- In a large nonstick skillet, cook potatoes in butter until crisp-tender and lightly browned. Sprinkle with salt and pepper. Pour milk over all; cover and cook until milk is absorbed. Sprinkle with cheese; stir until melted. Garnish with parsley.

Mother didn't make these quite as often as she made scalloped or mashed or fried, but she made them occasionally, usually with some kind of ham. And she always told the family joke about her Aunt Clara who, when asked to bring cheese potatoes to a family gathering, came in lugging a 5-lb. bag of potatoes and a block of cheddar...

Steps:
- 1. Peel potatoes and slice into 1/8" slices. Place in greased Dutch oven.
- 2. In a large saucepan, melt butter. Add flour and stir until blended. Add the salt and pepper. Pour in milk, little by little, stirring constantly with a wire whisk.
- 3. Over medium-high heat, whisk constantly until mixture begins to thicken. When bubbles start to form, remove from heat and add 1-1/2 cups of the cheese. Pour over potatoes and mix thoroughly.
- 4. Bake in a pre-heated 350-degree oven, covered, for 1 hour. Remove lid, sprinkle 1/2 cup remaining cheese over the top of potatoes, and continue baking, uncovered, for 30 minutes more.
- 5. If you like, you may add buttered bread crumbs (about 3/4 cup) when you add the 1/2 cup of cheese.

Cover and cook 15-30 minutes longer or until heated through. If desired, top with additional shredded cheddar cheese and minced fresh parsley.

- In a large saucepan, melt 4 tablespoons butter. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat., Stir in the cheeses until melted. Add potatoes; stir gently to coat. Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with lemon juice., In a small skillet, melt the remaining butter. Add bread crumbs; cook and stir over medium heat until lightly browned. Sprinkle over potato mixture. Bake, uncovered, at 350° for 40-45 minutes or until hot and bubbly.
