DUCK BREAST WITH SPICY NOODLES



Duck Breast with Spicy Noodles image

Tender juicy duck breasts served with spicy rice noodles.

2 Duck Breasts
1 tbsp Coriander seeds
1 tsp Black peppercorns
1 tsp Salt
1 tbsp Soy sauce
2 tbsp Honey
1 tsp olive oil
3 Shallots (very finely sliced)
300 gr Rice Noodles
2 tsp Soy sauce
2 tsp Chili (finely chopped)
1 tsp Mild curry powder
1 Egg

Steps:

  • Preheat the oven to 200C.
  • Grind the coriander and peppercorns in a pestle and mortar into a fine powder and rub generously into the skin of the duck and season with salt and pepper.
  • Place the duck breast skin side down in a hot frying pan, reduce the heat immediately and cook until the skin is a lovely brown and the fat is rendered.
  • Add the soy sauce and honey and cook for about a minute.
  • Slash the fat on the duck breast and then sear it on both sides in a very hot pan.
  • Remove it from the pan and place in the oven at 180C/350F/Gas 4 for about 10 minutes.
  • Meanwhile, drain off any excess fat from the frying pan.
  • Put in the shallots, garlic, thyme and tomatoes and cook for a minute or two.
  • De-glaze the pan with the balsamic vinegar and red wine.
  • Add the butter and red currants and reduce the sauce for a couple of minutes.
  • Remove the duck from the oven to rest.
  • To cook the noodles place the oil in a non-stick wok over a high heat.
  • Add the shallots and stir for a minute or two.
  • Add the noodles and stir for another minute.
  • Add the soy sauce, chili and curry powder and stir through, releasing the spices.
  • Add the egg and stir for 1 minute until cooked through.
  • To serve place the noodles on a plate, slice the duck on the diagonal and place on the noodles, drizzle over the sauce and sprinkle with chopped chives.

DUCK BREASTS WITH ROASTED PEARS AND COLD SESAME NOODLES



Duck Breasts with Roasted Pears and Cold Sesame Noodles image

4 ripe pears, cut in half and pitted
Kosher salt and freshly ground black pepper
3 tablespoons toasted sesame oil
2 duck breasts, skin-on (about 1 1/4 pounds total)
Cold Sesame Noodles, recipe follows
Hydroponic watercress, for garnish
Lime wedges, for garnish
1/2 pound dried buckwheat (soba) noodles
9 tablespoons dark sesame oil
1-inch piece fresh ginger, peeled and crushed with the side of a knife
2 garlic cloves, crushed with the side of a knife
1 red Thai bird chile, minced, seeds and all
2 tablespoons brown sugar
1/2 cup creamy peanut butter
1/4 cup rice vinegar
1/4 cup low-sodium soy sauce
6 tablespoons water, room temperature
1 tablespoon chili sauce
1 tablespoon sesame seeds, for garnish
2 green onions, thinly sliced on the diagonal
1 lime, cut into wedges, for serving

Steps:

  • Preheat the oven to 350 degrees F. Put the pears on a baking sheet, cut sides up. Sprinkle with salt and pepper and drizzle with 1 tablespoon sesame oil. Place them into the oven and roast 15 to 20 minutes, until very tender when pierced with a knife.
  • Meanwhile, put the duck breasts on a cutting board skin side up and score all over in a tiny crosshatch pattern, so the fat will render and the skin will crisp. Season all over with salt and pepper and drizzle with 1 tablespoon sesame oil. Add the breasts to a stainless steel pan over medium heat, skin side down, and cook slowly for about 12 to 15 minutes until the fat is rendered and the skin is browned and crispy. Occasionally spoon the fat out into a bowl. Turn the breasts and cook 1 to 2 more minutes for medium-rare. Transfer the duck to a cutting board to rest.
  • To serve, cut the duck breasts crosswise, on an angle, into 8 slices each. Mound the Sesame Noodles evenly between 4 bowls. Add half a sliced duck breast to each bowl along with a peach half. Garnish with watercress and lime wedges.
  • Cold Sesame Noodles:
  • Bring a large pot of salted water to a boil over high heat. Add the noodles and stir to keep them from sticking together. Cook until barely tender and still firm, 3 to 4 minutes. Drain immediately and rinse under cold running water to cool. Drain the noodles really well, transfer to a wide serving bowl, and toss immediately with 3 tablespoons of the sesame oil so they don't stick together.
  • Meanwhile, make the sauce. In a saucepan, heat 1/4 cup sesame oil over medium-low heat. Add the ginger, garlic, and chile. Cook, stirring for a minute, until the vegetables are soft and fragrant. Place into a blender along with the brown sugar, peanut butter, vinegar, soy sauce, hot water, chili sauce, and the remaining 2 tablespoons sesame oil. Puree and refrigerate until cold.
  • Toast the sesame seeds in a dry skillet over medium-low heat until golden brown. (Shake the pan constantly to keep the seeds from burning). Put the noodles in a serving bowl and toss with the sesame sauce. Sprinkle with the sesame seeds and green onions, and serve with the lime wedges.

SINGAPORE FRIED NOODLES WITH SPICED DUCK BREAST

½ tbsp coriander seeds
½ tsp black peppercorns
1 tsp salt
½ duck breast, fat scored with a sharp knife
½ tbsp soy sauce
1 tbsp honey
1 tsp vegetable oil
3 shallots, finely sliced
150g/5½oz rice noodles, blanched
1 tsp soy sauce
1 tsp chilli, finely chopped
½ tsp mild curry powder
1 free-range egg
1 tsp fresh chives, chopped

Steps:

  • Preheat the oven to 200C/400F/Gas 6.
  • For the duck, grind the coriander and black peppercorns in a pestle and mortar and rub the spice rub over the duck breast.
  • Season the duck breast with salt and place skin-side down into a small, ovenproof frying pan over a medium heat. Fry the breast for five minutes, until the skin is browned. Drain off the released duck fat and turn the breast.
  • Add the soy sauce and honey and fry for one minute, then transfer to the oven for 5 minutes, or until cooked through. Remove from the oven and rest the duck breast for one minute.
  • Thinly slice the breast.
  • To make the noodles, place the oil in a non-stick wok over a high heat.
  • Add the shallot and stir fry for one minute.
  • Add the noodles and stir fry for one minute.
  • Add the soy sauce, chilli and curry powder and stir fry for one minute.
  • Add the egg and stir fry for one minute, until cooked through.
  • To serve, place the noodles onto a plate, place the sliced duck breast on top and sprinkle with chives.

PAN-SEARED FIVE-SPICE DUCK BREAST WITH BALSAMIC JUS

1 large garlic clove, finely chopped
1 tbsp grated peeled fresh ginger
2 tsp five-spice powder
1 tsp salt
1/2 tsp freshly ground pepper
4 single duck breasts
1 tbsp extra-virgin olive oil
1/4 cup/60 ml dry red wine
2 tbsp balsamic vinegar

Steps:

  • In a large, heavy self-sealing plastic bag, combine the garlic, ginger, five-spice powder, salt, and pepper. Add the duck breasts, seal, and refrigerate for at least 1 hour or up to 24 hours. Remove from the refrigerator 1 hour before cooking.
  • Preheat the oven to 400°F/200°C/gas 6. In a large ovenproof sauté pan, heat the olive oil over medium-high heat until shimmering. Sear the duck breast, skin side down, for 5 minutes; turn and sear for 5 minutes on the other side. Transfer the pan to the oven and roast for 5 minutes for medium-rare. Transfer the duck breasts to a plate and keep warm.
  • To make a balsamic jus, pour off the fat from the pan. Return the pan to medium-high heat, add the wine, and stir to scrape up the browned bits from the bottom of the pan. Cook to reduce the wine by half. Add the balsamic vinegar and cook to reduce for several more minutes.
  • Cut the duck breasts into diagonal slices and serve drizzled with the balsamic jus.

3 duck breasts
3 garlic cloves
2 -3 teaspoons sambal oelek, to taste ((or more)
1 tablespoon honey or 1 tablespoon maple syrup
3 tablespoons dark soy sauce (ketjap mani)
1 teaspoon five-spice powder
9 ounces rice stick noodles
1 teaspoon vegetable oil
1 teaspoon sesame oil
2 scallions, sliced
3 1/2 ounces snow peas

Steps:

  • prick the duck breasts all over wit a fork.
  • Mix together the garlic sambal oelek, honey, ketjap mani and five-spice powder and pour over the duck. Turn to coat and place them in a bowl or plastic zip lock bag and refrigerate for 3-24 hours.
  • Prepare rice noodles according to package and drain well.
  • Drain the duck and broil on a rack under high heat for about ten minutes, basting and turning occasionally .
  • Heat the oils and toss the scallions and snow peas for 2 minutes. Sir in the remaining marinade and bring to a boil. Add the noodles.
  • Serve on side of duck breast.

Five-Spice Duck Breast With Blackberries image

Once you know the technique, cooking a large Muscovy duck breast is no more difficult than cooking a steak. Fragrant five-spice powder - a heady mix of Sichuan pepper, fennel, clove, star anise and cinnamon - is the perfect duck seasoning, and juicy blackberries make this a brilliant summertime dish. Muscovy duck is found at better butchers, from online sources or even at some farmers' markets. Grill the duck if you prefer, but make sure to keep dripping fat from igniting and scorching the meat. The breast meat is quite lean despite its fatty skin, so it is best cooked to a rosy medium rare or it will be dry. Serve it warm, at room temperature or cold.

2 Muscovy duck breasts, about 1 pound each
Salt
2 teaspoons Chinese five-spice powder
1 tablespoon fresh ginger, grated
2 garlic cloves, smashed or diced
1 shallot, finely diced
2 tablespoons good sherry vinegar
2 tablespoons brown sugar
6 ounces blackberries
1/2 cup rich chicken broth

Steps:

  • Trim duck breasts as necessary, removing extraneous fat or gristle. Score the skin side of the breast diagonally with a sharp knife.
  • Season both sides of the duck breasts with salt, then sprinkle both sides evenly with five-spice powder. Mix together ginger and garlic and use it to slather the breasts. Cover and let marinate for 30 minutes at room temperature. (Alternatively, wrap and refrigerate for several hours, or even overnight; bring back to room temperature before cooking.)
  • Place a cast-iron pan over medium-high heat. When pan is hot, lay duck breast in it skin-side down. Let sizzle gently for 7 minutes, until skin is crisp and golden, adjusting heat as necessary to keep from getting too dark too quickly. Turn breast over and cook 3 to 5 minutes more. An instant-read thermometer should register 125 degrees for medium rare. Remove from pan and let rest for 10 minutes on a warm plate. Drain fat from pan (reserve for another use if you wish).
  • Make the sauce: Over medium heat, add shallots to same pan and cook until softened, about 2 to 3 minutes. Add sherry vinegar, brown sugar and half the blackberries, stirring until sugar is dissolved and berries have released their juice. Add chicken broth, raise heat and simmer rapidly until liquid is reduced by half and a bit syrupy. Strain the contents of the skillet into a small saucepan and keep warm.
  • To serve, slice duck breast thinly across the grain on a diagonal and arrange on a platter. Spoon the sauce over the meat and garnish with the rest of the blackberries.
