BAKED TERIYAKI CHICKEN

A much requested chicken recipe! Easy to double for a large group. Delicious!

1 tablespoon cornstarch
1 tablespoon cold water
½ cup white sugar
½ cup soy sauce
¼ cup cider vinegar
1 clove garlic, minced
½ teaspoon ground ginger
¼ teaspoon ground black pepper
12 skinless chicken thighs

Steps:

  • In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
  • Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.

2/3 cup roasted garlic teriyaki sauce
1 tablespoon packed brown sugar
1 tablespoon vegetable oil
6 boneless skinless chicken breast halves

Steps:

  • Combine roasted garlic teriyaki sauce, brown sugar and oil, stirring until sugar dissolves.
  • Pour mixture over chicken in large plastic food storage bag. Press air out of bag; close top securely.
  • Turn bag over several times to coat chicken. Refrigerate 2 hours, turning bag over once.
  • Remove chicken from marinade; discard marinade.
  • Grill chicken 4 to 5 inches from hot coals 12 to 15 minutes, or until chicken is no longer pink in center, turning over occasionally.

2 - bonless skinless chicken breasts
- roasted garlic teriyaki sauce
1-2 can(s) mushrooms or use fresh

Steps:

  • In a ziplock bag marinate chicken breast in teriyaki sauce for at least 30 minutes. Make sure chicken is covered with teriyaki sauce.
  • Put marinate and chicken into frying pan and cook on one side, turn chicken and add mushrooms.
  • Serve with a baked potato and vegetable or salad.
  • Left over chicken is great in a sandwich the next day.

⅔ cup Kikkoman Roasted Garlic Teriyaki Marinade & Sauce

Steps:

  • Disjoint chicken wings; discard tips. Place pieces in large plastic food storage bag; pour in roasted garlic teriyaki sauce. Press air out of bag; close top securely. Turn bag over several times to coat all pieces well. Refrigerate 8 hours or overnight, turning bag over occasionally. Arrange pieces in single layer in shallow baking pan.
  • Bake in 350 degrees F oven 20 minutes. Turn pieces over and bake 25 minutes longer, or until chicken is no longer pink near bone.
