- Heat oven to 425°. Cut 3 medium peeled sweet potatoes into 1/4-inch-thick fries. In a bowl, combine 1 tablespoon cornstarch and 1/2 teaspoon jalapeño salt; add fries and toss. Arrange fries on two baking sheets coated with vegetable oil cooking spray; coat with more cooking spray. Bake until fries begin to brown, 10 minutes. Remove from oven and flip; spritz with cooking spray and sprinkle with 1 sliced jalapeño. Bake until golden, 8 minutes.

- Preheat the oven to 425 degrees F (220 degrees C).
- In a plastic bag, combine the sweet potatoes, canola oil, taco seasoning, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets.
- Bake for 30 minutes, or until crispy and brown on one side. Turn the fries over using a spatula, and cook for another 30 minutes, or until they are all crispy on the outside and tender inside. Thinner fries may not take as long.

- Bake fries according to package directions. Meanwhile, in a small bowl, combine the remaining ingredients. Sprinkle over fries; toss to coat.

SPICY HOME FRIES

- Place the potatoes in a large saucepan, cover with cold water and add 1 tablespoon salt. Bring to a boil over high heat and cook until the potatoes fall apart when a fork is inserted, 20 to 25 minutes. Drain well.
- Heat the butter over medium heat in a large saute pan. Add the onion and jalapeno and cook until soft. Add the garlic and cook for 30 seconds. Stir in the ancho chile powder and stir until combined. Add the potatoes, salt and pepper and toss the mixture, slightly mashing the potatoes with a metal spatula. Press the potato mixture into one even layer and cook until golden brown on the bottom. Turn over and gently mash again into an even layer and cook until the bottom is golden brown. Stir in the cilantro and lime zest and transfer to a bowl.

- Preheat oven to 500f degrees.
- Cut potatoes into wedges.
- Place wedges in a bowl with remaining ingredients, toss potatoes until evenly coated.

- Preheat oven to 450°F With aluminum foil or parchment paper, line a cookie sheet.
