BLACK-EYED PEA SALAD



Black-Eyed Pea Salad image

1 large tomato, diced
1/2 medium red onion, finely chopped
1 small red bell pepper, finely chopped
1 jalapeno, finely chopped
2 tablespoons chopped green onions
2 tablespoons chopped fresh parsley leaves
1/4 cup unseasoned rice wine vinegar
1/4 cup canola oil
1/2 teaspoon sugar
Salt and freshly ground black pepper
Two 15-ounce cans black-eyed peas, drained

Steps:

  • Combine the first 6 ingredients in a bowl.
  • In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.
  • Toss all together with the black-eyed peas and let marinate for at up to 8 hours in the refrigerator before serving.

This is a salad, I got from Guy Fieri's Collection on the Cooking Network Site. I have put it together for our New Years Day Buffet, I doubled the recipe and used a half of red, yellow and orange bell peppers. I also tossed in approx 1/2 cup of chopped cilantro. Tomorrow with the leftovers I might toss in a chopped jalapeno for zip.

1/2 cup blackeyed peas, dried and rinsed
kosher salt
1/2 cup basmati rice
1 teaspoon garlic, minced
1/4 cup red onion, thinly sliced
1/2 cup red bell pepper, chopped
1/3 cup Spanish olives, sliced
2 tablespoons coarse grain Dijon mustard
4 tablespoons apple cider vinegar
3 tablespoons extra virgin olive oil
1 tablespoon honey
1 tablespoon cilantro, chopped
kosher salt and pepper

Steps:

  • Put the peas in a sauce pan with 3 cups water and 1/2 tsp salt.
  • Bring to boil and cook 4 minutes.
  • Remove from the heat, cover and let sit for 1 hour.
  • Drain, then return to the saucepan with 1 cup fresh water.
  • Bring to a simmer and cook, partially covered, until al dente, about 10 minutes.
  • Let cool in liquid.
  • Meanwhile, put the rice in another saucepan with 1 1/2 cups water and the garlic.
  • Bring to a simmer, cover and cook 16 minutes.
  • Remove from the heat and let cool, then fluff with fork.
  • Dressing:.
  • Whisk the mustard, vinegar, olive oil, honey, cilantro, 1/2 tsp salt and 1 tsp of pepper in a nonreactive bowl.
  • Adjust the seasoning to suit your tastes.
  • Drain the peas and toss with the rice in a large bowl.
  • Add onion, bell pepper and olives, then add the dressing and toss. Refrigerate until read to serve.

14 1/2 ounces each reduced-sodium chicken broth
1/4 cup water
1 cup uncooked long-grain rice
16 ounces drained and rinsed black-eyed peas
1 cup diced red and yellow bell pepper
1 cup celery, thinly sliced
3/4 cup green onion, thinly sliced
1/2 cup bottled herbs or 1/2 cup low-fat Italian vinaigrette dressing

Steps:

  • Bring the broth and 1/4 cup of water to a boil in a medium saucepan over a high heat. Stir in the rice and cover the pan, reduce the heat to medium-low and simmer gently for about 20 minutes or until rice is tender and the broth is absorbed. Combine the black-eyed peas, bell pepper, celery and green onions in a large mixing bowl. Add the warm rice and the vinaigrette and toss gently to combine. Serve immediately or cool and serve at room temperature.

2 cups black-eyed peas, cooked
1 cup long grain rice, cooked
1/4 cup butter (or margarine)
4 cups spinach, fresh and torn
4 slices bacon, cut into 1-inch
2 tablespoons parmesan cheese, grated
1/2 teaspoon salt
1/4 teaspoon hot pepper sauce
1 cup cheddar cheese, shredded

Steps:

  • have cooked black-eyed peas and rice ready.
  • in 2 qt saucepan melt butter, stir in spinach and bacon, cook over med heat stirring occasionally until spinach is tender.
  • stir in black-eyed peas, rice and remaining ingredients (except cheddar cheese).
  • continue cooking stirring occasionally until heated through.
  • just before serving stir in cheddar cheese.
  • *10 oz pkg frozen chopped spinach, thawed and drained can be substituted for 4 cups fresh spinach.

1 cup dried black-eyed peas
1 tablespoon olive oil
1 cup lean diced ham
1 onion, chopped
½ cup chopped green bell pepper
1 clove garlic, minced
2 cups water
2 bay leaves
2 pinches paprika, or more to taste
salt and ground black pepper to taste
3 cups cooked rice

Steps:

  • Place black-eyed peas into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
  • Heat olive oil in a pot over medium heat; cook and stir ham until browned, about 5 minutes. Add onion, green bell pepper, and garlic; saute until onion is tender, about 10 minutes. Add black-eyed peas, water, bay leaves, paprika, salt, and black pepper; cover pot with a lid and simmer until peas are tender, 40 to 50 minutes.
  • Remove bay leaves from black-eyed peas mixture and stir in rice. Simmer until all the liquid is evaporated, 5 to 10 more minutes.

1 pound dried black-eyed peas, sorted and rinsed
1 large onion, chopped
2 tablespoons olive oil
2 ounces sliced salt pork belly, chopped
6 garlic cloves, minced
2 bay leaves
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1 carton (32 ounces) reduced-sodium chicken broth
2 smoked ham hocks

Steps:

  • Place peas in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse peas, discarding liquid; set aside., In the same pan, saute onion in oil until tender. Add the pork belly, garlic, bay leaves, thyme, pepper flakes and pepper; cook 1 minute longer., Add the broth, ham hocks and peas; bring to a boil. Reduce heat; simmer, uncovered, for 35-40 minutes or until peas are tender, stirring occasionally and adding more water if desired., Discard bay leaves. Remove ham hocks; cool slightly. Remove meat from bones if desired; finely chop and return to pan. Discard bones. If desired, top with additional fresh thyme.
