Provided by Food Network Kitchen

Categories     dessert

Time 1h

Yield 9 squares

Number Of Ingredients 14

6 tablespoons cold unsalted butter, diced, plus more for the baking dish
1 1/4 cups all-purpose flour
1/4 cup sugar
Pinch of kosher salt
2 teaspoons fresh lemon juice
8 slices bacon, diced
3 large eggs
1 cup light corn syrup
1/3 cup sugar
5 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 teaspoon apple cider vinegar
1 cup pecans, plus more for topping
Vanilla ice cream, for serving

Steps:

  • Make the crust: Preheat the oven to 375 degrees F. Butter an 8-inch-square baking dish and line with nonstick foil, leaving an overhang on 2 sides. Lightly butter the foil.
  • Combine the flour, sugar and salt in a food processor and pulse to combine. Add the butter and pulse until the mixture looks like coarse meal. Add the lemon juice and pulse until the dough just comes together. Press the dough into the bottom of the prepared baking dish and bake until lightly golden, about 15 minutes.
  • Meanwhile, make the filling: Cook the bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 8 minutes; drain on paper towels. Whisk the eggs, corn syrup, sugar, melted butter, vanilla and vinegar in a medium bowl until combined.
  • Scatter the pecans and bacon over the prepared crust, then pour in the filling. Bake until the filling is set and the nuts are golden brown, 30 to 35 minutes. Let cool completely in the pan on a rack, then lift out of the pan using the overhanging foil. Cut into squares and top with ice cream and more pecans.

Fried-Egg-and-Bacon Puff Pastry Squares image

The bacon-topped puff pastry squares can be made a couple of hours ahead of time. Re-crisp them in a warm oven before serving.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 1h15m

Yield Makes 9

Number Of Ingredients 8

1 sheet frozen puff pastry (from a 17.3-ounce package), thawed
All-purpose flour, for rolling
10 large eggs, divided
1 teaspoon water
9 slices bacon, cut in half crosswise
3 tablespoons unsalted butter, divided
Coarse salt and freshly ground pepper
Chopped fresh chives, for garnish

Steps:

  • Unfold puff pastry on a lightly floured work surface, and roll out into a 12-inch square. Prick pastry all over with a fork. Cut into thirds to yield three 4-inch-wide strips, then cut strips crosswise into thirds (you should have nine 4-inch squares). Transfer to a parchment-lined baking sheet, and freeze until firm, about 30 minutes. Preheat oven to 425 degrees with rack in top position.
  • Lightly beat 1 egg with water. Brush top of pastry squares with egg wash; place 2 pieces (1 slice) bacon on each square. Bake until pastry is puffed and golden brown and bacon is cooked through and crisp around edges, 15 to 18 minutes.
  • Melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Crack 3 eggs into skillet, and cook until whites are set and golden brown along edges but yolks are still runny, about 4 minutes. Place 1 egg on top of each of 3 pastry squares, and season with salt and pepper. Transfer to a serving platter, and loosely cover with foil. In 2 more batches, cook remaining 6 eggs in remaining 2 tablespoons butter, transfer to pastry squares, and season. Garnish with chives, and serve immediately.

  • Cook bacon: Cook bacon until just starting to brown and most of the fat has rendered off (you don't want it super crisp). Remove to a paper towel to cool, then finely chop. Set aside.
  • Prepare and 8x8 or 9x9-inch metal baking pan by spraying with cooking spray and lining the bottom and two sides with a piece of parchment paper that extends a few inches over the edges (to make getting them out of the pan easier later). Set aside.
  • For the crust: Add the flour and sugar to a food processor. Add the cubes of butter and pulse until mixture is sand-like with fine bits of butter. Pour mixture into prepared pan and press down lightly with your hands to even.
