Time 45m

Yield 4 servings

Number Of Ingredients 6

1/2 cup vegetable oil
4 potatoes, thinly sliced
1 white onion, chopped
4 eggs, scrambled in a large bowl
1/4 teaspoon salt
2 to 3 tablespoons extra-virgin olive oil

Lower the heat to medium-low and cook for 4 to 5 minutes, until the bottom of the omelet is very light brown. Using a flat ceramic plate, cover the frying pan and flip the omelet over onto the plate. Immediately slip the uncooked side back into the pan. Cook for another 4 to 5 minutes, until the other side is a very light brown.
  • Remove the omelet from the pan to a plate and cut into 4 wedges.

OPEN-FACED OMELET WITH ARUGULA SALAD

Open-Faced Omelet With Arugula Salad image

Provided by Food Network Kitchen

Time 30m

Yield 4

Number Of Ingredients 10

3 to 4 tablespoons extra-virgin olive oil
2 teaspoons red wine vinegar
Kosher salt and freshly ground pepper
5 cups baby arugula
1/4 cup pitted kalamata olives, halved
1/2 cup torn roasted red peppers
8 large eggs
2 tablespoons milk
4 ounces feta cheese, crumbled
2 ounces thinly sliced prosciutto, pulled apart into thin strips

Steps:

  • Whisk 2 tablespoons olive oil, the vinegar, 1/4 teaspoon salt, and pepper to taste in a medium bowl. Add the arugula, olives and roasted red peppers but don't toss yet (you don't want the arugula to wilt). Set aside while you prepare the omelets.
  • Whisk the eggs, milk and a pinch of salt in a bowl. Heat a medium nonstick skillet over medium heat. Add about 1 teaspoon olive oil, then pour in 1/2 cup of the egg mixture and stir gently with a rubber spatula to distribute the egg in the bottom of the pan. Cook until the eggs are just set but the underside is not brown, about 4 minutes, then slide the omelet onto a plate. Repeat to make 3 more omelets, adding about 1 more teaspoon oil to the skillet between each.
  • Toss the arugula salad, then pile on top of the omelets. Scatter the feta and prosciutto on top.

SPANISH OMELET WITH ROMESCO SAUCE

Spanish Omelet with Romesco Sauce image

Provided by Ted Allen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 15

1/4 cup hazelnuts (with skin)
1/3 cup extra-virgin olive oil, plus more for drizzling
1/4 cup roasted almonds
1 slice crusty bread, cut into 1/2-inch cubes
2 cloves garlic, sliced
1/2 teaspoon red pepper flakes, plus more to taste
1 whole peeled canned tomato
1/4 cup jarred roasted red peppers (preferably piquillos)
1/2 to 1 tablespoon red wine vinegar
Kosher salt
5 large eggs
Kosher salt
1 scallion, minced
1/2 cup coarsely grated manchego cheese
3 thin slices iberico or serrano ham

Steps:

  • Prepare the sauce: Preheat the oven to 350 degrees F. Place the hazelnuts on a baking sheet and toast until golden, 10 to 15 minutes. Wrap in a clean towel while still warm and rub to remove the skins.
  • Heat 1/3 cup olive oil in a 9-inch nonstick skillet over medium heat. Add the hazelnuts, almonds, bread, garlic and red pepper flakes and cook until golden, about 3 minutes. Transfer to a food processor; add the tomato, piquillo peppers, vinegar and 1/4 teaspoon salt and pulse, thinning with water as needed. Add salt and red pepper flakes to taste.
  • Make the omelet: Whisk the eggs, a pinch of salt and the scallion in a bowl. Return the skillet to medium heat and drizzle with more oil, if needed. Add the eggs and cook about 3 minutes, loosening the edges with a rubber spatula to allow the uncooked egg to run underneath. Sprinkle with the cheese, then layer the ham and 1/4 cup sauce on one side. Cook until the cheese melts and the eggs set, 2 to 3 more minutes. Fold in half to cover the filling. Serve with more sauce, if desired.
