Feta-Stuffed Hamburgers image

This is a great hamburger for the grill. Feta cheese gives it a rich and creamy taste.

1 pound lean ground beef
½ teaspoon Worcestershire sauce
1 teaspoon dried parsley
salt and pepper to taste
1 cup crumbled feta cheese

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Knead together the ground beef, Worcestershire sauce, parsley, salt, and pepper in a bowl. Form the mixture into 8 equal-sized balls; flatten to make thin patties. Place about 1/4 cup of feta cheese onto each of four of the patties. Top each of the patties with cheese with one of the patties without; press the edges together to seal the cheese into the center.
  • Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 8 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

1/2 cup nonfat Greek style yogurt
2 teaspoons olive oil
2 teaspoons fresh lemon juice
1 clove garlic, minced
1 teaspoon chopped fresh dill leaves
1/8 teaspoon salt
Pinch freshly ground black pepper
2 teaspoons olive oil
1/2 small onion, chopped
2 cups lightly packed baby spinach leaves, coarsely chopped
1/4 cup crumbled feta cheese
1 tablespoon chopped fresh dill, or 1 teaspoon dried
1/2 teaspoon freshly ground black pepper
1 1/4 pounds lean ground turkey breast
1/4 teaspoon salt
4 whole-wheat burger buns
1/4 English cucumber, thinly sliced
4 small leaves romaine lettuce, hard ribs removed

Steps:

  • In a small bowl, stir together the yogurt, oil, lemon juice, garlic, dill, and salt and pepper.
  • Heat 2 teaspoons of oil in a nonstick skillet over medium-high heat. Add the onion and cook until soft and translucent, about 3 minutes. Add the spinach and cook until wilted, about 1 minute. Remove the pan from the heat. Add the feta cheese, dill and 1/4 teaspoon black pepper and stir to combine.
  • Divide the turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Put 2 tablespoons of the spinach-feta mixture onto half of the patties. Top with remaining patties working the turkey around the edges to seal burgers closed. Season the burgers on both sides with the salt and remaining 1/4 teaspoon pepper.
  • Spray a nonstick grill pan with cooking spray and heat over medium-high heat, or prepare the grill. Grill the patties until cooked through, about 5 minutes per side.
  • To serve, place a burger on the bottom half of each bun, top with about 2 tablespoons of yogurt sauce, then 2 or 3 cucumber slices and a lettuce leaf. Top with the other half of the bun and serve.

1 tablespoon olive oil
2 shallots, chopped
2-1/2 cups fresh baby spinach, coarsely chopped
3 garlic cloves, minced
2/3 cup crumbled feta cheese
3/4 teaspoon Greek seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
8 whole wheat hamburger buns, split
Optional toppings: refrigerated tzatziki sauce, fresh baby spinach and tomato slices

Steps:

  • In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 6-8 minutes on each side. Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve burgers on buns. If desired, add toppings.Freeze option: Place patties on a baking sheet lined with plastic wrap; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.

2 lbs 90% lean ground beef
1/2 cup feta cheese, crumbled
1/2 cup tomatoes, chopped
2 tablespoons red onions, chopped
2 tablespoons ripe olives, chopped
1 tablespoon olive oil
1/4 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
6 whole gyro style pita bread (6 inches)
6 lettuce leaves
6 slices tomatoes
1 small seedless cucumber, sliced
1/3 cup cucumber ranch salad dressing

Steps:

  • Shape beef evenly into 12 patties.
  • In a small bowl, combine the feta cheese, chopped tomato, onion, olives, oil and oregano.
  • Top six of the patties with the cheese mixture and then cover with remaining patties and firmly press edges to seal. Sprinkle with salt and pepper for seasoning.
  • Grill patties, covered over medium hot heat for 6-8 minutes on each side or until a meat thermometer reads 160F and juices are clear.
  • Serve each burger on a pita with lettuce, sliced tomato, cucumber and cucumber ranch dressing.

  • Combine the ground meat(s), garlic, mint, oregano, salt and pepper in a mixing bowl and knead well. Add 2 to 4 tablespoons of olive oil to the mixture while kneading, to create a soft, succulent mass. The mixture should be dense but slightly unctuous. Cover and refrigerate for 30 minutes to 12 hours. (You can make ahead, the day before.)
  • Mash the feta, cayenne or paprika, and lemon juice together in a bowl using a fork, or pulse on and off in a food processor, to form a thick paste. Divide the mixture into 8 eqyal portions, about a tablespoon each, and shape into small balls.
  • Right before preparing the burgers, core and cut the tomatoes into 1-inch/2.5-cm cubes, place in a bowl, season lightly with salt and set aside.
  • Divide the ground meat mixture into 8 equal parts. Rub the palms of your hands with a little olive oil and shape each portion into a burger. Using your thumb, make an indentation in each burger and fill with the spicy feta ball. Pinch together the meat to seal the indentation, so that the feta is not exposed.

  • To prepare the mixture for the stuffed hamburgers, add into a large bowl the minced beef along with the rest of the ingredients and mix thoroughly with your hands. If the mixture is too sticky, add some more breadcrumbs (or some water/olive oil if it is too dry) till the mix is solid. It is important to knead the mix for about 10 minutes so that all the ingredients combine and the beef absorbs all the flavours. An easier alternative is to mix with a hand mixer using the dough hook at low speed.
  • Cut the feta cheese into small cubes and sprinkle with some dry oregano. For the stuffed burgers, in addition to feta cheese, you could also add chopped tomatoes and peppers coarsely chopped.
  • Knead the mixture into flat, thin, round burgers. At the center of half of the burgers place some of the stuffing and top them with another half-burger, squeezing on the edges till they stick together. We don’t want that stuffing running out while cooking now, do we?
