Spicy Grilled Fish - grilled fish wrapped with banana leaves with spice marinade and seasoning. The fish is so tender, moist, with intense aroma and flavors.

1 lb. (0.4 kg) fish fillet or whole fish (for example: red snapper)
6 oz. (170 g) fresh red chilies, seeded and cut into small pieces
4 oz. (115 g) shallots
1 tablespoon toasted belacan (Malaysian shrimp paste)
2 lemongrass cut into thin slices
4 tablespoons oil
1/4 teaspoon salt, or to taste
2 teaspoons fish sauce to taste
2 1/2 teaspoons sugar, or to taste
1/4 teaspoon turmeric powder
1/2 lime or 1 calamansi lime, extract the juice
tamarind pulp (ping pong ball size)
8 tablespoons water
3 fresh red chilies, seeded
2 bird's eye chilies, seeded
1 teaspoon toasted belacan
sugar to taste
salt to taste
2 shallots, thinly sliced

Steps:

  • Prepare the sambal by grinding chilies, shallots, belacan and lemongrass in a food processor. Make sure the sambal paste is well blended and smooth.
  • Heat up a wok and add the oil. "Tumis" (stir-fry) the sambal paste until aromatic or when the oil separates from the sambal paste. Add the seasonings: salt, fish sauce and sugar and do a quick stirs, dish out and set aside.
  • Soak the tamarind pulp with the water for 15 minutes and extract the juice. In a mortar and pestle or food processor, pound/blend the red chilies, bird's eye chilies and toasted belacan. Add tamarind juice, sugar, salt, and sliced shallots to the sambal. Stir well and set aside.
  • Lay a few sheets of banana leaves and grease the surface of the banana leaves with some oil. Lay the fish fillet on top of the banana leaves and rub the turmeric powder on both sides of the fish. Add about 2 - 3 tablespoons of sambal on top of the fish. Spread the sambal evenly. Drizzle the lime juice on the fish.
  • Place the fish on top of the grill (upper rack with indirect heat) and cover the grill. Wait for 8 minutes or so (depending on the heat) and flip the fish over to the other side.
  • Add 2 - 3 more tablespoons of sambal on the other side of the fish. Cook for another 8 minutes or until the fish is cooked.
  • Transfer the fish and the banana leaves to the lower rack and grill for a couple of minutes with direct heat, or when you smell the sweet aroma of burnt banana leaves.
  • Transfer out and serve immediately with sambal belacan and sliced shallots condiment.

Fish
1 1/2 pounds 3/4-inch-thick hake or pollack fillets, cut into 2x3- or 2x4-inch pieces
1/2 cup chopped green onions
3 tablespoons minced peeled fresh ginger
3 tablespoons Shaoxing wine (Chinese rice wine) or dry Sherry, divided
2 tablespoons peanut oil or vegetable oil, divided
1 tablespoon soy sauce
Sauce
3 tablespoons sugar
2 tablespoons soy sauce
2 tablespoons Asian sesame oil
2 tablespoons Shaoxing wine (Chinese rice wine) or dry Sherry
1 tablespoon dark soy sauce
1 whole star anise
1/4 cup chopped green onions

Steps:

  • For fish:
  • Rinse fish and pat dry. Mix green onions, ginger, 1 tablespoon rice wine, 1 tablespoon oil, and soy sauce in 11x7x2-inch glass baking dish. Add fish and turn to coat. Let marinate 1 hour at room temperature.
  • For sauce:
  • Bring first 6 ingredients to boil in heavy small saucepan, stirring to dissolve sugar. Reduce heat to medium and simmer until sauce is slightly thickened and reduced to 1/3 cup, about 4 minutes. Remove star anise sauce from heat and cool.
  • Remove fish from marinade and place on several layers of paper towels to drain; reserve marinade. Pat fish dry. Heat 14-inch-diameter flat-bottomed wok over high heat until drop of water added to wok evaporates on contact. Add remaining 1 tablespoon oil to wok, then fish pieces, spreading evenly. Cover and cook 30 seconds. Uncover and loosen fish pieces with metal spatula. Reduce heat to medium and cook 1 minute. Turn fish pieces over; cook 1 minute. Add remaining 2 tablespoons rice wine and reserved marinade from fish. Cover and cook 1 minute. Remove wok from heat; let fish stand covered until just opaque in center, about 1 minute. Using metal spatula, transfer fish and sauce from wok to plate. Drizzle with some of star anise sauce. Refrigerate until cold. DO AHEAD Can be made 6 hours ahead. Cover fish and keep chilled. Cover remaining star anise sauce and let stand at room temperature.
  • Spoon additional star anise sauce over fish; sprinkle with green onions and serve cold or at room temperature.

SPICY AND SOUR FISH MARINADE



Spicy and Sour Fish Marinade image

This marinade should be a little sour followed by a slow burn in your mouth. It goes perfect with Tilapia and Ahi Tuna. Due to the amount of Oregano in the recipe, it should look slightly "chunky" or "thick". Marinade fish for a minimum of four hours if possible. Taste for spiciness before adding to fish and make sure all of the fish is completely covered before placing in the fridge.This recipe has never been grill-tested--I've always baked it. Any leftover cooked marinade can be used as a sauce as well. The amount produced with the following measurements will cover 2 medium-sized pieces of fish. Cooking time depends on size of fish.

2 1/2 tablespoons lime juice
1 tablespoon extra virgin olive oil
1 tablespoon dried oregano
1/2 teaspoon garlic, minced
1 1/2 teaspoons chili powder
1/4 teaspoon fresh cracked pepper
1 1/4 teaspoons Tabasco sauce
1 dash seasoning salt

Steps:

  • Mix all ingredients in a small bowl with a fork. More tabasco pepper sauce and chili powder may be added to taste.
  • Place fish in a zippered bag that is a correct size for the amount of fish. (The less air or empty space in the bag, the better.).
  • Add marinade to the bag with a spoon, making sure to coat all pieces of fish. Close bag.
  • "Mush" bag around carefully to cover every inch of the fish.
  • Place in fridge for a minimum of 4 hours.

This marinade came to be my favorite way to please the pallet of even the pickiest fish eater. For years my daughter would only eat fish if it came straight out of a lake. Now she makes it this way regularly. Enjoy!

1 tablespoon(s) butter
1 tablespoon(s) peanut or canola oil
2 clove(s) garlic, minced
1 tablespoon(s) freshly grated or minced ginger
3 tablespoon(s) low salt tamari or soy sauce
1 tablespoon(s) brown mustard
1/2 cup(s) hot water into which 1 tsp vegetable "better than bouillon" has been dissolved

Steps:

  • Saute the first 6 ingredients in a non-stick saucepan at a low heat for a couple of minutes, then slowly add the bouillon mixture. Allow to cook together on a low heat for 5 minutes.
  • Place your fish pieces (any kind of mild fish, but also good on salmon or trout) on a broiling pan that's been covered with aluminum foil to prevent spillage.
  • Baste both sides of the fish with marinade using a brush or rubber applicator, scooping up pieces of ginger and garlic. Depending on the size of the fish, broil for 8 to 12 minutes. When you reach the halfway point, remove fish, flip carefully to other side, re-baste if necessary and sprinkle sesame seeds liberally over the top, and finish the broil. Serve over brown rice that has been made in advance and laced with toasted almonds or cashews.
  • To enhance, have tamari and toasted sesame oil on hand as an addition to individual tastes.

I found this recipe on the internet. It was originally for tuna steaks, but I've found that it is just as delicious for catfish and other white fish fillets, and for shrimp. Original recipe is for 1 pound of fish, but I think this makes enough to marinate a bit more than that. Preparation time includes 20 minutes marinating time.

2 tablespoons rice vinegar

STRIPED BASS POACHED IN SPICY SOY SAUCE



Striped Bass Poached In Spicy Soy Sauce image

Poaching fish in a mixture of soy sauce and water is a simple, fast method that adds gorgeous flavor to fillets, which emerge moist and succulent. It is also flexible and forgiving, with a cooking liquid that can accommodate a host of seasonings. Here those seasonings are sugar (to cut the saltiness of the soy sauce), scallions and an optional fresh or dried chile pepper (either minced or put in whole), but you could experiment with ginger, garlic, lime juice or other flavors. Combine all the ingredients, except the bass, in a skillet. Bring to a boil, add the fish flesh-side-down, and adjust the heat so that the mixture does not bubble too aggressively. The fish cooks in 8 to 10 minutes, until its flesh is mahogany-colored and doesn't resist when you slice in with a thin-bladed knife. Serve on top of rice, garnished with the cooking liquid and the scallions, which are now limp and tender. Other fish, like cod, halibut, monkfish and salmon, also work, but keep an eye on it as it poaches - you will likely need to adjust the cooking time slightly.
