apple cider
4 pounds cooking apples, peeled, cored and cut into fourths
3/4 cup packed brown sugar
1 cup apple brandy or apple cider
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves

Steps:

  • Heat juice concentrate, wine and apples to boiling in 4-quart Dutch oven; reduce heat to low. Simmer uncovered about 1 hour, stirring occasionally, until apples are very soft. Mash with potato masher if necessary, to remove all lumps.
  • Stir in remaining ingredients. Heat to boiling; reduce heat to low. Simmer uncovered about 2 hours, stirring occasionally, until no liquid separates from pulp.
  • Immediately pour into hot, sterilized jars, leaving 1/4-inch headspace. Wipe rims of jars; seal. Cool on wire rack 1 hour. Store in refrigerator up to 2 months.

6 cups apple cider or juice
8 cinnamon sticks (3 inches)
2 lemon zest strips
1/8 teaspoon ground nutmeg
8 whole cloves
4 slices red apple, cored and cut in half

Steps:

  • In a large saucepan, combine the apple cider, cinnamon sticks, lemon zest and nutmeg. Insert a clove into each apple slice; add to cider., Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 1 minute. Discard lemon zest strip. Ladle into mugs.

4 cups fresh apple cider
4 whole black peppercorns
6 or 7 (2 to 3-inch) cinnamon sticks
3 whole dried cloves
1 star anise
1 navel orange
Good bourbon, such as Maker's Mark (optional)
1 crisp red apple

Steps:

  • Place the apple cider, peppercorns, one of the cinnamon sticks, the cloves, and the star anise in a medium saucepan. Cut a large (1 by 4-inch) peel from the orange using a vegetable peeler and add it to the pan. Bring the cider mixture to a boil, lower the heat, and simmer for 5 minutes. Strain into a 4-cup glass measuring cup and discard the solids.
  • Pour the hot cider into mugs or heatproof glasses. Add 2 tablespoons of bourbon to each mug. Cut the orange in half through the stem, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each mug. Cut the apple in half through the stem, remove the core, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each glass.
  • Serve hot with a cinnamon stick in each glass for stirring.

1 orange
3 tablespoons unsalted butter
1/4 cup firmly packed brown sugar
3 cinnamon sticks
10 whole allspice
10 whole cloves
6 cups apple cider
1/4 cup dark rum
1/2 cup applejack
Additional cinnamon sticks (optional)

Steps:

  • Using vegetable peeler, remove peel (orange part only) in strips from orange. Melt butter in heavy large saucepan over medium heat. Add peel, sugar, 3 cinnamon sticks, allspice and cloves; stir 1 minute. Add cider; bring to simmer. Reduce heat to low; simmer 15 minutes. Mix in rum and applejack. Strain into mugs. Garnish with additional cinnamon sticks, if desired.

10 fl oz spiced rum
cinnamon stick, for garnish

Steps:

  • Add the apple cider, cinnamon sticks, and allspice berries to a slow cooker. Turn the heat setting to high, cover, and warm for 30-60 minutes, or until steaming. Once steaming, reduce the heat setting to warm.
  • Add the apples and rum and stir to combine.
  • Ladle into mugs and garnish with cinnamon sticks.
  • Enjoy!

6 whole allspice
3 cinnamon sticks, each 3 inches, broken
1 tbsp. grated orange rind
2 quarts apple cider
1 cup orange juice
1 cup cranberry juice cocktail
1/2 cup dark rum
1/2 cup apple flavored brandy

Steps:

  • 1. Tie first 4 ingredients in a cheesecloth bag. Mix spice bag and cider in large Dutch oven. Bring to a boil; reduce heat to medium and cook 35 minutes or til mixture is reduced to 4 cups.
  • 2. Discard spice bag. Stir in orange juice and remaining ingredients. Simmer over medium heat til heated. Makes 8 cups.
