A delicious Asian satay marinade and sauce for chicken and beef.

1 large red onion, chopped
2 large garlic cloves, chopped
3 stalks lemon grass, chopped
½ cup soy sauce
1 tablespoon peanut oil
1 tablespoon ground turmeric
1 ½ teaspoons brown sugar
1 teaspoon ground cumin
1 teaspoon ground ginger
salt and black pepper to taste
1 pound skinless, boneless chicken breast halves - pounded thin
12 wooden or bamboo skewers

Steps:

  • In a large nonreactive bowl, stir together the onion, garlic, lemon grass, soy sauce, peanut oil, turmeric, brown sugar, cumin, ginger, salt, and pepper. Reserve about 2 tablespoons of marinade in a small bowl, and refrigerate until cooking time. Mix the chicken breasts into the remaining marinade, stir to coat well, and marinate in refrigerator overnight.
  • About 30 minutes before serving, soak the skewers in water. Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the chicken breasts from the bowl, and discard the used marinade. Cut each chicken breast on the diagonal into 6 long strips, and thread a chicken strip onto one of the soaked skewers. Grill the skewers, turning frequently and basting with the reserved marinade, until the chicken is cooked through with brown, crispy edges, 5 to 8 minutes per skewer.

Singapore satay is a favourite snacks and hawker food. It is a meat skewer marinated with flvaourful spices. You can use any meat of your choices but make sure you make the peanut sauce dip to go along with your Satay! You can't go without the peanut sauce when you are eating satay.

200 grams Chicken Thigh (boneless and skinless, diced)
5 piece Shallots
1 clove Garlic
4 stalks Lemongrass
1 cm Galangal
1 tsp Cumin (ground)
1 tsp Coriander (ground)
1/2 tsp Turmeric
1 tsp Salt
3 tbsp Palm Sugar
1 tbsp Kecap Manis
2 tbsp Oil
20 qty Satay Sticks (soaked for at least 30mins)
1 cup Grated Peanut
1 tbsp Tamarind
1/4 cup Oil
1 cup Water
1 tbsp Kecap Manis
1/2 tsp Coriander Powder
2 tbsp Palm Sugar
10 stalks Dried Chilli (soaked and seeds removed)
3 cloves Garlic
4 qty Shallots
2 stalks Lemongrass (white part)
1 inch Galangal
1/2 tsp Salt

Steps:

  • Place marinade mix in a blender and blend till smooth.
  • Marinate the chicken in the paste for at least an hour or overnight.
  • Thread the bamboo sticks with 2-3 pieces of mutton each.
  • Turn the oven grill setting on high. Grill for about 5 minutes per side, till cooked and slightly charred, generously basting with some oil as and when.
  • Put the chillies, shallots, lemongrass, galangal and garlic in a blender and blend into a fine paste.
  • In a wok add the oil and fry the paste till it turns dark red and oil submerge.
  • Mix the tamarind with water and remove its pulp. Add tamarind water into the paste.
  • Add salt and kecap manis in. Stir well and add grated peanut in. Serve with satay.

1/3 cup reduced-sodium soy sauce
2 green onions, sliced
3 tablespoons brown sugar
3 tablespoons minced fresh cilantro
3 tablespoons Thai chili sauce
2 tablespoons sesame oil
2 teaspoons minced garlic
1 pound pork tenderloin, cut into 1/4-inch slices
1/3 cup creamy peanut butter
3 tablespoons hot water
2 teaspoons lime juice

Steps:

  • In a small bowl, combine the first 7 ingredients. Set aside 1/4 cup for dipping sauce. Pour remaining sauce into a bowl or shallow dish; add the pork and turn to coat. Cover and refrigerate 30 minutes. , Drain pork, discarding marinade. Thread pork slices onto 20 metal or soaked wooden skewers. Place skewers in a greased 15x10x1-in. baking pan. Broil 3-4 in. from heat 3-4 minutes on each side or until meat juices run clear. , Meanwhile, for sauce, combine peanut butter and water in a small bowl until smooth. Stir in lime juice and reserved soy sauce mixture. Serve with skewers.
