PEANUT DIPPING SAUCE
You can serve this healthy peanut sauce recipe as a dip or drizzle over Asian dishes! You can toss this savory peanut sauce with noodles, too. It's good every which way! Recipe yields about 1 2/3 cup sauce.

- In a 2-cup liquid measuring cup or medium-sized mixing bowl, whisk together the ingredients until well blended. If your peanut butter is particularly thick, you may need to use the full 4 tablespoons of water to thin out the mixture (or more, if necessary).
- Feel free to adjust to taste here-for example, sometimes I want my sauce more savory and add another clove of garlic, or a little sweeter, so I add extra honey.
- If you're serving the sauce as a party dip, transfer it to a serving bowl and sprinkle with chopped peanuts and red pepper flakes for some visual interest!

- Preheat a skillet over medium. Add oil hot (it should glisten). Add red curry paste and cook for a few minutes, until nice and aromatic. This is called "blooming" the spices in the paste and will make them more flavorful. Stir so that the paste does not stick for about 3 minutes.
- Add coconut milk and bring mixture to a simmer. Let reduce over low heat until slightly thickened, about 3 more minutes.
- Remove from heat and whisk in peanut butter, vinegar, lime juice, tamari, maple syrup, and grated ginger. Add salt to taste, 1/2 - 2 tsp. Let cool in the fridge (or freezer if you're in a rush) until mixture thickens. To serve, top with red pepper flakes and fresh basil. Plate with fresh vegetables and chips! Dip can be stored in the fridge for 4 days in a sealed container. Best served cold.
SPICY PEANUT-COCONUT DIP
Inspired by the Thai peanut sauces served with meat and vegetable satay, this dip uses coconut cream-rather than the traditional coconut milk-to achieve a thicker, more dippable consistency, perfect for dunking fresh veggies.

- Puree 1/2 cup unsweetened coconut cream, 1/2 cup peanut butter, 2 tablespoons low-sodium soy sauce, 1 tablespoon each sambal oelek (Asian chili sauce), rice vinegar and honey, 2 teaspoons grated ginger and 1/2 teaspoon kosher salt in a blender until smooth. Transfer to a bowl and top with chopped peanuts and cilantro; serve with cucumber and carrot sticks.

- Heat oil in nonstick skillet over medium heat. Add shallot, ginger and garlic; sauté until shallot is tender, about 3 minutes. Add curry powder and crushed red pepper. Stir until aromatic, about 15 seconds. Stir in 1 cup broth, peanut butter, lime juice, soy sauce, and brown sugar; whisk to blend. Simmer until mixture thickens, whisking constantly, about 3 minutes. Season with salt and pepper. Transfer to bowl and cool, whisking occasionally. Cover and refrigerate 2 hours. (Can be made 2 days ahead. Keep refrigerated.) Thin dip with more broth by tablespoonfuls if needed. Serve dip chilled or at room temperature.
CHICKEN SATE WITH SPICY PEANUT DIPPING SAUCE
Steps:
- In a medium sized bowl, whisk together the chicken stock, coconut milk, soy sauce, shallot, garlic, fish sauce, brown sugar, lime zest, and ginger. Add the chicken strips and marinate for 1 hour. Remove the chicken from the marinade and discard the marinade.
- Spray a nonstick grill pan with cooking spray and preheat over a medium-high flame. While pan is heating, thread chicken onto skewers. Grill 2 to 3 minutes per side, until meat is cooked through and has light grill marks.
- Serve chicken skewers with Peanut Dipping Sauce, and garnish with basil or cilantro and chopped peanuts.
- Yield: 4 servings (2 skewers and 2 tablespoons peanut sauce per serving)
- Place all ingredients in blender and blend until smooth.
- Sauce can be made 1 day ahead of time, and will keep 3 to 4 days in the refrigerator.
SPICY PEANUT DIPPING SAUCE
Based on a recipe from Robin Robertson's book, Vegan Planet. The intro to this recipe says, "Serve this delicious and extremely versatile sauce with steamed vegetables or spring rolls, or toss with hot or cold cooked noodles." For a natural sweetener I use agave nectar although any other natural sweetener is fine if not using refined sugar. My husband and I are always in need of a peanut dipping sauce for his awesome homemade rice paper spring rolls. I haven't yet found a store-bought sauce that I'd buy again.

- Combine peanut butter, garlic, tamari, water, vinegar, chili paste, and sugar in small bowl or food processor until well blended. Taste and adjust seasonings accordingly. Add more water to thin the sauce if necessary.

- Stir in cilantro just before serving.
- Stored properly, this sauce keeps for 4 to 5 days.
