BRAISED CHICKPEAS WITH SQUASH

- Preheat the oven to 350˚. Heat the olive oil in a large Dutch oven over medium heat until it shimmers. Add the chopped onion, carrots, celery and a pinch of salt and cook, stirring occasionally, until soft, 10 to 12 minutes. (Alternatively, you can work in a non-ovenproof pot and transfer your mixture to a baking dish when it's time to move it to the oven.)
- Add the cayenne, a few turns of pepper and the garlic to the pot and cook another minute, until fragrant. Add the wine and cook until it's reduced by half, 3 to 4 minutes. Add the squash, tomatoes, broth, chickpeas, rosemary and bay leaves; give everything a stir.
- Cover the pot, transfer to the oven and braise until the chickpeas are soft and the squash is tender, about 2 hours. Discard the bay leaves and rosemary sprigs before serving. Top with parsley, serve with bread and enjoy!
BRAISED BEANS

- Soak the beans in water overnight. Drain, then transfer to a Dutch oven. Add 10 cups water, 2 sage leaves, the smashed garlic and 1 tablespoon salt. Bring to a boil over high heat, then reduce the heat to medium low; cook until the beans are tender, about 1 hour. Drain, reserving the liquid. Discard the garlic and sage.
- Meanwhile, preheat a grill to high or preheat the oven to 475 degrees F.
- Return the beans to the Dutch oven. Add the sliced garlic, olive oil, the remaining 4 sage leaves, the tomato, 1 1/2 cups of the reserved cooking liquid, 1/2 teaspoon salt and 1/4 teaspoon pepper. Place the pot, uncovered, on the grill or in the oven; cook until creamy, 15 to 20 minutes. Add the parsley and more cooking liquid, if necessary. Season with salt and pepper and drizzle with olive oil.
BRAISED ROMANO BEANS WITH SALMORIGLIO
This is a recipe from my Grandma Minnie, who would serve these beans inside of her world famous carrot ring. Romano beans are a unique twist on your typical "mushy" Thanksgiving sides by offering a fresh, Southern-Italian crunch to your plate.

- Beans, part 1: Preheat oven to 400 F. Trim the ends of the tomatoes, then cut the tomatoes in half lengthwise. Toss with 1 tablespoon olive oil and the balsamic vinegar. Season with salt and pepper. Spread them, cut side up, on a rimmed baking sheet and bake 45 minutes. Remove and let cool.
- While the tomatoes are roasting, spread the slivered almonds in a small, ovenproof sauté pan and slide into the oven, underneath the tomatoes. Toast for 5 minutes, until fragrant and lightly browned. Meanwhile, trim and clean the Romano beans, peel and slice the shallots and garlic, and set them all aside. Heat remaining olive oil in a large sauté pan over medium-high heat. Add shallots and brown for a few minutes. Season lightly with salt and pepper. Add garlic and cook 1 minute. Add oregano, beans, and stock, and stir gently to combine. Cover with a tight-fitting lid and reduce heat to medium. Set a timer for 20 minutes.
- Salmoriglio: Peel and mince the garlic. Pick the oregano leaves from the stems and chop with the garlic. Season lightly with salt and pepper. Add lemon zest to the herb-garlic mixture, and continue to chop until it's uniformly minced. Put mixture in a medium mixing bowl, and stir in lemon juice. Drizzle in olive oil. Season with salt and pepper.
- Beans, part 2: After 20 minutes, check the beans for doneness. If they're "mushy" enough for you, remove them from the heat; if not, continue cooking for a few additional minutes. Once the tomatoes have cooled, remove the skins and coarsely chop. Fold the tomatoes and any leftover juices into the beans. Taste and adjust seasoning as necessary.
- Assembly: Pour beans into a large mixing bowl. Add toasted almonds, and toss to combine. Dress beans with salmoriglio to taste. Season with salt and pepper, if necessary, and serve to your guests.

- Preheat oven to 240°C. For umido, toss tomato and thyme in 2 tsp olive oil on an oven tray, season with salt and roast until soft (15-25 minutes). When cool enough to touch, pinch off skins and place on an oven tray lined with baking paper, reserving tomato flesh. Reduce oven to 100°C and cook skins until dehydrated into a crunchy garnish full of tomato flavour (optional; 3-4 hours). Meanwhile, heat remaining olive oil in a large saucepan over lowmedium heat. Add onion and garlic and cook, stirring occasionally, until very soft but not browned (10-15 minutes). Deglaze pan with wine, scraping base of pan, then add oregano, smoked paprika, fennel seeds, bay leaf, and reserved tomato flesh. Reduce heat to low and cook, stirring regularly to avoid catching, until reduced by half (10-20 minutes).
- Increase oven to 150°C. Roast blanched almonds, turning occasionally, until light golden (10-15 minutes). Soak bread in 125ml water (5-6 minutes), then squeeze out excess water, transfer to a food processor with almonds and garlic and blend to a coarse paste. Increase speed and slowly add 200ml water, blending until smooth, then with the motor running, add vegetable oil, until mixture thickens slightly. Season to taste with lemon juice and salt.
- Preheat a barbecue or char-grill pan to high heat and grill the beans, turning occasionally, until charred (2-3 minutes). Toss beans in a bowl with umido. Spread almond purée on a platter and top with beans, tomato skins and toasted almonds.
