SOUR CREAM BEEF MACARONI CASSEROLE RECIPE

- Preheat the oven to 350 degrees F & grease a baking casserole of your choice.
- In a wide skillet over medium heat, saute the ground beef until caramelized, roughly 5 to 8 minutes. Drain any excess oils.
- Add the onions & garlic. Saute until translucent.
- Add tomato sauce & pepper. Stir to combine & bring mixture to a brief simmer for another 5 minutes. Set aside.
- In a large mixing bowl, combine sour cream, parmesan cheese, & cottage or cream cheese. Whisk until evenly incorporated.
- Fold the pasta into your cheese mixture until evenly incorporated.
- Place half of the pasta mixture into your greased baking dish, then layer with half of the beef mixture.
- Sprinkle with half each of cheddar, mozzarella, & Monterey Jack cheeses. Repeat until you have 2 layers of pasta, beef, & ending with cheeses.
- Bake for roughly 30 minutes or until cheese has melted & turned golden brown.
- Once baked, cool the casserole briefly onto cooling racks. Portion accordingly, garnish with roughly 1 tsp parsley for the entire casserole, & serve.

SOUR CREAM NOODLE BAKE

- Preheat the oven to 350 degrees F.
- Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
- Cook the egg noodles until al dente. Drain and set aside.
- In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
- To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
- Serve with crusty French bread.
- To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
- To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.

- Preheat oven to 350 degrees.
- Brown ground beef with diced onion, salt, pepper & garlic salt.
- Cook Elbow macaroni until tender, drain and mix sour cream & noodles (only) together.
- Once noodles are coated with sour cream.
- Combine beef with tomato sauce and place 1/2 of mixture in a 8x10 dish.
- Add a layer of noodles and top with 2 slices of cheese.
- Repeat this once more, topping casserole with remaining cheese slices.
- Bake at 350 degrees for approximately 20 minutes.

- Cook the pasta until it's al dente (still have some texture to it so it's not mushy when it bakes.) Drain and rinse with cold water to stop the cooking process. Toss with a little bit of olive oil if desired to prevent it from sticking and set aside.
- In a large skillet, fry the beef and white onion together for 5 to 7 minutes, stirring frequently, until the onions are soft and the beef is no longer pink; drain the grease.. Stir in the tomato sauce, garlic and pepper. Stir and cook for another 2-3 minutes.
- In s large bowl, mix together the sour cream, cottage cheese, shredded Parmesan cheese mixture and 1/2 cup of the green onions. IF you have picky eaters leave the green onions out I learned the hard way! You can top with green onions on personal servings instead.
