- Preheat your waffle iron until it's scorching hot. Mix the dry ingredients in a large bowl. Then whisk in all the wet ingredients until smooth.
- Scoop the batter onto the waffle iron. Fill until close to the edges, but not all the way to the edges. Close and cook for 2-5 minutes, then repeat. *Try adding chopped almonds or pecans to the batter.

- Preheat Belgian waffle iron.
- In a medium bowl, whisk together the egg yolks, vanilla, buttermilk, and melted butter until they're well combined.
- In a separate bowl, combine the flour, baking powder, baking soda, sugar, salt, and cinnamon.
- Slowly stir the dry ingredients into the buttermilk mixture.
- Add egg whites to the bowl of a stand mixer and whip with the whisk attachment until soft peaks form, being careful not to over-mix. Gently fold egg whites into the batter.
- Spoon about one-fifth of the batter onto the hot iron (or whatever quantity is recommended according to the manufacturer's instructions), close, and cook until golden brown. Repeat with remaining batter and serve with maple syrup, or your favorite toppings.

- Preheat oven to 275 degrees; set a rack on a baking sheet, and place in oven. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt; set aside. In a large bowl, whisk together buttermilk, butter, and eggs; add flour mixture, and mix just until batter is combined.
- Heat waffle iron according to manufacturer's instructions; brush with oil. Pour batter onto iron (amount depends on iron size), leaving a 1/2-inch border on all sides (spread batter if necessary). Close iron; cook until waffles are golden brown and crisp, 3 to 5 minutes. Transfer to rack in oven to keep warm; repeat with remaining batter.

- Mix the dry ingredients on a large bowl. Then whisk in all the wet ingredient-until smooth.

- Preheat waffle maker
- In a small bowl, beat eggs.
- Add remaining wet ingredients and mix.
- In a medium bowl, mix all dry ingredients.
- Pour wet ingredients into dry ingredients and mix until there are no longer any lumps in the batter.
- Spray waffle maker iron with oil. Cook batter in batches. Waffles will be crispy and release easily from the waffle iron when done.

- Preheat oven to 275°F; set a wire rack inside a rimmed baking sheet and place on center rack.
- Whisk eggs in a large bowl. Whisk in buttermilk, oil, baking powder, baking soda, salt, and sugar to combine. Add flour and stir just until small lumps remain (do not overmix).
- Preheat and prep a waffle iron per manufacturer's instructions. Pour in a scant 1/2 cup batter per waffle (amount will vary depending on iron), leaving a slight border around edges to prevent spillover.
