OLD FASHIONED ONION RINGS

Old Fashioned Onion Rings image

This is an actual recipe from a former employee of a popular drive-in restaurant. Crispy coated onion rings like the pro's make!

Provided by JeanieMomof3

Categories     Side Dish     Vegetables     Onion

Time 18m

Yield 3

Number Of Ingredients 9

1 large onion, cut into 1/4-inch slices
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
¾ cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

CRISPY BAKED ONION RINGS

Crispy Baked Onion Rings image

Ditch the deep fryer in favor of this quick and easy recipe for crispy, baked onion rings!

Provided by Kelly Senyei

Time 30m

Number Of Ingredients 6

2 large Vidalia onions
3/4 cup all-purpose flour
4 large egg whites
2 Tablespoons mayonnaise
1 cup Italian-style breadcrumbs (See Kelly's Note)
Cooking spray

Steps:

  • Preheat the oven to 425°F. Grease a large baking sheet with cooking spray.
  • Slice the onions into 1/2-inch wide rings then place the rings in a bowl of water.
  • In a medium bowl, whisk together the flour, 1 teaspoon salt and 1/4 teaspoon pepper. In a second medium bowl, whisk together the egg whites and the mayonnaise. Add the breadcrumbs to a third medium bowl.
  • Remove each onion ring from the water, shaking off any excess and then placing it immediately into the flour, tossing until it's thoroughly coated, then dip the onion ring into the egg white mixture until it's thoroughly coated and then into the breadcrumbs, pressing them firmly onto all sides of the onion ring. Place the onion ring on the prepared baking sheet and repeat the coating process with the remaining onion rings.
  • Throughly spray the onion rings with cooking spray (this is optional, but it helps them brown more evenly). Bake the onion rings for 10 minutes then flip them once and bake an additional 5 minutes until they're golden brown and crispy. Serve immediately with your favorite dipping sauce.

MASA ONION RINGS RECIPE

Masa Onion Rings Recipe image

Provided by mdyess

Number Of Ingredients 11

2 onions (about 1 1/2 pounds)
4 cups all-purpose flour
2 cups buttermilk
1 cup medium-ground yellow cornmeal
1/4 cup masa harina (found in the Mexican food aisle at many area supermarkets)
1 tablespoon paprika
1 tablespoon kosher salt
2 teaspoons cayenne pepper
1 teaspoon dried thyme
1/2 teaspoon freshly ground black pepper
Peanut oil for deep-frying

Steps:

  • 1. Peel the onions and and cut them into 1/2-inch-thick slices. Separate the onions into rings. Discard the inner center pieces, which are too small, or reserve them for another purpose. You will need three bowls for breading the onion rings. In the first bowl, place two cups of the flour. Pour the buttermilk in the second bowl. In the third bowl, combine the remaining two cups of flour with the cornmeal, masa harina, paprika, salt, cayenne, thyme, and black pepper. Line two baking sheets with parchment or wax paper. As you bread the onion rings, use one hand for dry ingredients and one hand for wet ingredients to avoid a gloppy mess on your hands. In batches, dip the onions in flour, then buttermilk, and then seasoned flour mix. When necessary, to keep the flour clean and easy to work with, sift the seasoned flour mix and discard any clumps of batter. Place the breaded rings on the baking sheets and place the sheets in the refrigerator for one hour to set. 2. Heat a straight-sided pan with at least two inches of oil, no more than halfway up the sides, to 350-degrees, checking with a deep-fry thermometer. Fry the onion rings without crowding them until golden yellow, then drain on paper towels. The onion rings should be light in color; be careful because the cornmeal can burn if you fry them too long. Season to taste with salt and serve immediately. (If you are frying the onion rings in batches, you can hold them on a baking sheet in a pre-heated 350-degree oven while you finish frying all of them. But don't leave them in the oven too long, or they will get soggy.)
